2 tablespoons cornstarch
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups apple cider
2 tablespoons lemon juice
1/4 cup oleo or 1/4 cup butter

Steps:

  • Mix sugar, corn starch, cinnamom and nut meg.
  • In sauce pan cook cider and lemon juice until boiling.
  • Add dry ingredients.
  • Boil and stir 2 minutes until thick.
  • Remove from heat and stir in butter.
  • Stir until melted.

3/4 cup apple cider ((or sparkling apple cider))
1/2 cup sugar
1/2 cup light brown sugar ((packed))
1/2 tsp cinnamon
1 pinch ground nutmeg
1 pinch anise seed
1 pinch salt
1 large apple ((washed, peeled, and sliced))
12 ounces fresh cranberries ((rinsed, throw out any bruised berries))

Steps:

  • In a medium saucepan bring the apple cider, sugar, light brown sugar, cinnamon, ground nutmeg, anise seed, and salt to a boil. Stir occasionally while the sugar dissolves.
  • Add the sliced apples and cranberries to the syrup and simmer with the lid on for 5 minutes. Remove the lid and continue simmering uncovered for an additional 10 minutes, stirring occasionally. The cranberries should burst, the apples will soften and break up, and your sauce will thicken.
  • Once done, remove from heat. You can mash the fruit further if desired. Allow to cool then refrigerate to finish setting up.

2 bacon slices
1 cup apple cider
2 tablespoons cornstarch
16 medium sea scallops (about 1 pound)
1/4 teaspoon dried thyme
2 teaspoons fresh lemon juice

Steps:

  • Cook bacon in large nonstick skillet over medium-high heat until crisp. Using tongs, transfer to paper towels and drain. Crumble bacon. Pour off all but 2 teaspoons bacon drippings from skillet.
  • Whisk apple cider and cornstarch in small bowl to blend well. Sprinkle scallops with thyme salt and pepper.
  • Heat bacon drippings in skillet over high heat. Add scallops and cook until golden brown and almost cooked through, about 2 minutes per side. Transfer to plate. Add cider mixture to skillet and bring to boil, whisking constantly. Boil until thickened to sauce consistency, whisking occasionally, about 1 minute. Season to taste with salt and pepper. Stir in lemon juice. Return scallops to skillet and toss until just opaque in center, about 1 minute. Transfer scallops to plates. Sprinkle bacon over.

Nonstick vegetable oil spray
2 cups cake flour
1/2 cup (packed) golden brown sugar
1 tablespoon ground ginger
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup robust-flavored (dark) molasses
1/2 cup unsweetened applesauce
6 tablespoons vegetable oil
1 large egg
1/2 cup boiling water
For sauce
2 tablespoons sugar
2 tablespoons cornstarch
2 cups unsweetened apple cider
1 tablespoon fresh lemon juice
2 tablespoons minced crystallized ginger
Powdered sugar

Steps:

  • Make cake:
  • Preheat oven to 350°F. Spray 10-inch-diameter Bundt pan (12-cup capacity) with vegetable oil spray. Whisk flour, sugar, ginger, baking soda and salt in medium bowl to blend. Whisk molasses, applesauce, oil and egg in large bowl to blend. Add dry ingredients and stir until well blended. Whisk in 1/2 cup boiling water. Pour batter into prepared pan (batter will fill only half of pan).
  • Bake until cake begins to pull away from sides of pan and tester inserted near center comes out clean, about 35 minutes. Transfer to rack and cool in pan 30 minutes. Invert cake onto platter and cool to lukewarm, at least 15 minutes.
  • Make sauce:
  • Whisk sugar and cornstarch in heavy small saucepan to blend. Gradually whisk in cider. Whisk over medium heat until sauce boils and thickens, about 3 minutes. Remove from heat. Whisk in lemon juice and ginger.
  • Dust cake with powdered sugar. Cut into 12 wedges. Serve warm or at room temperature with sauce.
