SIMPLE CAKE POPS



Simple Cake Pops image

Everyone loves cake pops! They are simple to make, and you can create anything for any occasion. They are also nice small bites of dessert instead of large slices of cake or pie. Can be made up in partial batches and the remaining ingredients stored for a few weeks.

1 (15.25 ounce) package yellow cake mix (such as Betty Crocker®)
1 cup water
3 eggs
½ cup vegetable oil
1 (16 ounce) package prepared chocolate frosting
18 lollipop sticks
1 (14 ounce) bag chocolate candy melts
1 (.75 ounce) tube decorating icing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat cake mix, water, eggs, and oil in a bowl using an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for 2 minutes more. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool completely, at least 1 hour.
  • Crumble cake into a large bowl. Stir frosting into cake crumbles until mixture is sticky but not too smooth. Chill in refrigerator, at least 30 minutes.
  • Roll cake mixture into 1 1/2-inch balls and arrange on a baking sheet. Place 1 lollipop stick into each ball.
  • Melt about 1/4 cup chocolate candy melts in a microwave-safe bowl in the microwave, about 20 seconds. Dip each cake pop in the melted chocolate. Repeat melting chocolate and dipping remaining cake pops. Decorate pops with decorating icing.

Fun to make with kids or as a cute Christmas canape, top chocolate, peanut and raisin puffed rice cakes with white chocolate and festive holly icing.

50g rice pops (we used Rice Krispies)
30g raisin , chopped
50g butter
100g milk chocolate , broken into pieces
2 tbsp crunchy peanut butter
30g mini marshmallow
80g white chocolate
ready-made icing holly leaves (we used Sainsbury's Christmas cake decorations)

Steps:

  • Put the rice pops and raisins into a bowl. Put the butter, milk chocolate, peanut butter and marshmallows into a small saucepan. Place on a medium to low heat and stir until the chocolate and butter have melted but the marshmallows are just beginning to melt.
  • Pour onto the rice pops and stir until well coated. Line an egg cup with cling film. Press about a tablespoon of the mixture into the egg cup. Press firmly and then remove, peel off the cling film and place the pudding into a cake case, flat-side down. Repeat with the remaining mixture. Chill until firm.
  • Melt the white chocolate in the microwave or in bowl over a saucepan of barely simmering water. Spoon a little chocolate over the top of each pudding. Top with icing holly leaves.

500g ready-to-roll white fondant icing
icing sugar, for dusting
2 tbsp smooth apricot jam
1 x 20cm fruitcake
red and green food colouring gels
edible gold leaf (optional)

Steps:

  • Roll the fondant out on a surface lightly dusted with icing sugar to about the thickness of a £1 coin. Using the cake tin the fruitcake was baked in as a template, cut a 20cm circle from the fondant. Cut horizontally across the circle, about a third of the way down, in an undulating motion to create the dripping custard effect of your pudding design. Set aside, keeping the offcuts covered.
  • Warm the jam in a small pan over a low heat until loosened. Brush over the top third of the fruitcake, then carefully place the fondant shape on top, gently pressing down to stick the fondant to the cake. Pull a small amount of fondant from the offcuts, dab with a little red food colouring and briefly knead to distribute the colouring, adding more as you go to create a deep red colour. Roll into one or two grape-sized balls. Colour the remaining fondant offcuts a deep green, then roll out. Cut out two or three holly leaf shapes using a sharp knife or a shaped cutter. If you like, use a cutlery knife or skewer to create veins in the leaves for a more realistic look.
  • Arrange the leaves and berries at the top end of the fondant 'custard' using a little jam to help them stick. Use a fine paintbrush to dust the holly and berries with a little edible gold leaf, if you like.

  • Bake cake according to package directions. Remove cooled cake from pan, and crumble into a large bowl; set aside.
  • Beat powdered sugar, butter, and vanilla with an electric mixer on medium-high speed in a medium bowl until smooth and fluffy, about 2 minutes. Add butter mixture to cake crumbles, and stir until combined. Using a 2-inch cookie scoop, drop mixture into mounds onto a parchment paper-lined baking sheet. Roll mounds into balls, and freeze on baking sheet 30 minutes. Insert 1 lollipop stick into center of each ball; freeze 30 more minutes.
  • Place chocolate melting wafers in a large microwavable bowl. Microwave on HIGH until chocolate is smooth and melted, about 2 minutes, stirring every 30 seconds. Working in batches, dip balls into melted chocolate. Allow excess to drip off; place balls on clean parchment paper-lined baking sheets or insert into a foam round. Decorate immediately with sprinkles. Let cake pops dry, and pipe melted chocolate or candy coating on cake pops in decorative patterns. Store, uncovered, in refrigerator until ready to serve, up to 3 days.
