Wassail is a hot mulled cider, traditionally enjoyed during wassailing, an English Christmas drinking ritual intended to ensure a good apple harvest the following year. The whole baked apples floating on top lend a homey feel to the warming festive drink. Serve as is -- or top with a splash of brandy if you like. It's perfect for a big family gathering or holiday party.

1 cup firmly packed light brown sugar
6 Fuji apples, cored
Four 11.2-ounce bottles English hard cider, such as Strongbow
Two 12-ounce bottles English pale ale, such as Bass
2 cups apple cider
1 cup Madeira
10 whole cloves
10 whole allspice berries
4 cinnamon sticks, plus more for serving
2 wide strips orange zest, plus orange wedges, for serving
2 wide strips lemon zest
1/2 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to 350 degrees F.
  • Spoon the sugar into the center of each apple, then place in a 9-inch square baking dish with 1 cup water. Bake until the apples are very tender, 1 hour to 1 hour 30 minutes.
  • Meanwhile, add the hard cider, pale ale, apple cider and Madeira to a large pot and bring to a gentle simmer over medium heat. Put the cloves, allspice, cinnamon sticks, orange zest and lemon zest in a piece of cheesecloth and tie it closed. Add to the pot along with the ginger and nutmeg. Reduce the heat to low and steep the mixture until the liquid is well spiced and fragrant, about 1 hour.
  • Add the cooked apples and any of their juices to the pot and stir to combine. Remove the cheesecloth. Serve warm in individual mugs with an orange wedge and cinnamon stick.

This homemade wassail is the recipe my mother would make around the holidays. The spices and smell or orange juice and apple cider simmering on the stove will surely boost your spirits (and taste buds)!

1 1/8 cup granulated sugar
2 cups water
1 cinnamon stick
4 allspice berries
5 cloves (or 3/4 teaspoon ground cloves)
1 inch fresh ginger (peeled, or substitute with 1/2 tsp ground ginger)
2 cups orange juice
1 cup lemon juice (I use the lemon juice concentrate)
4 cups apple cider (can also use apple juice but you'll lose some flavor.)

Steps:

  • In a large pot over medium heat, stir the sugar and water. Bring to a boil and boil for 5 minutes, stirring frequently.
  • Remove from heat. Add the cinnamon stick, allspice berries, cloves, and ginger. Cover and let sit for 1 hour.
  • Strain the mixture.
  • Stir in the orange juice, lemon juice, and apple cider. Place over medium heat to warm the drink. Serve warm.

1 teaspoon of whole cloves or 1/4 teaspoon of ground cloves or allspice
4-6 cinnamon sticks
1 cup fresh cranberries
8 ounces of orange juice
1 can frozen lemonade concentrate
8 ounces cranberry juice
1 gallon of apple cider or spiced cider
lemon and orange slices for garnish

Steps:

  • In a large pot on the stove or in a slow cooker, add all of your ingredients.
  • Cook on low heat for 45 minutes.
  • Garnish with fresh orange and lemon slices.
  • Serve your hot wassail and toast!

3 large cooking apples, cored and halved
1 gallon apple cider, divided
6 whole cloves
6 whole allspice berries
2 teaspoons ground nutmeg
1 (6 ounce) can frozen orange juice concentrate
1 (6 ounce) can frozen lemonade concentrate
1 cup brown sugar
2 cinnamon sticks, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place halved apples, cut sides down, on a baking sheet.
  • Bake in the preheated oven until apples are tender, 10 to 15 minutes.
  • Simmer 2 cups apple cider, cloves, allspice, and nutmeg in a large kettle or pot for 10 minutes. Add the remaining apple cider, orange juice concentrate, and lemonade concentrate; stir until wassail is smooth. Mix brown sugar into the wassail; heat until almost boiling. Float baked apple halves and cinnamon sticks in the wassail; serve warm.
