Even though my two grown sons aren't big "sweets eaters", they think these candies are exceptional. The big peanut butter flavor is a hit combined with holiday staples like walnuts and dates.

Steps:
- In a bowl, combine the first six ingredients. Shape into 3/4-in. balls; place on a waxed paper-lined baking sheet. Refrigerate for 1-2 hours or until firm. , In a microwave, melt candy coating; stir until smooth. Dip balls in coating and place on waxed paper to harden.

Steps:
- In a medium sauce pan, mix sugar, dates, butter and milk.
- Cook for 10 - 15 minutes.
- Remove from heat and add walnuts, and vanilla.
- Beat until it thickens.
- Pour onto a cleaned dish towel (NOT TERRY CLOTH). Make sure the towel is wet but not soaking wet--little over damp. Roll it lengthwise and put into fridge until it has completely cooled.
- Unroll the wrap and slice.

Steps:
- 1. Bring Sugar, Butter and Milk to rolling/bubbling boil.
- 2. Add dates, crushing against sides of pan (Tough!)
- 3. Cook to Soft Ball stage. (Drop tiny bit in glass of cold water. When forms a soft ball - NOT hard - Remove from heat and BEAT until thick and pour-able.
- 4. Work fast here. Pour a long roll onto wet towel near long side, leaving space at each end. Fold ends in, and roll to other side. Put each roll in freezer
- 5. Slice frozen (or close to it), and serve.

- In a saucepan, melt butter over low heat. Stir in the dates, sugar and eggs. Cook and stir over low heat for 10-15 minutes or until thermometer reads 160°. Remove from the heat; stir in the pecans, cereal and vanilla. When cool enough to handle, shape into 1-in. balls; roll in coconut. Place on waxed paper-lined baking sheets. Refrigerate for 1-2 hours or until firm. Store in an airtight container in the refrigerator.

STRAWBERRY COOKIES (NO-BAKE DATE NUT COOKIE)
I've been making these every Christmas since the 1970s when Winnie Batting, a long-time family friend and my father's babysitter, gave me her recipe.

Steps:
- In a large saucepan, melt butter.
- Add slightly beaten egg, sugar, coconut, dates and salt.
- Cook, stirring constantly, until thick.
- Remove from heat and add vanilla.
- Add cereal and nuts.
- Cool slightly.
- Butter hands and roll a heaping teaspoon into a ball and then add a point to make it into the shape of a strawberry.
- Immediately roll in red sugar and place on waxed paper (kids can help with this step since the faster you roll them in sugar, the better).
- When all the cookies are made, add green icing stems (I use decorator tip #349).
- When stems are firm to the touch, place in candy papers and store in an airtight container.

- Butter a 12x15 inch sheet of aluminum foil and dust generously with confectioners' sugar.
- In a saucepan over medium-high heat, mix together the sugar and evaporated milk. Stir frequently and bring to softball stage of 235 degrees F. Stir in dates and nuts; allow mixture to cool.
- Form the candy into a roll about 1-1/2 inches in diameter and wrap in the prepared foil; refrigerate until firm. Slice thinly with a knife dipped in hot water to serve.
