When my mother was growing up, her mom made mince pies that contained meat. I created this recipe with my grandmother in mind. This pie is a main dish not a dessert, and I served it for the first time at my mother's 1999 Christmas party to rave reviews. -Candice Salazar Los Alamos, New Mexico

2 cups beef broth
3/4 cup chopped onion
1/2 cup chopped dried apricots
1/2 cup raisins
1/2 cup whole-berry cranberry sauce
1/2 cup undrained crushed pineapple
1/2 teaspoon curry powder
1/4 teaspoon ground cinnamon
1 tablespoon cornstarch
1 tablespoon water
3 cups cubed cooked pork
1/2 cup chopped pecans
1/2 teaspoon salt
Pastry for double-crust pie (9 inches)
Milk and sugar

Steps:

  • In a large saucepan, combine the first eight ingredients. Cook over medium heat for 20 minutes. Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in pork, pecans and salt., Line a 9-in. pie plate with bottom pastry; trim even with edge of plate. Fill with meat mixture. Roll out remaining pastry to fit the top of pie; make decorative cutouts in pastry. Set cutouts aside. Place top crust over filling; trim, seal and flute edges., Brush pastry and cutouts with milk; place cutouts on top of pie. Sprinkle with sugar. Bake at 400° for 30-35 minutes or until golden brown. Cool for 10 minutes before serving. Refrigerate leftovers.

Pork Pie is a standard Christmas Eve or New Year's Eve treat in my predominantly French-Canadian hometown in Maine. It's served with catsup or mustard, tossed salad, and pickles. Simple but wonderful. Top individual servings with catsup or mustard before serving.

2 (9 inch) unbaked pie shells
2 pounds lean ground pork
1 pound lean ground beef
1 ½ cups mashed potatoes
salt to taste
ground black pepper to taste
1 teaspoon ground nutmeg
1 egg white

Steps:

  • Brown ground beef and ground pork over medium heat until thoroughly cooked. Drain off grease.
  • Mix together cooked meat, potatoes, salt, pepper, and nutmeg.
  • Line a 9 inch pie dish with pastry. Spoon pork mixture into pie crust, and top with second pie crust. Brush top crust with egg white. Shield crust edges with aluminum foil to prevent burning.
  • Bake at 375 degrees F (190 degrees C) for 45 minutes. Remove foil for final 15 minutes of baking to brown edges.

Classic French-Canadian ground meat pie, traditionally served at Christmas.

Number Of Ingredients 19

2 lb ground pork
1 medium onion (finely diced)
2 tsp salt
1 tsp dry mustard
1 tsp thyme
1/2 tsp sage
1/4 tsp savoury
1 cup water
Crust from 4 or 5 slices of bread (crumbled)
1 lb lard
5 1/2 cups cake and pastry flour
4 Tbsp brown sugar
1/2 tsp baking soda
1 tsp salt
1 large egg
1 Tbsp vinegar
Water (as needed)
1 large egg
1 Tbsp water

Steps:

  • Prepare the filling: Mix all of the filling ingredients together in a saucepan. Cook over medium heat, stirring constantly, until the meat is no longer pink. Do not brown the meat. Lower heat and simmer uncovered for 30 minutes. Crumble bread crusts into mixture and stir until absorbed into the mixture. Remove mixture to a bowl, cover and refrigerate until chilled before using.
  • Make the pastry: In a large bowl, combine the flour, sugar, baking soda and salt. Cut in the lard with a pastry blender or two knives until the lard is incorporated. In a one cup measuring cup, beat together the egg and vinegar, then add enough water to the measuring cup until it measures 1 cup. Add this mixture to the flour mixture, adding about 2/3 of it at first, stirring, then adding just as much more as is needed to make a moist dough. Divide dough into 4 pieces, wrap in plastic wrap and chill in the refrigerator for at least 1 hour.
  • Preheat oven to 400F.
  • Take out 1 piece of dough and place onto a well-floured work surface. Roll dough into a circle large enough for a 9-inch pie plate. *Note: You will have plenty of dough. Roll to the desired thickness and trim off the excess. Place in bottom of pie plate. Add 1/2 of the meat filling. Roll another piece of dough large enough to cover. Pinch or use a fork to seal the edges together around the outside. Repeat with two more pieces of dough and the rest of the meat filling to make 2 pies. *Your excess dough can be refrigerated or frozen for another time and purpose, if you like.
  • Mix an egg with 1 Tbsp of water and generously brush the tops of the pies. Cut a few slits in the middle to allow the steam to escape.
  • Place in preheated oven (*If using glass pie plates, reduce the oven to 375F once the pies are placed in the oven and bake for about 40-45 minutes), otherwise, bake at 400F for 35-40 minutes, or until golden. If at any time you think your pastry may over-brown, simply lay a sheet of aluminum foil over-top for the last part of baking.
  • Serve warm.

