SIMPLE CHRISTMAS RUM CAKE



Simple Christmas Rum Cake image

This makes a great inexpensive Christmas gift with a pretty presentation using any of the Christmas-themed fluted cake pans. The jellyroll pan with wax paper flip is the best idea I've been able to come up with for the transfer. Please share if you have better ideas!

1 (18.25 ounce) package yellow cake mix with pudding (such as Betty Crocker®)
3 eggs
⅓ cup rum
½ cup water
½ cup vegetable oil
¼ cup rum
¼ cup water
1 cup white sugar
½ cup butter
1 teaspoon confectioners' sugar for sprinkling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as a Bundt®) with cooking spray.
  • Place the cake mix, eggs, 1/3 cup of rum, 1/2 cup of water, and the vegetable oil into a large bowl. Beat until smooth with an electric mixer on low speed, about 3 minutes.
  • Pour the batter into the prepared pan.
  • Bake in the preheated oven until the cake has risen and the top is lightly golden brown, about 40 minutes. A toothpick inserted into the center of the cake should come out clean.
  • While cake is baking, make the glaze. In a saucepan over medium heat, combine 1/4 cup of rum, 1/4 cup of water, sugar, and butter. Stir and heat until all the sugar has dissolved and the butter is melted. Turn off heat.
  • Remove the cake from the oven. While still hot and in the pan, poke the cake all over with a long skewer to make many deep holes.
  • Pour the glaze over the hot cake. Allow the cake to cool until the cake separates slightly from the side of the pan, 10 to 12 minutes.
  • Line a jellyroll pan or large baking sheet with waxed paper. Carefully place the lined pan over the top of the cake pan, and flip the cake pan over to release the cake onto the waxed paper. If desired, transfer cake to a serving platter.
  • Let the cake cool thoroughly and sprinkle lightly with confectioners' sugar before slicing.

Rum Cake makes a classic holiday dessert and this easy, yet elegant rum cake recipe will quickly become a festive favorite!

For the Rum Cake:
1/2 cup lightly packed brown sugar
1/2 cup finely chopped pecans
1 box yellow cake mix
1 3.4-ounce package vanilla cook-and-serve pudding mix
4 eggs
1/2 cup water
1/2 cup canola oil
1/2 cup dark rum
For the Glaze:
3/4 cup 1 1/2 sticks butter
1 1/2 cups sugar
1/4 cup water
3/4 cup dark rum

Steps:

  • Preheat oven to 325º F and thoroughly grease a Bundt pan. Sprinkle the brown sugar and chopped pecans in the bottom of the pan. This will serve as the topping of the cake when the cake is turned out of the pan.
  • Add cake mix and pudding mix to the bowl of an electric mixer. Crack in the eggs and add water, canola oil, and rum, Mix the batter until it is smooth and totally combined.
  • Pour batter into the prepared Bundt pan and bake the cake for 50 to 60 minutes, or until a skewer or long toothpick comes out clean when inserted into the middle of the cake and removed.
  • When the cake has about 10 minutes remaining cooking time, make the glaze.
  • Melt the butter and sugar together in a heavy-bottomed saucepan over medium heat. Then add water and bring the mixture to a boil for 4 to 5 minutes, or until thick. Carefully add the rum to the mixture and cook for 1 more minute. (Take care when adding the alcohol to the mixture, especially if cooking over an open flame.)
  • Remove the cake from the oven and let it cool in the pan for 5 minutes.
  • Use a skewer or long toothpick and poke holes all over the surface of the cake.
  • Drizzle half the glaze over the surface of the cake, then let the cake sit for about 10 to 15 minutes to allow the cake to absorb the glaze.
  • Carefully invert the cake onto a serving platter and very slowly drizzle the rest of the glaze over the top of the cake, giving the cake a chance to absorb as much as possible.
  • Let the cake sit for a couple of hours to make sure it's really moist and rummy.
  • Slice and serve.

225g unsalted butter, softened, plus extra for greasing
225g light muscovado sugar
4 large eggs, beaten
225g plain flour
2 tsp ground mixed spice
zest 1 small orange
85g pecans or walnuts, toasted, then roughly chopped
150ml cloudy apple juice
50g unsalted butter
2 tbsp maple syrup
5 tbsp dark rum
800g mixed dried fruit (the kind that includes mixed peel)
175g dried cranberries
2 tbsp dark rum
1 tbsp maple syrup

Steps:

