JOHNNY GRIDDLE CAKES
Steps:
- Preheat the oven to 300 degrees F.
- Whisk together the flour, cornmeal, sugar, baking powder and salt in a medium bowl. Whisk together the milk, honey and egg yolks together in another medium bowl until combined. Whisk the egg whites in another medium bowl until stiff peaks form.
- Add the milk mixture to the dry ingredients and mix until just combined. Gently fold in the egg whites, and then 2 tablespoons of the melted butter. Mix until the batter is just smooth and let rest for 10 minutes.
- Heat a large nonstick saute pan, cast-iron pan or griddle over medium-high heat. Brush the pan with some of the remaining melted butter. Spoon 2 heaping tablespoons of the batter onto the pan for each johnny griddle cake. Spread the batter slightly just to even out the top using a small offset spatula. Cook until lightly golden brown on each side, about 1 minute 30 seconds per side. Transfer to a baking sheet and keep warm in the oven until ready to serve.

CHRISTMAS TREE CUPCAKES
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F and line a standard 12-cup muffin tin with cupcake liners.
- Add the brown sugar, granulated sugar, and unsalted butter to a large bowl and cream together using a hand or stand mixer.
- Beat in the vanilla, eggs, sour cream and buttermilk.
- In a separate bowl, stir together the all-purpose flour, unsweetened cocoa, instant coffee, baking powder, baking soda and salt.
- Add the dry ingredients into the wet and stir just to combine.
- Divide the batter evenly in the prepared muffin cups and bake for 18 to 20 minutes or until a toothpick comes out clean. Cool completely before frosting.
- In a small bowl, stir together the vanilla frosting and green food coloring. Start with about 5 drops of green food coloring, stir, and see if you like the shade or if you want to add a few more drops to get a deeper green color.
- Spoon the colored frosting into a piping bag fitted with a star tip. Start by piping a center star and then work your way around the top of the cupcake, moving slowly in as you go, to form a triangular shape, like a tree.
- Top with your favorite holiday sprinkles and dust with the confectioner's sugar for a snowy effect.
- Serve and enjoy!

- Cracker Barrel Pancake Recipe. If you’re making a batch of classic pancakes, do yourself a favor and use this recipe. Cracker Barrel knows what they’re doing, and you won’t be disappointed.
- Teriyaki Chicken Stir Fry on the Blackstone Griddle. Have you ever been to a hibachi restaurant? They’re a lot of fun! And they cook everything right on a flat-top in front of you.
- Zucchini Pancakes. Most griddles come with a lovely layer of non-stick goodness on top, making them perfect for breakfast foods like pancakes and bacon.
- Cottage Cheese Griddle Cakes. These griddle cakes are perfect if you’re looking to cut down on carbs. With little flour and plenty of protein-rich cottage cheese, they are a fantastic alternative to traditional pancakes.
- Gorditas de Harina (Griddle Cookies) My favorite thing about these cookies has to be their versatility. They can be thin and crisp or thick and fluffy.
- Mardi Gras Griddle Scones. These might not be the light, fluffy scones we’re all used to, but they are sweet, full of beautiful add-ins, and super fun.
- Sausage-Stuffed Hash Browns. We’re back to breakfast, but it’s not pancakes! This has to be one of my favorite salty dishes to start my day. Hash browns are already a comfort food we all love.
- Traditional Welsh Cakes. Welsh cakes are hard to describe. They’re kind of a pancake-scone-cookie hybrid, with plenty of currants inside. As the name would suggest, they come from Wales but can be found all over the UK.
- Texas Toast. What makes Texas toast so unique? Just like everything else in Texas, it’s the size! You’ll want your bread to be at least an inch thick for this kind of toast.
- Boxty on the Griddle. To be honest, I didn’t know what a boxty was before this post. I knew what an Irish potato pancake was, but I had no clue this was the name!
