1 (12 ounce) package vanilla wafers
4 cups sifted confectioners' sugar
½ cup butter, softened
1 (6 ounce) can frozen orange juice concentrate, thawed
1 cup chopped pecans
1 cup flaked coconut

Steps:

  • Crush vanilla wafers to make fine crumbs. Add sugar, butter or margarine, and orange juice concentrate. Mix well.
  • Shape dough into 1 inch balls. Roll balls in pecans or coconut. Chill until firm.

My mom makes these for Christmas every year. The holiday isn't complete without them! Kids can make them too since there is no baking involved.

4 cups graham cracker crumbs
1 cup confectioners' sugar
1 (6 ounce) can frozen orange juice concentrate, thawed
1 cup chopped pecans
¼ cup light corn syrup
¼ cup butter, melted
⅓ cup confectioners' sugar for decoration

Steps:

  • In a medium bowl, stir together the graham cracker crumbs, confectioners' sugar and pecans. Make a well in the center and pour in the orange juice concentrate, corn syrup and melted butter. Mix well by hand until dough forms. Roll into 1 inch balls and roll the balls in confectioners' sugar. Store at room temperature in an airtight container. Put a sheet of waxed paper between layers to prevent sticking.

1 cup confectioners' sugar
1/4 cup butter, room temperature
1/2 cup orange juice concentrate, thawed
1/2 teaspoon vanilla extract
1 cup chopped pecans
sifted confectioners' sugar or coconut, for coating

Steps:

  • Combine cookie crumbs and 1 cup confectioners' sugar.
  • blend in butter.
  • Stir in orange juice concentrate and add vanilla and nuts.
  • Shape mixture into balls about the size of walnuts.
  • Shake in food storage bag with sifted confectioners' sugar or coconut.
  • Arrange orange balls in single layer on waxed paper-lined cookie sheet and store uncovered overnight in refrigerator for best flavor.

  • Mix all ingredients together and shape in to walnut size balls. Roll balls in additional powder sugar or coconut. Place in refrigerator to chill until firm. Makes 15-20 cookies.

12 ounces vanilla wafer cookies (finely crushed)
1 cup confectioners' sugar (plus more for coating)
1/4 cup butter (softened)
1/2 cup orange juice concentrate (thawed)
1/2 teaspoon vanilla extract
1 cup pecans (chopped)
1/2 sifted confectioners' sugar (or shredded coconut for coating)

Steps:

  • Combine the vanilla wafer cookie crumbs and 1 cup confectioners' sugar in a mixing bowl.
  • Add the butter to the crumb mixture and blend in well.
  • Stir in the thawed orange juice concentrate; add vanilla and nuts. Mix with your hands until all the ingredients are fully incorporated.
  • With your hands, shape the mixture into balls about the size of walnuts. Place the prepared balls in a food storage bag with the sifted confectioners' sugar or shredded coconut. Shake the balls around so that the sugar (or coconut) sticks to the balls. You may want to do just a few at a time to prevent overcrowding which could impact the shape of the balls.
  • Remove the balls from the bag and arrange the orange balls in single layer on waxed paper-lined cookie sheet. Store them uncovered overnight in the refrigerator for the best flavor. If you like making easy or no-bake desserts, try chocolate bourbon truffles or big batch no-bake chocolate oatmeal cookies .

16 ounces cream cheese (room temperature)
8 ounces goat cheese (room temperature)
1½ tablespoons freshly-squeezed lemon juice
1½ teaspoon Worcestershire Sauce
1/3 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
4 ounces sharp cheddar cheese (shredded)
3 tablespoons minced fresh chives
1 teaspoon fresh orange zest
1 tablespoon sweet orange marmalade
¼ cup dried cranberries
4 ounces dried cranberries
3.5 ounces Honey Roasted Pecans
Zest of 1 large orange

Steps:

  • In the bowl of a food processor, combine cream cheese, goat cheese, lemon juice, Worcestershire Sauce, salt and black pepper. Process 30 seconds or until smooth. Add cheddar cheese, chives, orange zest, orange marmalade and dried cranberries; process until smooth and ingredients are fully incorporated.
  • Transfer the cheese to the center of a large piece of plastic wrap that has been placed on a work surface. Pick up the cheese from under the plastic wrap and shape the cheese into a ball. Twist the plastic wrap to enclose the cheese ball. Set the wrapped cheese ball in a bowl with the twisted part of the plastic wrap on top and refrigerate it for at least 1 hour or until firm. You can make the cheese ball up to three days ahead of serving. Remove the cheese ball from the fridge 30 minutes prior to adding the topping mixture, After 30 minutes, remove the plastic wrap and roll the ball in the topping mixture, pressing as you work your way around the ball to ensure the topping adheres. At this point, the cheese
  • ball is ready to serve, or it can be loosely covered and placed back in the fridge until ready to serve.
  • When ready to serve, allow it to soften on the counter 30 minutes prior to serving.
  • Serve on a platter or cheese board along with fresh veggies, crackers, pretzels, and/or crostini.
  • Enjoy!
