EMERIL'S CHUCK WAGON CHILI

Steps:
- Heat the oil in a large heavy pot over high heat. Add the beef, chili powder, cumin, Southwest Essence, cayenne, cinnamon, crushed red pepper and bay leaf and cook until meat is well-browned. Add the onions and cook, stirring often, until the onions soften, about 8 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the beers and cook until the foam subsides, about 1 minute. Add the tomatoes, tomato paste, beef broth, salt, and chocolate to the pot. Stir well and bring to a boil. Reduce to a simmer, partially cover, and cook until thickened and meat is very tender, 1 hour 20 minutes to 1 hour 30 minutes, stirring occasionally to prevent the chili from sticking to the bottom of the pot. Skim off any fat that rises to the top of the chili. Sprinkle soup with masa harina and stir to combine. Bring to a simmer.
- Taste and adjust the seasoning, if necessary. Serve with the cheese, green onions, and cilantro alongside as garnish.
CHUCKWAGON CASSEROLE
A hardy casserole of ground beef, seasoned with onion and bell pepper, some beans and corn, a little mixture of chili seasonings and topped off with rustic, cornmeal dusted biscuits.

- Preheat oven to 375 degrees F.
- Heat olive oil in a large skillet and sauté the onion and bell pepper until soft but not browned, about 5 minutes. Add the garlic and cook another minute.
- Add the ground beef and cook until browned; drain excess fat if needed. To the beef, add the beans, corn, tomato soup, milk, cheese, chili powder, Worcestershire sauce and Cajun seasoning. Stir over medium heat until well blended. Taste; add salt and pepper, as needed.
- Transfer to a 9 x 13 inch casserole dish. Bake uncovered at 375 degrees F for 15 to 20 minutes, or until hot.
- Meanwhile, melt the butter and set aside to cool. Remove the casserole from the oven, dip the biscuits in the butter and scatter on the top of the casserole dish. Sprinkle the tops of all of the biscuits with cornmeal. Return to the oven and bake uncovered, at 375 degrees F, for an additional 20 to 25 minutes OR until biscuits are cooked through and golden brown. Check bottoms of center biscuits and return to oven if not cooked through.
- Serve immediately with a green vegetable or a side salad.
CHUCKWAGON BEEF STEW

- In a skillet, brown beef well in oil. When cooked, transfer to a large Dutch oven and mix in garlic well. Add water, tomatoes, lemon, onions, salt, pepper, and sugar. Mix well and simmer 2 hours, stirring occasionally. Add carrots, potatoes, cloves, and crushed basil leaves. Cover and cook until vegetables are tender. Add canned peas and heat. If necessary, to thicken gravy, thicken with flour, dissolved in water. Serve hot.

Steps:
- Mix flour, paprika, chili powder, pepper and salt in a bowl or plastic bag, and coat beef well.
- In large dutch oven, brown beef in oil, add onion, pepper, garlic, pepper flakes, and cook until soft.
- Add tomatoes, chili powder, cumin, cinnamon, and cloves.
- Cover and simmer 2 hours, stirring occasionally.
- If mixture is too thick or if more liquid is needed, add beef broth.
- Add potatoes and carrots and cook until veggies are done, about 45 minutes.
CHUCK WAGON ROAST
My niece, Marianne Lintner, gave me this recipe many years ago and it has long been a favorite. Very simple but oh, so delicious!

- 1. Place beef and all other ingredients into slow cooker and set on LOW.
- 2. Cook for 8 to 10 hours.
- 3. NOTE: Do not add salt--the soups and sauce will make it salty enough. Other vegetable ideas: cut-up tomatoes and chopped celery, chopped green pepper. Improvise!
CHUCK WAGON BEEF

Steps:
- Sprinkle roast with garlic salt, and pepper. Brown on all sides in oil in saucepan, and place in slow cooker.
- Saute garlic cloves, and onion in meat drippings in saucepan.
- Add 1 cup water, bouillon cube, and coffee. Cook over low heat for several minutes, stirring until drippings loosen, pour this over meat in cooker.
- Add bay leaf.
- Cover, cook on low 8-10 hours, or until very tender.
- Remove bay leaf, and discard.
- Remove meat to serving platter, and keep warm.
- Mix 3 tablespoons water and cornstarch together until paste forms.
- Stir into hot liquid, and onions in cooker. Covernand cook for 10 minutes on high, or until thickened.
- Slice meat into 8 slices, and serve with gravy on the top, or on the side.

One of my Mom's most requested recipes. Great for large family gatherings, pot-lucks and cookouts! This is very hearty; not mushy at all. I've actually made this for a main dish since it's so filing. Enjoy!

- Cook bacon.
- Brown ground beef with the diced onion.
- Place first 3 items in a large oven roaster (I use an Enamelware roaster).
- To this, add the 3 cans of beans; do not drain beans.
- Mix all other ingredients together in a medium bowl.

- Bake at 350 for 1 hour covered.

- Sprinkle beef and pork with half of the chili powder. In a Dutch oven, brown meat in batches in 2 tablespoons oil; drain and set aside.
