Steps:
- Remove stems from all the peppers. Cut half of the peppers in half and remove the seeds by scraping them out with a small spoon. Place the peppers into a food processor and pulse 7 to 8 times to roughly chop peppers.
- Transfer peppers to a large pot and add the vinegar. Bring mixture to a boil then lower to a simmer for about 20 minutes.
- Add sugar to the pepper mixture and bring to a boil. When it reaches a rolling boil, allow to continue boiling for 1 minute. Add butter to keep the mixture from foaming. Add liquid pectin and stir to mix. Allow mixture to boil for 3 minutes and remove from heat.
- Ladle mixture into sterile jars leaving 1/4 inch headspace. Place hot lids on the jars and screw rims firmly. Proceed canning in a hot water bath for 10 minutes. Refrigerate after opening.

- PREPARE boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
- COMBINE bell peppers, jalapeño peppers and vinegar in a large saucepan. Gradually stir in pectin. Bring mixture to a full rolling boil that cannot be stirred down over high heat, stirring constantly.
- ADD sugar and honey. Return mixture to a full rolling boil. Boil hard 3 minutes, stirring constantly. Remove from heat. Skim foam if necessary.

- PROCESS jars for 10 minutes, adjusting for altitude. Turn off heat; remove lid and let jars stand 5 minutes. Remove jars and cool. Check seal after 24 hours. Lid should not flex up and down when center is pressed.

- Wash jars by hand or in dishwasher with sanitize cycle. In small sauce pot, boil lids and rings
- Slice all peppers to a diced size. Remove seeds (be very careful with jalapenos--wear gloves or use a spoon to remove). Use food processor or hand processor to finely chop peppers.
- Transfer peppers to large pot over medium-high heat. Mix in 1 cup apple cider vinegar and 1.75 oz powder fruit pectin.
- Stir constantly. Bring to a rolling boil. Remove from heat.
- Add 5 cups of sugar and place back on high heat. Return to a rolling boil for one minute.
- Remove from heat. Skim off any foam from top.
- Ladle jelly evenly into sterile jars, filling to ¼ inch from top of jar. Wipe lids of jars then cover with flat lids and screw on screw bands tight.
- Place jars into canner with hot water that is not boiling. Water should completely cover jars. Cook on high heat to reach a boil. Process for 5 minutes, Remove from heat.
- When jars are completely cooled, check seals by pressing centers of lids with finger. (If lid springs back, lid is not sealed and refrigeration is necessary, and jars will last a month in the fridge.)

EASY SWEET PEPPER JAM RECIPE
Sweet red pepper jam made from fresh sweet and green peppers with a tiny bit of heat that makes for the perfect addition to appetizers, poultry or given as a gift.

- Sterilize your mason jars and begin to heat your water in your hot water bath canning pot. Place lids in a small skillet and cover with water and heat on medium-low.
- Place the finely chopped red, green, and jalapeño peppers into a large saucepan over high heat.
- Pour in the apple cider vinegar and stir in the Sure-Jell pectin.
- Bring the mixture to a full boil while stirring constantly.
- As soon as the mixture comes to a rolling boil stir in the sugar. Return to a boil and boil for exactly one minute.
- Remove from the heat and skim off any foam that has collected on top of the surface and discard.
- Then, quickly ladle the jelly into your hot jars, leaving ¼ inch of headspace.
- Wipe the rim and add the heated lid and then screw on the bands to finger tightness.
- Place the jars into the canning pot and be sure that water is 1-2 inches above the top of the jars.
- Bring water to a boil and process for five minutes.
- Using jar lifters remove the jars to a thick towel on the counter and let them cool for 24 hours. Be sure to check the jars after they have cooled to be sure that they sealed properly by pressing down on the center of the lid. If you can easily press down, your jars did not seal and need to be placed in the refrigerator.

CRANBERRY PEPPER JELLY
Steps:
- Sort & wash cranberries. Measure pectin and add 1/2 cup sugar to it.
- Add vinegar and water to large stock pot.
- Chop and remove seeds from jalapenos. 1 cup of jalapenos makes a fairly mild jelly.
- Add peppers and cranberries to the vinegar and water to pan.
- Bring to boil.
- Reduce heat.
- Simmer for about 10 minutes until everything is soft.
- Strain out the cranberries and pepper mixture with a slotted spoon to a food processor or blender.
- Blend until very smooth. (you can add some of the liquid from the pan to help break up the cranberries and peppers, if you need to)
- Return to the saucepan.
- Add sugar/pectin mixture. Bring to rolling boil.
- Add the remainder of the sugar.
- Bring back to a full rolling boil. Boil hard for 1 minute.
- Fill hot jam into hot jars.
- Wipe rims.
- Attach lids. Tighten bands finger tip tight.
- Process in water bath canning pot for 15 minutes. Turn of heat, allow jars to sit in hot water for at least 5 minutes.

- Place 6 clean 125ml mason jars on a rack in a boiling water canner, cover jars with water and heat to a simmer. Set screw bands aside. Heat snap lid sealing discs in hot water, not boiling. Keep jars and sealing discs hot until nearly ready to use.
- With scissors or knife, cut apricots into 1/8 inch slices. Measure into a large deep stainless steel saucepan with vinegar; let stand 4 hours. Add diced red onion and green peppers to to apricots. Stir in sugar.
- Over high heat, bring mixture to a full rolling boil that cannot be stirred down. Add liquid pectin squeezing entire contents from pouch. Boil hard for 1 minute, stirring constantly. Remove from heat and quickly skim off foam, if necessary.
- Quickly pour jelly into a hot jar, dividing solids equally among jars and filling to within 1/4 inch of top of the jar headspace. Wipe jar rim removing any food residue. Center hot sealing disc on clean jar rim. Screw band down tight until resistance is met, then increase to fingertip tightness. Return filled jar to rack in canner. Repeat for remaining jelly.