2 tablespoons butter
2 large onions, chopped (about 2 cups)
2 garlic cloves, minced
1 pound lean ground beef (90% lean)
1/2 pound ground pork
1 can (8 ounces) tomato sauce
1-1/2 teaspoons salt
1/2 teaspoon dried thyme
1/4 teaspoon each ground cloves, ground mace and ground nutmeg
1/4 teaspoon pepper
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup frozen shredded hash brown potatoes
1 package (14.1 ounces) refrigerated pie pastry

Steps:

  • Preheat oven to 400°. In a Dutch oven, heat butter over medium heat. Add onions; cook and stir 4-6 minutes or until tender. Add garlic; cook 1 minute longer. Add beef and pork; cook 8-10 minutes or until no longer pink, breaking up meat into crumbles. Drain., Stir tomato sauce and seasonings into meat mixture. Stir in spinach and potatoes. Remove from heat., Unroll one pastry sheet into a 9-in. pie plate; trim even with rim. Add filling. Unroll remaining pastry; place over filling. Trim, seal and flute edge. Cut slits in top. Bake 10 minutes., Reduce oven setting to 350°. Bake 45-55 minutes longer or until crust is golden brown. Cover edge loosely with foil during the last 15 minutes if needed to prevent overbrowning.

1 double kroger pie crust
1 -1 1/2 lb ground pork
1/2 cup vegetable stock
1 small onion, chopped
1 garlic clove, crushed
1 pinch ground cloves
1/4 teaspoon ground mace
1/4 teaspoon ground sage
1/2 teaspoon ground black pepper
3 medium potatoes

Steps:

  • Boil and mash the potatoes.
  • Combine pork, onion, garlic, mace, sage, clove, pepper and brown meat.
  • Add stock and simmer until most of liquid absorbed.
  • Add additional salt and pepper to meat mixture to taste.
  • Combine potato and meat mixture and let cool.
  • Preheat oven to 375 degrees.
  • Fill pie crust and add second crust to cover. Crimp edges and use any leftover crust for holiday decorations.
  • Slit top crust to let out steam.
  • Bake 60 minutes at 375 degrees.

2 1/2 pounds ground pork (ideally organic & local)
1 1/2 cups cold water
1 cup finely chopped onion
1/2 cup finely chopped celery
1 teaspoon ground black pepper
2 bay leafs
1 teaspoon dried savory
1/2 teaspoon dried rosemary
1/2 teaspoon grated nutmeg
1/2 teaspoon cinnamon
Salt
1/2 cup old-fashioned rolled oats
Pastry for two double-crust (9-inch pies)
1 egg (beaten, for glaze)

Steps:

  • In a large, heavy frying pan, combine pork with cold water and heat to boiling point. It should be slightly soupy.
  • Add onion, celery, pepper, bay leaf, savory, rosemary, nutmeg and cinnamon. Cook, covered, over medium-low heat for 1 1/4 hours; stir often. Add more water if mixture dries out.
  • Halfway through cooking time, season with salt to taste.
  • Stir in rolled oats and cook, stirring, for 1 to 2 minutes. Remove bay leaf and allow to cool. Setting the entire pot in the snow bank speeds up this process!
  • Meanwhile, line two 9-inch pie plates with pastry. When meat mixture is lukewarm, divide it between two pie shells and spread it out evenly.
  • Brush around outer edge of pastry with the beaten egg. Place top crust on the tart and press gently around the edge to seal. Trim pastry, crimp edges and cut steam vents in top crust. Decorate as desired.
  • Bake in preheated 425°F oven for 15 minutes, then reduce heat to 375°F and bake another 25 minutes or until crust is golden.

Here in the Upper Peninsula of Michigan, it is a tradition for the Catholics to eat pork pie on Christmas Eve, after coming back from Christmas Eve mass. This is a cousin of the French-Canadian Tourtiere. I'm not Catholic, but I love these rich meat filled pies!

1 double crust pie crust
2 large potatoes, peeled
1 lb ground pork
1 clove minced garlic
1/2 cup finely chopped onion
1/2 cup beef broth
1/4 teaspoon ginger
1/8 teaspoon clove
1/8 teaspoon nutmeg

Steps:

  • Cut up potatoes, cook in boiling water to cover for 20 minutes.
  • Drain; mash.
  • In a large skillet, brown pork, drain off all fat.
  • Stir in the rest of the ingredients except potatoes.
  • Cover and simmer 20 minutes, stirring often.
  • Stir in potatoes, cool.
  • Roll half the pastry into 12 inch circle.
  • Line a 9 inch pie plate.
  • Trim even with rim.
  • Fill with meat mixture.
  • Roll out remaining dough, slit.
  • Place atop filling, trim to 1/2 inch beyond rim.
  • Seal and flute.
  • Bake at 400 degrees for 30 minutes.
