Christmas Gingerbread Pancakes image

Wonderful for a Christmas morning brunch, don't wait until the holidays to make these they are wonderful at anytime ---adjust the amount of sugar to suit taste, I strongly suggest for this and for any pancake recipe to allow the batter to sit in the refrigerator for at least a few hours this will improve the texture of the pancakes --- these are wonderful served with orange marmalade :)

1 cup all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon ginger powder
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/8 teaspoon clove
1 large egg, beaten
1 cup buttermilk
2 tablespoons sugar (increase for more for a sweeter pancake)
1 tablespoon molasses
6 tablespoons melted butter (or use half of each) or 6 tablespoons vegetable oil (or use half of each)
marmalade or pancake syrup

Steps:

  • In a large bowl combine first 8 dry ingredients.
  • In another small bowl whisk together the egg with buttermilk, sugar, molasses, and melted butter until very well combined; add to the flour mixture and mix lightly until just until moistened (a few small lumps in the mixture is okay, do not overmix).
  • At this point you may refrigerate for a few hours until ready to use.
  • Grease a griddle, then drop about 1/4-cup batter for each pancake into the pan.
  • Cook the pancakes until the tops are covered with bubbles and the edges looked cooked.
  • Turn and cook the other side.
  • Serve with marmalade.

These Gingerbread Pancakes are light and fluffy, with a hint of cinnamon and ginger perfect for Christmas Day breakfast or brunch!

180 g (1 1/2 cups) plain (all-purpose) flour
1 tbsp baking powder
1 tbsp bicarbonate of soda ((baking soda))
2 tbsp dark brown (or molasses) sugar
2 tbsp granulated sugar
a pinch of salt
1 tsp dried ginger
1 tsp cinnamon
¼ tsp ground cloves
1 large egg (lightly whisked)
1 tsp vanilla extract
Zest of 1 lemon
190 ml (3/4 cup) buttermilk
1 tbsp unsalted butter
120 ml (1/2 cup) milk
Butter
Maple syrup
Mini gingerbread men cake toppers
Fresh cranberries
Edible gold glitter

Steps:

  • Place the flour, baking powder, baking soda, both sugars, salt, ginger, cinnamon and cloves into a large bowl. Mix together until combined.
  • Add the egg, vanilla extract, lemon zest and buttermilk, then mix until just combined using a balloon whisk.
  • Once combined add in the milk whilst continuing to stir with the whisk.
  • Melt a knob of the butter in a large frying pan (skillet) over a medium heat, then carefully brush the butter around so the pan is finely coated.
  • Pour in enough mixture to make two to three pancakes (approx. 60ml or ¼ cup of the mixture per pancake) and cook for 2-3 minutes.
  • Turn the pancakes over when bubbles form on top and then burst, and the edges start to look firm. Cook on the other side for another 1-2 minutes.
  • Repeat with the rest of the mixture until all the pancakes are cooked (you can keep the pancakes warm in a very low oven whilst you're making each batch).
  • Serve the pancakes topped with a pat of butter and a drizzle of maple syrup. You can also decorate with mini gingerbread men cake toppers, cranberries and a little edible glitter.

3/4 Cup Milk
2 Tablespoons Molasses
1 Tablespoon Canola Oil
Non-Stick Cooking Spray
Optional Toppings: Dried Cranberries, Syrup, Whipped Cream, Apple Pie Filling

Steps:

  • 1- In a large bowl, combine the first six ingredients. In a smaller bowl, combine the egg, milk, molasses and oil. Stir the wet ingredients into the dry ingredients until moistened. 2- Pour batter by 1/4 cup onto a hot griddle. Flip when bubbles start to form on the top. Cook until golden brown. 3- Serve hot with toppings.