  • Start with the fruit. Pour the apple juice into a saucepan and bring to a simmer. Add the butter, let it melt, then take off the heat and add the syrup and rum. Put the mixed fruit and cranberries into a large bowl, pour over the hot rum mix, then cover tightly with cling film and leave overnight.
  • The next day, heat oven to 160C/140C fan/gas 3. Grease and double-line a 20cm round, deep cake tin with non-stick baking parchment. Beat the butter and sugar together until creamy and pale, then gradually beat in the eggs until light and fluffy. If the mix starts to split or look lumpy, add 1 tbsp of the flour and keep beating. Sift in the flour, spices and ¼ tsp salt, and fold in using a large spoon. Fold in the orange zest, nuts, soaked fruit and soaking liquid.
  • Spoon the batter into the tin, level the top, then make a slight dimple in the middle using the back of the spoon. Bake for 1 hr 30 mins, then reduce oven to 140C/120C fan/gas 1 and bake for a further 1 hr 45 mins or until it has risen, is a dark golden colour and a skewer inserted into the middle of the cake comes out clean. Put the tin on a cooling rack and leave until warm.
  • To feed the cake the first time, use a cocktail stick to poke all over the top of the warm cake. Stir together the rum and maple syrup, then slowly spoon over the cake. Cool completely, then remove the baking parchment, wrap loosely in clean baking parchment and store in an airtight tin. Feed the cake every week to 10 days until you decorate it.

It's a shame that fruitcake as a species gets such a bad rap. With its two key ingredients--rum and butter--it ought to be a hit. This recipe includes dried fruit, instead of the glowing, candied stuff we've all learned to associate with fruitcake, and is less dense and more cake-like than many fruitcake recipes. It has become a favorite of my friends and family around the holidays (even the skeptical ones), and is delicious by itself, or covered with a layer of almond paste.

⅛ cup chopped dried cherries
⅛ cup chopped dried mango
¼ cup dried cranberries
¼ cup dried currants
2 tablespoons chopped candied citron
¼ cup dark rum
½ cup butter
¼ cup packed brown sugar
1 egg
½ cup all-purpose flour
⅛ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ cup unsulfured molasses
2 tablespoons milk
¼ cup chopped pecans
¼ cup dark rum, divided

Steps:

  • Soak cherries, mango, cranberries, currants, and citron in 1/4 cup rum for at least 24 hours. Cover tightly, and store at room temperature.
  • Preheat oven to 325 degrees F (165 degrees C). Butter a 6x3-inch round pan or loaf pan and line it with parchment paper.
  • In a large bowl, cream together butter and brown sugar until fluffy. Beat in egg. Whisk together flour, baking soda, salt, and cinnamon; mix into butter and sugar in three batches, alternating with molasses and milk. Stir in soaked fruit and chopped nuts. Scrape batter into prepared pan.
  • Bake in preheated oven for 40 to 45 minutes. Cool in the pan for 10 minutes, then sprinkle with 2 tablespoons rum.
  • Cut out one piece parchment paper and one piece cheesecloth, each large enough to wrap around the cake. Moisten cheesecloth with 1 tablespoon rum. Arrange cheesecloth on top of parchment paper, and unmold cake onto it. Sprinkle top and sides of cake with remaining rum. Wrap the cheesecloth closely to the surface of the cake, then wrap with paper. Place in an airtight tin, and age for at least 10 weeks. If storing longer, douse with additional rum for every 10 weeks of storage.

1 (18-ounce) box yellow cake mix
1 (3.5-ounce) package instant vanilla pudding mix
4 whole eggs
1/2 cup water, cold
1/2 cup canola oil
1/2 cup rum, dark or light
1 cup pecans, finely chopped
Brown sugar (optional)
GLAZE:
1 1/2 stick butter
1/4 cup water
1 1/2 cup sugar
3/4 cups rum, dark or light

Steps:

  • Preheat oven to 325°F. Grease and flour a bundt cake pan. Sprinkle nuts over bottom of pan. If desired, sprinkle a couple of tablespoons of brown sugar over the nuts. Mix all cake ingredients together. Pour batter into pan over nuts. Smooth out 'til the top is even. Bake for 1 hour, or a little less if the pan is black. Do not over-bake! GLAZE: While cake has ten minutes to go, make the glaze. Melt butter in saucepan. Stir in water and sugar. Boil for 4 to 5 minutes, stirring constantly. Turn off flame and pour in rum. Stir to combine and reheat for 30 seconds. Remove cake from oven. Immediately drizzle 1/3 of the glaze on the bottom (top) of the cake. Allow to sit for five minutes. Invert the cake onto a serving plate. Prick surface a hundred times with a fork (gently, please.) Slowly drizzle remaining rum glaze all over the top of the cake, allowing it to drip down the sides. Cool to room temperature before serving to ensure glaze has soaked in. Eat. Enjoy. And don't feel guilty. It's Christmas time!

JAMAICAN BLACK CAKE (CHRISTMAS RUM CAKE)

Even though there are many variations of this spiced fruit cake, no Caribbean home during the Christmas season is the same without it. Dark and rich in flavour, black cake is a made from an array of dried fruit such as raisins, cherries, and prunes, that are soaked for a long period of time before baking.

