This quick and easy Homemade Spaghetti Sauce, made with lean ground beef and canned tomatoes has a rich and meaty sauce with a secret ingredient that is delicious, healthy and economical! It's also Weight Watchers friendly.

1.5 lb extra lean ground beef
1 Small onion
1 tbsp brown sugar
2/3 cup mushrooms, chopped
1/2 green pepper
1 -5 oz can tomato paste
2 -28 oz cans of canned tomatoes
3 cloves minced garlic (* add more or less to your liking)
1/4 cup Heinz chili sauce
1/2 tbsp Worcestershire sauce
1 tbsp fresh, chopped basil (* can substitute 1 tsp dried basil)
2 tbsp fresh, chopped oregano (* can substitute 2 tsp dried oregano)
1/2 tbsp fresh, chopped cilantro (* can substitute 1 tsp dried cilantro)
2 tsp fresh, chopped rosemary (* can substitute 1/2 tsp dried rosemary)
1/2 tsp crushed red pepper flakes
1/2 -340 g -box spaghetti noodles (*(1/2 of a 12 oz box))

Steps:

  • Cook ground beef and onions together until ground beef is browned
  • Meanwhile, mix tomatoes, tomato paste, green peppers, mushrooms, garlic, chili sauce, Worcestershire sauce, brown sugar, herbs and spices together in a large pot and cook over medium heat on stovetop.
  • When ground beef/onion mixture is browned, drain thoroughly and add to tomato mixture.
  • Simmer for approximately 20 minutes or until vegetables are soft.
  • While sauce is cooking, cook spaghetti as per package directions. Drain and serve with desired amount of sauce on top.

Mom's Best Spaghetti Sauce image

A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

4 (14.5 ounce) cans whole peeled tomatoes
2 (15 ounce) cans tomato sauce
4 (6 ounce) cans tomato paste
3 cups water
4 cups fresh sliced mushrooms
2 onions, chopped
4 cloves garlic, minced
4 teaspoons white sugar
¼ cup chopped fresh basil
salt to taste
ground black pepper to taste
2 pinches baking soda
¼ cup grated Parmesan cheese

Steps:

  • Mix together whole tomatoes, tomato sauce, tomato paste, water, mushrooms, onions, garlic, sugar, salt and pepper, basil, and 1 pinch of baking soda in a large saucepan. Bring to a boil, stirring. Reduce to a simmer, and cook for 4 hours minimum.
  • Stir in another pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and almost brown. Make sure to scrape the sides of the pan in to the sauce.
  • After the sauce is fork consistency, stir in Parmesan cheese. Watch that the cheese does not burn. Taste sauce. If it is too tangy or acidic, add another pinch of baking soda and simmer another 1/2 hour.
  • Cool, cover, and refrigerate overnight. The next day, reheat and serve.

This Rigatoni al Segreto recipe was the most closely guarded secret at Gino's, one of New York City's most famous Italian restaurants. When it closed, the recipe got out. But I think the amount of butter was way too low. So here's my version.

4 tablespoons olive oil
1 cup diced onion
1 teaspoon salt, plus more to taste
2 cloves garlic, crushed (or more to taste)
1 pinch red pepper flakes
1 (28 ounce) can San Marzano (Italian) tomatoes, blended smooth
½ cup water (to rinse out can of tomatoes)
1 (8 ounce) package uncooked rigatoni pasta
½ cup fresh basil leaves, thinly sliced
4 tablespoons cold butter, cubed
1 cup grated Parmigiano-Reggiano cheese, plus more for serving

Steps:

  • Heat olive oil in saucepan over medium-high heat. Add onions, salt. Cook until no longer white and starting to turn translucent, about 5 minutes. Stir in garlic; cook about 1 minute. Add chili flakes and blended tomato sauce. Bring to a simmer; adjust heat to medium to medium-low. Simmer gently, stirring occasionally, for 45 to 60 minutes. Reduce heat to low.
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes (5 minutes from doneness).
  • Add about 2/3 of the basil to the sauce. Stir in butter. When butter melts, add cheese in 3 increments.
  • Drain pasta; transfer to sauce. Stir until rigatoni are evenly coated with sauce. Serve sprinkled with the remaining basil and a dusting of grated cheese.
