MOM'S CHUCKWAGON BEANS
One of my Mom's most requested recipes. Great for large family gatherings, pot-lucks and cookouts! This is very hearty; not mushy at all. I've actually made this for a main dish since it's so filing. Enjoy!

Steps:
- Cook bacon.
- Brown ground beef with the diced onion.
- Place first 3 items in a large oven roaster (I use an Enamelware roaster).
- To this, add the 3 cans of beans; do not drain beans.
- Mix all other ingredients together in a medium bowl.
- Pour over meat and beans and stir well.
- Bake at 350 for 1 hour covered.
- Remove lid or foil and bake for 20 more minutes.

CHUCKWAGON BEANS
This is a recipe that has been in my family for years. It's a great combination of sweet and spicy! If you like your beans saucy, you can double the sauce mixture.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large pot over medium-high heat. Cook and stir bacon and onion in pot until the onion is tender, 7 to 10 minutes; add ketchup, dry mustard, brown sugar, Worcestershire sauce, hot pepper sauce, salt, and black pepper.
- Reduce heat to low and cook bean mixture at a simmer until hot, about 10 minutes; pour into a large casserole dish.
- Bake in preheated oven until bubbling on top, 10 to 15 minutes.

Even as a child, I remember mom making this recipe and serving with just about any meat. Good, old fashioned recipe. Delicious!

- 1. Heat Oven 375 degrees
- 2. In a Dutch oven or large roasting pan, fry bacon until crisp.
- 3. Remove bacon and hold for later use.
- 4. Drain bacon drippings from pan.
- 5. In the same pan, cook ground chuck, onion, and celery.
- 6. Stir slowly broth and remain ingredients into pan.
- 7. Cover and bake 1 hour and 15 minutes.
- 8. Crumble bacon and sprinkle over beans.
- 9. Enjoy!

- 1. Heat oven to 375 degrees.
- 2. In Dutch oven, fry bacon until crisp; set aside. Drain fat from pan.
- 3. In same pan, cook and stir ground beef, onion and celery until meat is brown and onion and celery are tender. (Drain excess fat if needed).
- 4. Dissolve bouillon cubes in boiling water; stir bouillon and remaining ingredients into meat mixture.
- 5. Cover; bake 1 hour 15 minutes or until hot and bubbly. Crumble bacon; sprinkle over beans.

- Thoroughly rinse the beans. Add 8 cups of water. Soak overnight, or bring to a boil, simmer two minutes, remove from heat, cover and let stand one hour.

Steps:
- In a Dutch oven or other large, heavy, oven proof pot fry bacon until crisp and set aside.
- Drain fat.
- In the same pan, cook ground beef, onion and celery until meat in brown and the onion and celery are tender.
- Meanwhile, dissolve bouillon cubes in boiling water.
- Add bouillon to meat mixture with the remaining ingredients and mix well.
