CHUNKY CHICKEN SAUCE FOR PASTA FOR 2
This is a quick easy recipe start to finish 20 minutes using left over cooked chicken. I searched 15 pages of Zaar recipes but could not find what I wanted so I made this one up. If you like a thinner sauce add 1/2 cup water.

Steps:
- Put all the ingredients in a pot , except the cheese & pasta, bring to a simmer.
- Pour over hot cooked pasta.
- Top with Parmesan and serve (I like to place the ready plate under the broiler for 1 minute to brown the parmesan but this is optional).
- Enjoy.

Steps:
- In small bowl, toss chicken, Italian seasoning and pepper flakes. In 4-quart saucepan, melt butter over medium-high heat. Add chicken; cook 2 minutes without moving, until browned on first side. Stir; add mushrooms, and cook 4 to 6 minutes longer, stirring frequently, until mushrooms soften.
- Add spaghetti, broth, whipping cream and garlic. Heat just to boiling over high heat. Reduce heat to medium; cook 12 to 16 minutes, stirring frequently, until pasta is cooked. Stir in spinach and Parmesan cheese. Remove from heat; let stand 1 minute. Stir in lemon juice.

CHICKEN & BOCCONCINI WITH DELICIOUS CHUNKY SAUCE

Steps:
- Heat oil in a large pan (big enough for the entire dish) and saute onions & garlic and brown chicken.
- Add the tomatos, paste and vegetables.
- Add all herbs and seasoning.
- Bring sauce to a boil and then simmer for 20-30 minutes.
- Once sauce is set to simmer, prepare pasta.
- When water for pasta is boiling, add the bocconcini to the sauce and stir through. You're aiming for the cheese to be a little melty but still hold most of it's shape.
- When pasta is ready, serve and enjoy!

Steps:
- Add 1 tablespoon of olive oil to a 2 quart saucepan. Place on medium high burner until hot, then add chicken. Cook on medium high until brown.
- Reduce heat to medium low, Add onion, pepper, garlic, rosemary, basil, oregano, thyme, marjoram, and salt. Cook until onions and peppers are tender, stirring as needed.
- Stir in diced tomatoes and mushrooms. Cover and let simmer for 20 minutes, stirring occasionally.
- Stir in tomato sauce. Allow to simmer 10 minutes.
- Serve over your favorite pasta.
