HOW TO MAKE SPICED KUMQUAT MARMALADE (NO PRESERVATIVE RECIPE)
Spiced Kumquat Marmalade: An easy and delicious kumquat marmalade recipe using kumquats, ginger, sugar, spices and without preservatives. It's perfect to use with bread, crepes or desserts. Stays in the fridge for 4-5 weeks.

Steps:
- In a large pot, add chopped kumquats, water, juice, sugar, spices.
- Mix everything and marinate for 15 minutes.
- Place the same pot on high flames till the first boil comes.
- Stir on high flames for 5 minutes and then reduce the flame and cover cook for 30 minutes.
- Stir every 5 minutes.
- After 30 minutes, the marmalade mix would have thickened a little and it will coat the back of the spoon evenly.
- Turn off the heat.
- You can remove the cinnamon stick and cloves (as per choice).
- Let the marmalade cool and it will thicken up as it cools.
- Pour into sterilized bottle/jar and keep in a fridge for later use.
- Slather evenly on toast / cheese or fruits and enjoy.

SPICED CHRISTMAS JAM

Steps:
- Fill a boiling-water canner about 2/3 rds full with water and bring it to a boil.
- Pulse strawberries {if using frozen} and cranberries in a food processor or blender and then place prepared fruit into an 8 quart sauce pot. Add sugar and spices and stir. Bring to a full rolling boil; boil for 1 minute, stir.
- Remove from the heat; stir in the liquid pectin and return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat
- Skim off any foam with a spoon.
- Next, ladle the delicious jam mixture into hot prepared jars, filling to within 1/4 inch of tops. Wipe the jar rims and threads clean if needed. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner and then lower the rack into canner. Make sure the water is covering the jars by about 2 inches. Place the lid on the pot and bring the water to gentle boil.
- Process spiced Christmas jam 10 minutes. One recipe makes {12} 8oz jars
- Remove jars and place on a towel to cool. After 24 hours check the seals. If the lid springs back, jam is not sealed and refrigeration is necessary.
TRADITIONAL CITRUS MARMALADE
Steps:
- Wash mason jars and screw lids in soapy water and rinse soap off well under running hot water. Place clean jars on a baking sheet and place in oven preheated to 200 degrees. Set screw bands aside. Next, boil a kettle of water and pour into a clean glass bowl. Carefully submerge the sealing discs in the bowl of hot water. Set aside.
- Wash the fruit very well and dry with paper towels. Using a very sharp knife, cut each piece of fruit in half lengthwise. Next, very thinly slice across each piece of fruit. Once sliced, cut each slice into roughly one-inch pieces.
- Place all fruit into a large sauce pan or pot. Add the water and bring to a boil. Cover continue to gently boil for 45 minutes.
- Add the sugar and stir until dissolved. Bring to a boil. Continue to boil uncovered over medium heat for one hour - stirring frequently.
- In the meantime, fill your water bath canner to the halfway mark with water and add the jar rack. Bring to a full boil.
- Ladle the marmalade into prepared mason jars using a funnel to prevent the sauce from touching the rim of the jars.
- Use the non-metallic bubble remover to remove any air bubbles.
- Wipe down the rim of each jar with a damp paper towel to ensure no sauce has come in contact with the rim.
- Carefully remove the sealing discs from the hot water with a magnetic lid lifter. Position the sealing disc directly onto the lid of the jars. Do not touch the underside of the lid.
- Screw on the screw bands until firm - do not apply pressure! Just use your fingertips to tighten the screw bands.
- Using the jar lifter, place the jars into the water bath canner with the boiling water. Do not place the lid on the canner.
- Boil for 20 minutes. Carefully remove each jar from the canner using the jar lifter. Try not to tilt the jars. Place jars onto a wire cooling rack that has been covered with a clean kitchen towel.
- Leave the jars to cool for a minimum of 12 hours. Once cooled, wipe the jars of any residue that might have been transferred to the outside of the jar during the boiling process. Label the jars and store in a dark, cool cabinet for up to one year.

CHRISTMAS-SPICED MARMALADE

- Peel the zest off the fruit with a vegetable peeler, leaving as much of the white pith as you can.
- Pile up the strips of zest and snip them into tiny matchsticks with a scissors and set them aside.
- Juice all the dezested fruit, setting the juice aside.
- Roughly cut the dezested, juiced fruit pieces and add them to a large pot along with the pulp and seeds from the juicer. Add the whole spices and the water. Bring the pot to the boil, clamp the lid on, turn the heat down to medium low and allow to simmer for 2 hours.
- Take 3 small plates and put them in the freezer.
- After 2 hours of simmering, pass the water through a fine mesh sieve, making sure you squeeze all the water from the pith. Discard and collected pith, pulp and spices.
- In a very large pot, add the water from the pith, the fruit juice and the snipped up zest. Stir and bring to the boil.
- Add the sugar. Stir it to help the sugar dissolve and bring to a rolling boil.
- If you have a candy thermometer, you will need to let this reach 105 degrees celsius so it will set. If you do not have a candy thermometer, then just let it boil for about 40 minutes.
- To test if it is done, take a not cold plate from the freezer and pour about a tablespoon of marmalade onto it and leave it for 5 minutes. Then slowly drag your finger across it. If the surface of the marmalade forms a crinkly surface and your finger leaves the plate clean behind it then it is done and will set. If that doesn't happen, let it boil for another 10 minutes and check again with the second plate from the freezer.
- Allow the marmalade to cool a bit before pouring it into sterilised jars. To sterilise jars, you can boil them in water or run them through the hottest cycle of the dishwasher, just don't touch the inside of the jars once sterilised. I sterilise the lids by boiling them in a small pot of water.
- Once the jars are filled, put on the lids not so tightly and submerge all the jars in a very large pot of water or a number of smaller pots and bring to the boil. Allow to boil for half an hour before you remove them from the water and tighten the lids.