2 cups soaked fruit mixture ((650g))
1/4 cup fortified or port wine (e.g. Red Label wine)
1/4 cup white rum (e.g. Wray and Nephew's)
1/4 tsp Angostura bitters (optional)
1 cup unsalted butter, softened ((227g))
1 cup packed brown sugar ((220g))
6 large eggs (room temperature)
2 tbsp lime juice (about 1 lime) ((30mL))
zest of 1 lime
2 tsp vanilla extract
1 tsp mixed essence
1/2 tsp rose water
2 cups all-purpose flour, sifted ((275g))
2 tsp baking powder
1 tsp mixed spice
2 tsp ground cinnamon
1/2 tsp salt
3 tbsp browning or burnt sugar
1/4 cup fortified or port wine (e.g. Red Label wine)
1/4 cup white rum (e.g. Wray and Nephew's)

Steps:

  • Make sure that your fruit mixture has been soaking for at least 3-4 days before adding to the cake mixture. If your fruits are whole, add the mix to the blender or food processor with the wine and rum and blend until they turn into a paste (adding the extra alcohol will help with this process). Mix in your Angostura bitters if desired. Set aside.
  • Prepare two, 8-inch cake pans by greasing them with butter, as well as lining with parchment paper. Preheat the oven to 350°F (180°C).
  • For the batter: In a medium bowl, combine the flour, baking powder, mixed spice, cinnamon and salt. Set aside.
  • In a separate container, crack the eggs. Whisk in the lime juice. Set aside.
  • Using a stand mixer or electric hand mixer, cream together your softened butter and brown sugar in a large bowl for about 5-10 minutes until light and fluffy.
  • Slowly, add the egg to the butter mixture, beating with each addition. Scrape down the sides of the bowl as needed. Mix in the lime zest, vanilla, mixed essence, rose water to the wet ingredients, and continue to mix.
  • Add in the macerated fruit mixture a little bit at a time, until combined.
  • Gradually add the flour mixture to the wet ingredients and fold in using a spatula or wooden spoon. Stir in the browning a tablespoon at a time to achieve the desired colour (usually dark-brown).
  • Evenly divide the batter into the prepared cake pans. To ensure that the cake remains moist when baking, add a roasting pan with water to the bottom rack of the oven. Place cakes on the racks right above, and bake for 70-80 minutes.
  • Remove cakes from the oven once done (a toothpick or a knife inserted in the centre should come out clean), and let rest in pan for 5 minutes. Brush the tops of the cakes with a couple tablespoons of the mixture of wine and rum. Once cool enough to handle, remove cakes from pan and brush with remaining wine/rum mixture. Wait at least several hours before serving.

It is the bourbon that makes all the difference to me, in this exotic dark fruit cake. Makes 2 loaves or 5 small loaves. Must be made a minimum of 4 weeks before the holiday season.

1 ¼ c firmly packed brown sugar
3 large eggs
2 ½ c all purpose sifter flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon

1 teaspoon ground allspice
½ cup dark molasses
½ cup brewed black coffee ((or espresso))
½ cup bourbon
1 pound dark raisins
½ pound candied red cherries (whole)
½ pound candied green cherries (whole)
¼ pound candied orange peel (chopped)
¼ pound candied lemon peel (chopped)
½ pound chopped citron
½ pound dark pitted dates (chopped)
1 cup pecans (toasted whole)
Bourbon for soaking cheesecloth in and brushing on
½ cup warmed red currant jelly
Pecan halves (, and candied cherry halves)

Steps:

  • Place all fruit in large bowl; add bourbon and soak for 2-4 hours
  • Preheat oven to 300°F and grease two 9 x 5 loaf pans 2 1/2 inches deep or five 5 3/4 x 3 pans 2 inches deep
  • Line bottoms with parchment paper; butter it (the original recipe was waxed paper)
  • Cream together butter and brown sugar; beat in the eggs.
  • Sift all dry ingredients; beat into butter mixture
  • Add molasses and brewed black coffee or espresso to mixture; combine well
  • Fold in the nuts and bourbon soaked in fruit
  • Carefully pack the batter into the prepared pans almost to the top (I used an offset spatula to finish the tops of each cake)
  • Place pans on centre rack of oven in a bain marie (place pans in a larger pan and pour hot water halfway up the sides); bake for 2 to 2 ½ hours, or until toothpick comes out clean (the small cakes took 50 minutes, so watch carefully after 45 minutes)
  • If the tops brown too quickly, place foil over the top
  • Cool 30 minutes, then remove and set on wire rack
  • Wrap carefully in a triple layer of cheesecloth that has been soaked in bourbon
  • Seal tightly in aluminum foil and store in a cool dry place until the holiday season
  • Once a week, remove foil, and brush additional bourbon onto the cheese cloth
  • The longer it is stored, the more times it is dowsed, the more pungent and flavourful it becomes.
