CHRISTMAS COQUITO (ENSALADA DE NARANJA)

2 large oranges
3 1/2 ounces black olives
1 pink grapefruit, juiced
1 orange, juiced
4 tablespoons cold-pressed, fruity olive oil (for example the Picual variety)
Mint leaves, to garnish

Steps:

  • Carefully peel the oranges, being careful to remove the pith completely. Cut the oranges into thin segments and arrange in a dish or on dessert plates. Place the olives on top. Mix the orange and grapefruit juice together and pour over the oranges. Leave to marinate. Before serving drizzle olive oil over and garnish with mint leaves.

ENSALADA DE NOCHE BUENA (CHRISTMAS EVE)

1/4 cup olive oil
3 tablespoons orange juice
2 tablespoons red wine vinegar
1 teaspoon salt
1 tablespoon fresh cilantro, chopped
1 head Romaine lettuce
2 beets, cooked and julienned
2 apples, peeled and sliced into wedges
2 oranges, peeled and segmented
2 bananas peeled and sliced into rounds
1 cup fresh pineapple cubes
1/2 cup unsalted peanuts

Steps:

  • In a small bowl, whisk together olive oil, orange juice, vinegar, salt, and cilantro. Set aside. Wash and dry lettuce leaves and then shred. Arrange the lettuce on the bottom of a glass bowl and then layer beets and fruit on top of lettuce, it can be mixed, although, doesn't have to be. Top with peanuts and pour the dressing over the salad.

1/2 tablespoon lemon juice
1 1/2 tablespoons sherry vinegar
3/4 teaspoon Dijon mustard
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
4 tablespoons fruity Spanish olive oil
3 oranges, peel and pith removed, cut into segments
3 avocados, preferably Haas
1/2 bunch fresh mint, leaves only

Steps:

  • In a small bowl, whisk together the lemon juice, vinegar, mustard, pepper, and salt. Drizzle in the olive oil in a slow, thin stream, whisking all the time until the dressing is emulsified.
  • Peel the avocados and cut them into segments approximately the same size as the oranges. Combine the avocados and oranges in a bowl and toss them gently with just enough dressing to coat. Mound some of the salad on each plate and scatter some mint leaves over the top. Serve immediately.

15 ounces cream of coconut
15 ounces evaporated milk
8 ounces condensed milk
1/2 pint vanilla ice cream
2 cups white rum (recommended: Bacardi)
1/2 tablespoon vanilla extract
1/2 teaspoon ground cinnamon

Steps:

  • In a large blender combine all ingredients and mix well. Pour into a pitcher and place in the refrigerator for 1 hour. Serve chilled.

1 cup milk or heavy cream (your preference)

1 cup white rum

Steps:

  • Mix all ingredients and adjust taste with more of whichever liquid you want. The cream and eggs will add richness and of course, more alcohol means a heavier punch. Store liquid in a large glass soda bottle with a pop-off cap, one in which you can re-cap and lock.

Two 15-ounce cans evaporated milk
One 14-ounce can sweetened condensed milk
One 10-ounce jar lemon curd
1 3/4 cups white rum
1/4 cup lime juice
1 tablespoon Angostura bitters

Steps:

  • Combine the evaporated and condensed milks, lemon curd, rum, lime juice and bitters in a blender and process until smooth, about 30 seconds. Using a funnel, pour into two 33 1/2-ounce bottles and cap tightly. This punch does not need to be refrigerated, but it is best served cold.
