CRUSCHICKIES

Cruschickies image

This is an old and simple recipe for a fried pastry also known as 'bowties'. Substitute brandy for rum if you'd rather the taste of brandy.

Provided by MARBALET

Categories     Rum Desserts

Yield 48

Number Of Ingredients 9

3 eggs
3 tablespoons white sugar
½ cup sour cream
1 teaspoon vanilla extract
2 tablespoons rum
¼ teaspoon salt
3 ⅓ cups all-purpose flour
4 cups vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • Beat together the eggs and sugar. Blend in sour cream, vanilla and rum or brandy. Fold in sifted flour and salt. Knead dough on floured surface until the dough is smooth.
  • Cut off a small portion of dough and roll out as thin as possible (almost paper thin). The dough will spring back as you roll it if you treat it like a pie crust.
  • Cut into 2-inch wide strips. Cut the strips diagonally every 4 inches. In the middle of each cookie cut a one inch slit. Pull one of the pointier corners through the slit. If you are making these alone, it is suggested that you do all of the rolling and cutting all the dough before frying, or in two batches. If two people are making the cookies, the roller/cutter should get a "stockpile" before frying begins.
  • Heat oil to 350 degrees F (175 degrees C). An electric skillet works well, especially if you are working alone. Slide about seven or eight cookies into the oil. They should pop up to the top of the oil after a second.
  • Very soon, the cookies should be a light brown (or very dark tan) on the bottom. Flip the cookies; a two-tined carving fork works well. When the second side is browned, remove from the oil with a slotted spoon and drain on paper towels. When the paper towel is filled with cookies, shake confectioner's sugar over the cookies and move the cookies, paper towels and all, to a cookie sheet.

POLISH ANGEL WINGS-CHRUSCIKI

Polish Angel Wings-Chrusciki image

This is a classic Polish cookie that my mom and Bushia used to make at Christmas time. I've found that this is a really hard dough to work with, but it is from the original Polish recipe translated into English. These are not really sweet cookies, but they get most of their sweetness from the powdered sugar on the outside.

Time 1h

Yield 50 cookies

Number Of Ingredients 7

5 tablespoons cream
5 egg yolks
1/2 teaspoon salt
1/4 cup sugar
2 1/4 cups flour, plus
1 teaspoon vanilla
powdered sugar

Steps:

  • Beat eggs until thick.
  • Add salt slowly while stirring.
  • Add sugar and vanilla, beat well.
  • Add cream and flour, alternating until blended. You may need more than the flour listed above depending on how humid it is that day.
  • Turn onto a floured board.
  • Cover with a cloth for 10 minutes.
  • Knead until dough blisters.
  • Roll very thin.
  • Cut into 1 inch by 4 inch rectangles.
  • Cut a gash in the middle of the rectangle and pull one end through so it looks like a twist.
  • Fry in 375 degree oil until golden brown.
  • Drain on a rack for 3 minutes then roll into powdered sugar.

CHRUSCIKI- BOW KNOTS

Chrusciki- Bow Knots image

These Polish cookies are very time consuming to make. It's a great help to have a bunch of your favorite family members to help! They are very flavorful and rich. This recipe makes hundreds of cookies. Literally. But they are worth it in the end. The cognac can easily be omitted entirely But why bother! You can cut the kneading time down by using a food processor! Use a couple of pans for frying to make it go faster! (Assembly line)! Cook time is 1 minute per batch of cookies!

Time 31m

Yield 200 cookies

Number Of Ingredients 15

2 whole eggs
10 egg yolks
1 tablespoon melted butter
3 tablespoons granulated sugar (I use vanilla sugar, check out my recipe)
1/2 teaspoon salt
1 teaspoon pure orange extract
1 teaspoon pure vanilla extract
1 teaspoon freshly grated fresh lemon rind
1 teaspoon freshly grated orange rind
3 tablespoons cognac
1/2 cup sour cream
4 -5 cups flour
melted Crisco, mixed with
lard, if kosher just use crisco
powdered sugar

Steps:

  • Beat the eggs and egg yolks together until thick and lemon colored.
  • Add the melted butter, sugar, salt, extracts, citrus rinds, cognac, and sour cream and beat until creamy and smooth.
  • Add enough flour gradually to produce a thick, fairly stiff dough.
  • Turn out onto a floured board and knead for 8-10 minutes until the dough is elastic and can be handled easily.
  • Roll pieces of dough 1/8 inch thin (should be able to see through them) and cut into strips about 3 inches long and 2 inches wide.
  • Cut the ends on a diagonal.
  • Slit each piece in the center and pull one end through the slit.
  • Heat the crisco and lard to 375 degrees and fry the dough strips, until lightly browned (about 1 minute) Drain on paper towels and sprinkle with powdered sugar.
  • (SHHHHHHHHHHH!) Sneak 1 or 2 while frying!
