Make sure you whip up enough of this coconut-based drink to share it with friends and family. "In Puerto Rico we always make large batches to bottle up and give out," says Yia Medina, a host on the Food Network Kitchen app. "It's my favorite Christmas tradition."

1 15-ounce can cream of coconut
1 14-ounce can sweetened condensed milk
1 13.5-ounce can unsweetened coconut milk
1 12-ounce can evaporated milk
1/4 teaspoon ground cinnamon, plus more for garnish
1 teaspoon pure vanilla extract
1 1/2 cups Puerto Rican white rum
Cinnamon sticks, for garnish

Steps:

  • Pour the cream of coconut, condensed milk, coconut milk, evaporated milk, cinnamon, vanilla and rum into a blender and blend until smooth. Pour into a pitcher, cover and refrigerate at least 4 hours.
  • Before serving, shake well in a large shaker or sealed container. Pour into glasses and garnish with cinnamon sticks and more ground cinnamon.

ENSALADA DE NOCHE BUENA

Number Of Ingredients 11

3 medium beets, cooked and chopped
3 oranges, peeled and sectioned
2 jicamas, peeled and chopped
3 bananas, peeled and sliced
3 slices fresh pineapple, cut into cubes
1/3 cup sugar
4 tablespoons wine vinegar
Lettuce leaves
1/2 cup chopped peanuts
Seeds from one pomegranate
1 stick sugar cane, chopped

Steps:

  • In a bowl mix the beets, oranges, jicamas, bananas, and pineapple together. In another bowl mix the sugar and vinegar. Toss the fruit with the sugar dressing, then chill throughly.
  • Line 6 salad plates with the lettuce, fill the center of each with the fruit, and garnish with peanuts, pomegranates and sugar cane.

Two 15-ounce cans evaporated milk
One 14-ounce can sweetened condensed milk
One 10-ounce jar lemon curd
1 3/4 cups white rum
1/4 cup lime juice
1 tablespoon Angostura bitters

Steps:

  • Combine the evaporated and condensed milks, lemon curd, rum, lime juice and bitters in a blender and process until smooth, about 30 seconds. Using a funnel, pour into two 33 1/2-ounce bottles and cap tightly. This punch does not need to be refrigerated, but it is best served cold.

1/2 tablespoon lemon juice
1 1/2 tablespoons sherry vinegar
3/4 teaspoon Dijon mustard
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
4 tablespoons fruity Spanish olive oil
3 oranges, peel and pith removed, cut into segments
3 avocados, preferably Haas
1/2 bunch fresh mint, leaves only

Steps:

  • In a small bowl, whisk together the lemon juice, vinegar, mustard, pepper, and salt. Drizzle in the olive oil in a slow, thin stream, whisking all the time until the dressing is emulsified.
  • Peel the avocados and cut them into segments approximately the same size as the oranges. Combine the avocados and oranges in a bowl and toss them gently with just enough dressing to coat. Mound some of the salad on each plate and scatter some mint leaves over the top. Serve immediately.

1 can sweetened condensed milk
1 cup milk or heavy cream (your preference)
6 eggs, beaten slightly*
1 cup white rum

Steps:

  • Mix all ingredients and adjust taste with more of whichever liquid you want. The cream and eggs will add richness and of course, more alcohol means a heavier punch. Store liquid in a large glass soda bottle with a pop-off cap, one in which you can re-cap and lock.
