OLD FASHIONED BEEF CUBE STEAK WITH TOMATO GRAVY

Old Fashioned Beef Cube Steak with Tomato Gravy image

Old Fashioned Cube Steak with Tomato Gravy is an old-timey dish inspired by Mom's roast beef recipe. I'm also paying homage to my Midwestern roots where hearty meals are a staple. A family favorite served with lots of mashed potatoes.

Provided by At Mimi's Table

Categories     Main Dish

Time 1h

Number Of Ingredients 11

2 pounds cube steak, four pieces
1 large onion, cut into slices
1 large yellow, red, or green pepper, cut into strips
2-3 cloves garlic, minced
1 15oz can stewed tomatoes
1 beef bouillon cube plus one cup water OR 1 cup reduced-sodium beef stock
2 Tablespoons olive oil
1/2 teaspoon crushed red pepper
1 teaspoon dried basil
Flour
Salt & Pepper

Steps:

  • Pat dry cube steaks with a paper towel. Sprinkle with salt & pepper on both sides. Dust with flour on both sides.
  • Add 2 Tablespoon olive oil to a 12" heavy-bottomed skillet. Bring to heat over medium-high heat.
  • Add cube steaks to the skillet, two at a time, and brown. As the meat browns, remove to a plate or to the skillet's inverted lid.
  • Once all the meat is browned, reduce skillet heat to medium. Add onion, sliced pepper, crushed red pepper and garlic. Stir and saute for 5 minutes.
  • Add stewed tomatoes, bouillon cube, and water OR beef stock, and dried basil. Bring to simmer and cook for 5-10 minutes until tomatoes are soft.
  • Return cube steaks to the skillet along with accumulated meat juices. Ladle the tomato/vegetable mixture over the meat. Reduce to slow simmer. Cover with lid. Cook for 30 minutes.
  • Remove meat to a platter. (Optional: Mash vegetables and gravy.) Pour tomato gravy over cube steak OR plate individually and ladle tomato gravy over meat.
  • Serve with plenty of mashed potatoes and any green vegetable.

SUNNY'S SMOTHERED RIB EYE STEAK

Sunny's Smothered Rib Eye Steak image

Provided by Sunny Anderson

Time 2h30m

Yield 4 servings

Number Of Ingredients 17

1/2 teaspoon Hungarian paprika
1/2 teaspoon chopped fresh thyme
1 teaspoon salt
Freshly ground black pepper
2 tablespoons olive oil
2 (12-ounce) boneless rib eye steaks
5 sprigs fresh thyme
1 stalk fresh rosemary
2 tablespoons butter
1/2 cup chopped onion
Salt and freshly ground black pepper
2 cloves garlic, minced
2 tablespoons stone-ground mustard
1 cup beef stock
1/2 cup heavy cream
1/4 cup sour cream
3 tablespoons chopped fresh parsley

Steps:

  • For the steaks: In a small bowl, combine the paprika, thyme, salt and a few grinds of black pepper. Sprinkle on both sides of the steaks and let rest at room temperature for up to 2 hours.
  • In a large pan with straight sides, add the olive oil over medium-high heat. Add the steaks and sear on both sides until a deep golden color is on the bottom, 4 to 5 minutes. Flip and cook about 4 minutes more. Remove to a plate and cover with aluminum foil.
  • For the gravy: Using kitchen twine, tie the thyme and rosemary together. In the same pan you seared the steaks in, add the herb bundle and the butter. Lower the heat to medium, melt the butter and then add the onions. Season with a pinch of salt and a grind or 2 of black pepper. Cook on medium heat until the onions are tender, about 5 minutes, and then add the garlic. When the garlic becomes fragrant, about 2 minutes, add the stone-ground mustard and beef stock. Stir to blend and then add the heavy cream. Taste and season with more salt, if needed, and raise the heat to a gentle simmer. Once the sauce has thickened to a gravy, lower the heat and stir in the sour cream. Add the reserved steaks back into the pan and bring to a simmer while spooning the sauce over the steaks. Cook this way until desired doneness; it should take only a minute more for medium-rare. Remove from the heat and allow to rest for 5 minutes before slicing. Place the slices on a serving plate and pour the gravy over the top.

SMOTHERED CHUCK STEAK ELECTRIC SKILLET STYLE

Smothered Chuck Steak Electric Skillet Style image

Melt in your mouth, incredible flavored smothered steak that makes it's own delicious brown gravy.

Provided by Lynn Socko

Categories     Beef

Time 2h35m

Number Of Ingredients 7

2 lb boneless chuck steak
seasonings of choice
olive oil
water
chopped celery and onion
1 tsp beef bouillon powder
milk and cornstarch

Steps:

  • 1. Heat electric skillet to medium and drizzle in some olive oil. Placed seasoned steaks in and brown on both sides. Turn temp down to "Warm" where the light goes on and off every minute or two. Now cover with water and add chopped celery and onion. This is the secret to this melt in your mouth, incredibly flavorful steak. If your temp is too high and the heat light stays on your electric skillet constantly you will have to turn the meat and add water every few minutes to keep it from burning.
  • 2. With temp on the Warm setting, seasoned meat covered in water and chopped onion and celery added, cover with lid and allow to simmer for about 20-30 min. Keep an eye on it until you know how often you need to add more water. Each time you add more water turn the meat over. About half way through add about 1 tsp of beef bouillon powder. This will just enrich your broth (gravy).
  • 3. Allow to simmer 2- 2 1/2 hours or until steak is fork tender. Make sure you have plenty of water (broth) in pan when you remove steaks.
  • 4. GRAVY-remove steak, mix together in a small bowl about 1 c milk and 1 tbsp. cornstarch. Mix together well till no lumps then add to broth ( I had about 3-4 cups of broth). If you have less broth use less milk and cornstarch. Add cornstarch mix to broth and stir while on low heat until thickened. Season with salt and pepper if desired.
