2 tablespoons chopped red onion
1/2 cup Italian salad dressing
Tortilla chips

Steps:

  • In a large bowl, combine the first eight ingredients; toss to coat. Serve with chips. Refrigerate leftovers.

3/4 cup chunky salsa (mild or hot to your taste)
2/3 cup corn kernels
1/2 red onion (finely chopped)

4 teaspoons olive oil

Steps:

  • In a medium bowl, combine the beans, salsa, corn, onion and cilantro. Drizzle with the olive oil and mix in. For the best flavor, cover the salsa mixture and refrigerate for 1 hour.
  • Serve as a dip with regular or baked tortilla chips.

8 ounces tomato sauce (canned)
4 ounces mild green chiles (canned, chopped)
2 tablespoons red wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/4 teaspoon cumin powder

Salt , to taste
Pepper, to taste

Steps:

  • Gather the ingredients.

2 teaspoons chili powder
1 can (15 to 16 oz) pinto beans, drained, rinsed

Steps:

  • In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • In 3- to 4-quart slow cooker, mix beef mixture and remaining ingredients except beans.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • Stir in beans. Cover; cook on Low heat setting about 5 minutes longer or until beans are hot. Top with cheese and onions.

5 pounds tomatoes
5 cups chopped onions (about 3 large)
5 cups chopped green peppers (about 4 large)
2-1/2 cups chopped sweet red peppers (about 2 large)
2 habanero peppers, seeded and finely chopped
1 cup white vinegar
1 can (6 ounces) tomato paste
3 teaspoons salt

Steps:

  • Fill a Dutch oven two-thirds with water; bring to a boil. Score an "X" on the bottom of each tomato. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds. Remove tomatoes and immediately plunge in ice water. Discard peel; chop tomatoes., In a stockpot, combine the remaining ingredients. Stir in tomatoes. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, for 15-20 minutes or until desired thickness., Carefully ladle hot mixture into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 15 minutes in a boiling-water canner.

Wonderful Salsa With Black Beans and Corn image

I love Chic chi's Fiesta Style Salsa and was looking for a recipe on here that was similar and I couldn't find one. I canned Wonderful Salsa, recipe #9272 last year and LOVED it, so I created my own "Fiesta" Salsa. I would like to thank Jazze22 for sharing her Wonderful Salsa recipe. I will post the recipe as I made it, I did make a couple changes from the original recipe. I hope if you try it, that you like it as much as I do. To cut the heat remove the veins and seeds. Also, wear gloves when handling the peppers.

8 cups tomatoes, peeled, chopped and drained
2 1/2 cups onions, chopped (I use sweet onions)
1 1/2 cups green peppers
1 cup jalapeno pepper, chopped
1 cubanelle pepper, chopped
6 garlic cloves, minced
1 teaspoon cumin
1 teaspoon black pepper
1/8 cup canning salt
1/3 cup vinegar
1 (15 ounce) tomato sauce
1 (12 ounce) tomato paste
1 (15 ounce) black beans, drained and rinsed
2 cups frozen corn

Steps:

  • Mix all together and bring to a slow boil for 10 minutes.
  • Seal in sterilized jars and cook in a hot water bath for 10 minutes.

CHUNKY GARDEN SALSA FOR CANNING (MILD)



Chunky Garden Salsa for Canning (Mild) image

20-25 Roma tomatoes, blanched, peeled, and loosely chopped
3-4 large Spanish onions, chopped
3-4 large green peppers, chopped
2 poblano peppers, chopped
3 jalapeño peppers, chopped
4-5 cloves garlic, finely chopped
2-3 tablespoons fresh cilantro, finely chopped
1 cup white vinegar
2 tablespoons salt
1.5 teaspoons citric acid

Steps:

  • Combine all ingredients except citric acid in large stock pot. Heat to boiling, then reduce to simmer for 20-30 minutes.
  • Sterilize 6 quart jars or 12 pint jars. Sterilize lids.
  • Put 1/4 teaspoon of citric acid into each jar for quarts, or 1/8 teaspoon for pints.
  • Fill jars with salsa, leaving 1 inch headspace. De-bubble jars and wipe rims with damp paper towel.
  • Place jars into canner and fill with enough water to cover jars completely.
  • Heat water to full boil and then set timer for 20 minutes for quarts, or 15 minutes for pints. This is the processing step.
  • After processing is finished, turn off heat and carefully remove jars from canner. Set on counter and leave undisturbed for 12-24 hours. The lid on each jar should "pop", which means the seal is good and canning was successful. If any jars don't pop, the seal isn't good and jar will not be shelf stable. Put any unsealed jars in fridge and use within 2 weeks.
  • Remove metal rings and store sealed jars in a cool place away from direct light. Use within 1 year. Refrigerate and use within 2 weeks after opening.

  • Chop the tomatoes, bell pepper if using, and onion into small chunks (as big as you'd like the chunks in your salsa to be) and crush the garlic. Seed and finely chop the green chili pepper.
  • Put the tomatoes, bell pepper, chili pepper, and one of the chopped onions, and one crushed clove garlic in a small-medium sized pot. Grab a hand blender and roughly blend about a third of the vegetables. Heat on medium-high heat until bubbling and half-cover the pot with a lid to protect yourself from any hot spattering juices.
  • After the vegetable mix has been bubbling away for five minutes, add in the salt and simmer for five more minutes.
