GRILLED TERIYAKI STEAK RECIPE - 30 MINUTE MARINADE
This fantastic recipe for a homemade teriyaki sauce works perfectly with a nice cut of steak over the direct heat of the grill. The rich flavors of the sauce will become a family favorite. Best of all, it is just a 30 minute marinade!

Steps:
- Combine all the marinade ingredients into a bowl and mix
- Pour into a gallon Ziploc bag and add steak. Seal and mix it all together
- Marinade for 30 minutes in the refrigerator. I recommend placing the Ziploc in a plastic container just in case it leaks. It can create a mess if it drips all over the fridge (trust me).
- After 30 minutes, remove the steak and discard the marinade
- Heat grill to 375 degrees and oil the grill grates so the steak does not stick
- Place steak on grill over the direct flames and cook each side 6-7 minutes, depending on the temperature you prefer.
- Let the steak rest for 10 minutes after taking off the grill to allow the juices to settle in the steak and not run out. This simple step helps the steak retain its juiciness!

Steps:
- Cut steak crosswise into 3 equal pieces.
- In a large bowl, whisk together teriyaki sauce, garlic, ginger, scallions, and lime. Add the steak and toss so that the meat is fully coated in the marinade. Cover the bowl with plastic wrap and set in refrigerator for at 30 minutes and up to 2 hours.
- After the steak has time to marinate, preheat grill (or grill pan) to medium-high and oil the grates.
- Once hot, remove the meat from the marinade and place on the grill. Add scallions to the grill and brush with oil. Season both with salt and pepper. Cook steak for about 3 minutes per side (depending on the thickness) for medium-rare.
- Remove steak from grill and transfer it to a cutting board. Cover with foil and let rest for 5-10 minutes. Slice the steak against the grain into thin strips.
- Garnish with sesame seeds.

- Toss the beef in the cornstarch and place in the fridge for 10 minutes while you are making the sauce and heating up the oil.
- Heat 2 tablespoons of oil in a large skillet.
- When the oil is nice and hot add in the steak (I had to do two batches to avoid overcrowding the pan). Sauté until browned on both side, 3-4 minutes. Remove from the pan and set aside.
- Add the remaining tablespoon of oil to the same pan.
- Add in garlic and ginger and cook for 1-2 minutes.
- In a small bowl combine soy sauce, mirin, brown sugar, sesame oil and fish sauce.
- Pour the soy sauce mixture into the pan and bring to a simmer and cook for 2-3 minutes.
- In a small bowl mix together the cornstarch and water.
- Slowly pour in the cornstarch mixture whisking continuously. Continue to cook until your desired thickness.
- Add steak back to the pan and toss to coat the beef with the sauce.
- Serve immediately with green onions and sesame seeds if desired.

- Gather the ingredients.
- Cut the round steak into serving-size pieces and pound to 1/8 inch in thickness.
- Combine the ginger, brown sugar, sesame oil, soy sauce, wine, and garlic in a small bowl. Reserve.

- Place steak in a shallow dish. In a small bowl, whisk 1/2 cup soy sauce, vinegar, honey, ginger and garlic. Pour half of the marinade over steak; turn to coat. Cover and refrigerate overnight. - In a small bowl, mix all ingredients except meat.
- Pour into a large reclosable plastic bag or a shallow baking dish.
- Trim fat and slash edges of remaining fat at 1-inch intervals on meat.
- Place meat in marinade, turning to coat.
- Close bag or cover baking dish.
- Refrigerate at least 4 or up to 24 hours, turning steak over occasionally.
- Spray broiler pan with non-stick cooking spray or brush w/ oil.

- Cook. Boil hard for about 5 minutes to reduce by about 1/3. This will get rid of most of the alcohol, extract flavor from the herbs and spices, and concentrate the wine a bit. Alcohol, contrary to popular belief, is not great in marinades because it can dry out the meat. Cool to room temp.
- Prep again. Trim excess fat from the exterior of the steaks. With a sharp knife, score the surface of the steak about 1/8" deep by dragging the knife across it. Make these slits about 3/4" apart on both sides. This technique, called gashing (read about it here), will help the marinade penetrate and will hold the flavor when it is cooking. Don't worry, juices won't escape. Put the steaks in a individual zipper bags, add the marinade, and zip. You can put them all in one bag, bowl, or pan, but you want the marinade in contact with all surfaces, so you will need to flip them regularly. Put the bags in a bowl or pan to catch any leaks, and marinate in the fridge at least 2 hours and up to 12 hours, turning them occasionally to help the liquid contact all surfaces.
