A favorite with children. The peanut butter completely covers the candy.

½ cup butter, softened
½ cup crunchy peanut butter
½ cup white sugar
½ cup packed brown sugar
1 egg
1 ¼ cups all-purpose flour
1 teaspoon baking powder
42 chocolate-covered caramel candies

Steps:

  • Beat butter or margarine, peanut butter, 1/2 cup granulated sugar and brown sugar together until fluffy. Beat in egg. Sift flour and baking powder together; stir into butter mixture. Chill dough thoroughly, 2 to 3 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll dough into 1-inch balls. Press a chocolate-covered caramel into the middle of each ball. Roll dough around it. Roll each ball in granulated sugar. Place 2 inches apart on ungreased cookie sheets. Bake for 10 minutes or until golden brown. Let cool 2-3 minutes, then remove from cookie sheets.

Easy cookie mix jump-starts holiday cookie baking. Surprise family and friends with these sweet treasures.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/3 cup butter or margarine, softened
1 egg
2 tablespoons Gold Medal™ all-purpose flour
Red and green food colors
16 thin rectangular crème de menthe candies, cut into thirds
Assorted Betty Crocker™ colored sprinkles, sugars, decors and decorating gels

Steps:

  • Heat oven to 375°F. In medium bowl, stir cookie mix, butter, egg and flour until dough forms. Divide dough into thirds. Tint one-third red and one-third green with food colors; leave one-third plain. Keep dough covered tightly until ready to use.
  • On floured surface, roll each third of dough until 1/8 inch thick. For round cookies, cut with 1 1/2-inch cookie cutter; for square cookies, cut into 1 1/2-inch squares using sharp knife. (Dip cutter or knife in flour for easier cutting.)
  • On ungreased cookie sheet, place half the cookies 1 inch apart. Place 1 candy piece on center of each cookie; top with another cookie. Gently press edges together to seal, using tines of fork. To decorate before baking, sprinkle cookies with colored sprinkles, sugars or decors as desired.
  • Bake 6 to 8 minutes or until edges are light brown. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes. Decorate with gels as desired.

1 3/4 cups all-purpose flour
3/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
1 large egg
1/2 cup milk
1 teaspoon pure vanilla extract
12 large marshmallows, cut in half horizontally
Chocolate Frosting for Surprise Cookies

Steps:

  • Preheat oven to 375 degrees. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, about 2 minutes. Add egg, milk, and vanilla, and beat until well combined. Add reserved flour mixture; mix on low speed until combined.
  • Using a tablespoon or 1 3/4-inch ice cream scoop, drop dough onto ungreased baking sheets, about 2 inches apart. Bake until cookies begin to spread and become firm, 10 to 12 minutes.
  • Remove baking sheets from oven, and place a marshmallow, cut-side down, in the center of each cookie, pressing down slightly. Return to oven, and continue baking until marshmallows begin to melt, 2 to 2 1/2 minutes. Transfer cookies to a wire rack to cool completely before frosting.
  • Spread about 1 tablespoon of frosting over each marshmallow, starting in the center and continuing outward until marshmallow is covered.

1 cup butter, softened
1 cup creamy peanut butter
1 cup brown sugar
1 cup sugar
2 eggs
1 teaspoon vanilla extract
3 1/2 cups flour, sifted
1 teaspoon baking soda
1/2 teaspoon salt
1 (11 1/2 ounce) bag miniature candy bars (Snickers or Milky Way work best)
milk chocolate, for drizzle

Steps:

  • Combine butter, peanut butter, and sugars using electric mixer until light and fluffy.
  • Slowly add eggs and vanilla until combined.
  • Mix in flour, salt, and baking soda.
  • Cover and chill dough for 2-3 hours.
  • When dough is chilled, take 1 tablespoon of dough and flatten.
  • Place miniature candy bar in center of dough and then form dough into ball around candy bar.
  • Place on cookie sheet and bake at 325°F for 10 to 12 minutes.
  • Let cookies cool on baking rack or on wax paper.
  • When cooled, drizzle melted milk chocolate over each cookie.
  • Store in a cool place.

A soft and chewy peanut butter cookie stuffed with a SNICKERS Minis and drizzled with melted milk chocolate.

3 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, (softened)
1 cup creamy peanut butter
1 cup brown sugar, (packed)
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
SNICKERS Minis
1 cup chocolate candiquik or Dove Milk Chocolate Promises

Steps:

  • In a medium size bowl, whisk together flour, baking soda, and salt. Set aside.
  • In a large bowl using an electric mixer, beat together butter, peanut butter, and sugars on medium speed until light and fluffy. Add eggs and vanilla extract; mix until combined.
  • Scrape down the sides of the bowl, add flour mixture; mix on low speed until combined.
  • Cover cookie dough with plastic wrap and refrigerate for 2-3 hours. Do not bake cookies without chilling as they are prone to spreading
  • Preheat oven to 350F degrees.
  • Scoop dough into tablespoon rounds, or use a #50 disher in between; covering the Snickers completely and forming a ball.
  • Place rounds of dough on a silicone baking mat/parchment paper lined baking sheet 2" apart.
  • Bake 10-14 minutes or until edges have set.
  • Cool cookies on a baking sheet on a wire rack for 8 minutes; transfer to a wire rack to cool completely.
  • In a small microwave-safe bowl, add milk chocolate. Microwave on medium heat for 30 seconds. Remove and stir slowly. Replace in microwave for 15- second increments until chocolate is completely melted.
  • Dip a fork or drizzling scoop into melted chocolate and drizzle over cooled cookies. Allow Santas Surprise Cookies to sit until chocolate hardens. Eat & Enjoy!

  • Bake in a preheated 350°F oven for 10 to 12 minutes. Let cool on the rack for 5 minutes, then transfer to a cooling rack to cool completely.
  • To assemble, Use a generous amount of icing on the base. Add a larger cookies to the top. Add more royal icing to the top of that cookie to act as glue.
