Fruitcake Loaf Cake. A richly flavoured cream cheese batter is the star of this quick, easy fruitcake in a smaller loaf size for those who don't want or need a large fruitcake.

1 cup glacé cherries, quartered.
3/4 cup raisins, any kind.
3/4 cup mixed glacé fruit (or glacé mixed peel)
1 2/3 cups flour
1 tsp baking powder
1/2 tsp salt
1 cup sugar
1 cup cream cheese (One 8 oz or 250 g) block)
1/3 cup butter
2 eggs (large or extra large)
1 tsp pure vanilla extract
1/4 tsp pure almond extract (optional)

Steps:

  • Cut the cherries into quarters and mix together with the raisins and mixed fruit (or glacé citrus peel). Measure the cherries AFTER they are quartered. In the cake pictured, I have used a mixture of half red and half green glacé cherries for the most colourful appearance.
  • Preheat oven to 325 degrees F.
  • Lightly grease a 9x5 inch standard loaf pan and line with parchment paper.
  • Measure the flour, then remove 2 tbsp to dust the fruit with later.
  • Sift the remaining flour with the baking powder and salt. Set aside.
  • Cream together butter, sugar and cream cheese, until smooth and fluffy,
  • Add the eggs, one at a time, beating well after each addition.
  • Next, beat in the vanilla extract (and almond extract if you are using it.)
  • Fold in the dry ingredients until almost fully incorporated. A few streaks of flour in the batter should remain at this point.
  • Toss the fruit mixture with the reserved 2 tbsp flour.
  • Add the flour coated fruit to the batter and fold in well.
  • Spread batter evenly into the prepared loaf pan.
  • Bake for 1 hour and 20 minutes or until a toothpick inserted in the centre comes out clean. My oven actually took closer to 1 1/2 hours.
  • Cool on a wire rack. Store in an airtight container. If freezing, wrap tightly in several layers of plastic wrap before placing it in a large ziplock freezer bag, removing as much air from the bag as you can before sealing it.

This is a great bread for tea at Christmas time when you don't like to make fruitcake. It is an old recipe that belonged to my mother, and really good.

2 eggs
1 cup milk
3 tablespoons butter, melted
2 cups sifted all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
¾ cup white sugar
¼ cup chopped candied citron
¼ cup currants
2 tablespoons chopped candied cherries
2 tablespoons chopped candied lemon peel
¼ cup chopped blanched almonds
¼ cup chopped pecans

Steps:

  • Grease an 8x5-inch loaf tin thoroughly. Preheat oven to 375 degrees F (190 degrees C).
  • Beat eggs in a medium bowl. Add milk and melted butter; mix well.
  • Sift together flour, baking powder, salt, and cinnamon into a large mixing bowl. Add sugar, prepared fruits and nuts, and mix well. Add egg mixture to fruit and nut mixture, stirring just enough to blend. Pour batter into the greased loaf tin. Let stand for 20 minutes.
  • Place pan in center of oven on middle rack. Bake for 60 to 70 minutes. Turn out on wire rack, and allow to cool for several hours before slicing.

1-1/2 cups whole red candied cherries
1-1/2 cups whole green candied cherries
3 cups diced candied pineapple
1 pound walnut halves
10 ounces golden raisins
1 cup shortening
1 cup sugar
5 large eggs
4 tablespoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 300°. Combine fruit and nuts. In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.

It's a shame that fruitcake as a species gets such a bad rap. With its two key ingredients--rum and butter--it ought to be a hit. This recipe includes dried fruit, instead of the glowing, candied stuff we've all learned to associate with fruitcake, and is less dense and more cake-like than many fruitcake recipes. It has become a favorite of my friends and family around the holidays (even the skeptical ones), and is delicious by itself, or covered with a layer of almond paste.

⅛ cup chopped dried cherries
⅛ cup chopped dried mango
¼ cup dried cranberries
¼ cup dried currants
2 tablespoons chopped candied citron
¼ cup dark rum
½ cup butter
¼ cup packed brown sugar
1 egg
½ cup all-purpose flour
⅛ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ cup unsulfured molasses
2 tablespoons milk
¼ cup chopped pecans
¼ cup dark rum, divided

Steps:

  • Soak cherries, mango, cranberries, currants, and citron in 1/4 cup rum for at least 24 hours. Cover tightly, and store at room temperature.
  • Preheat oven to 325 degrees F (165 degrees C). Butter a 6x3-inch round pan or loaf pan and line it with parchment paper.
  • In a large bowl, cream together butter and brown sugar until fluffy. Beat in egg. Whisk together flour, baking soda, salt, and cinnamon; mix into butter and sugar in three batches, alternating with molasses and milk. Stir in soaked fruit and chopped nuts. Scrape batter into prepared pan.
  • Bake in preheated oven for 40 to 45 minutes. Cool in the pan for 10 minutes, then sprinkle with 2 tablespoons rum.
  • Cut out one piece parchment paper and one piece cheesecloth, each large enough to wrap around the cake. Moisten cheesecloth with 1 tablespoon rum. Arrange cheesecloth on top of parchment paper, and unmold cake onto it. Sprinkle top and sides of cake with remaining rum. Wrap the cheesecloth closely to the surface of the cake, then wrap with paper. Place in an airtight tin, and age for at least 10 weeks. If storing longer, douse with additional rum for every 10 weeks of storage.

This is an old Victorian recipe intended to use up all the uneaten canned fruit in the pantry. It's lovely around Christmas time, and always great for holiday gifts. If desired, frost with cream cheese frosting or a lemon glaze.

1 teaspoon baking soda
2 teaspoons baking powder

2 teaspoons ground cinnamon

1 cup quick cooking oats
½ cup butter, melted
½ cup white sugar
1 teaspoon vanilla extract
2 eggs
2 cups applesauce
½ cup chopped walnuts
½ cup black raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 8x4 inch loaf pan.
  • Sift the flour, baking soda, baking powder, salt, cinnamon, and cloves together in a large bowl. Stir in the oats. Beat the butter, sugar, and vanilla together in a mixing bowl until light and fluffy. Stir in the eggs until well blended. Mix in the applesauce, walnuts, and raisins. Stir in the flour mixture just until moistened. Pour batter into prepared loaf pan.
  • Bake in preheated oven until a knife inserted in middle comes out clean, about 55 minutes. Take care not to overbake. Cool 5 minutes in pan before turning out on a rack to cool completely.
