CHUNKY CHILI CORNBREAD



Chunky Chili Cornbread image

This is a tasty cornbread with texture and a good flavour! The recipe makes a larger than expected loaf. I use the dough setting on the bread maker and then bake it in a large loaf pan, but you could bake it in the bread machine also.

1 ¼ cups water
1 egg
¼ cup nonfat dry milk powder
1 teaspoon salt
2 tablespoons white sugar
2 tablespoons shortening
3 cups bread flour or all-purpose flour
⅓ cup cornmeal
⅔ cup frozen corn kernels, thawed and drained
1 ½ teaspoons red pepper flakes
1 teaspoon bread machine yeast

Steps:

  • Place the ingredients into the pan of a bread machine in the order recommended by the manufacturer. Set the pan in the machine and close the lid. Select the Dough cycle, and press start.
  • When the cycle is complete, remove the dough to a lightly floured surface, and press out all of the air. Roll dough up into a tight loaf, and pinch the seam. Place into a 9x5 inch loaf pan. Let rise for about 40 minutes, or until your finger leaves an impression when you poke the bread gently.
  • Preheat the oven to 375 degrees F (190 degrees C). Bake the loaf for 30 to 35 minutes in the preheated oven, until nicely browned. When done, the loaf should sound hollow when tapped on the bottom.

This isn't your typical cornbread receipe. It's low fat, but really moist. Goes great with homemade soup.

1/2 cup fat free sour cream
1/2 cup nonfat milk
3 egg whites
1 tablespoon canola oil
1/4 cup brown sugar
1 cup whole wheat pastry flour
1 cup stone-ground yellow cornmeal
2 teaspoons baking powder
1 teaspoon salt
1 cup canned corn
1/2 cup canned diced green chiles

Steps:

  • 1. Beat together sour cream, milk, egg whites and oil.
  • 2. Combine in separate bowl, brown sugar, flour, cornmeal, baking powder and salt.
  • 3. Drain corn and green chiles.
  • 4. Combine wet ingredients with the dry ingredients and fold in corn and green chiles.
  • 5. Transfer into a greased 8 X 8 baking pan.
  • 6. Bake for 30-35 minutes at 350 degree. Make sure you let the cornbread rest for 10 minutes before enjoying.

SWEET CORNBREAD (BREAD MACHINE)



Sweet Cornbread (Bread Machine) image

This tastes like the cornbread my gramma and mom make that's why I like it. It's a sweet cornbread but because you use brown sugar (we prefer dark brown.) it's a 'richer' sweet then white sugar...hope that makes sense! You can add corn to it if you wish. This is bread machine compatible to! Just follow your machines directions for the correct order of ingredients.

Number Of Ingredients 10

1 cup cornmeal
1 1/4 cups all-purpose flour
3 teaspoons baking powder
3/4 cup brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs, lightly beaten
1 cup canned milk
1/4 cup olive oil or 1/4 cup creamed corn
1/4-1/2 cup corn (If you are using the creamed corn in the above step then use only 1/4 cup of whole kernel ) (optional)

Steps:

  • BREAD MACHINE: Add all ingredients to your bread machine pan in the order directed by your machines manual. I cook on the 'Quick Bread' setting also set for a 'medium' crust. Have been told that is equivalent to 'Cake' setting set for 'light' crust on some machines.
  • OVEN BAKE: Preheat oven to 350F (177C). Mix all ingredients together in a bowl. Add corn last (if using) and mix in by hand. Pour equally into two loaf pans and bake for 25 minutes or until a toothpick inserted near the center comes out clean.
  • This makes a 2 pound loaf for bread machine.
