BEST TOFFEE EVER - SUPER EASY

Best Toffee Ever - Super Easy image

Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

Categories     Desserts     Candy Recipes     Toffee Recipes

Time 1h20m

Yield 32

Number Of Ingredients 5

2 cups butter
2 cups white sugar
¼ teaspoon salt
2 cups semisweet chocolate chips
1 cup finely chopped almonds

Steps:

  • In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
  • While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
  • As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
  • Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

BUTTER PECAN COOKIES

Butter Pecan Cookies image

Easy, soft and chewy butter pecan cookies recipe, homemade with simple ingredients. Loaded with toasted pecans. Great for Christmas and Thanksgiving!

Provided by Abeer

Categories     Dessert

Time 1h25m

Number Of Ingredients 12

1 cup Butter (Unsalted, Melted, Should be cooled so that it's warm and not very hot)
1/2 cup Granulated sugar
1 cup Brown sugar
2 Eggs (Large)
1.5 tsp Vanilla extract
2.5 cups All-purpose flour
1 tsp Cinnamon powder
1 tsp Cornstarch
1 tsp Baking soda
1/2 tsp Baking powder
1.5 cups Pecans (Roughly chopped, Unsalted, Preferably toasted)
1/2 cup Toffee bits (Optional)

Steps:

  • In a large mixing bowl, cream together butter, granulated sugar and brown sugar until light and fluffy.
  • Add eggs, vanilla extract and mix until smooth.
  • Add flour, cinnamon powder, cornstarch, baking soda, baking powder and mix until just combined.
  • Mix in pecans and toffee bits until evenly distributed.
  • Chill dough for 30-45 minutes to make it easier to handle.
  • Scoop out small portions of the dough and roll into balls. The chilled dough will seem a bit crumbly but the warmth of your hands will help bring the dough together into small balls.
  • Optional: Roll each cookie dough ball in a bowl of granulated sugar, if you like. I don't usually do it but my Mom does it.
  • Place them on a cookie tray, lined with parchment paper.
  • Bake at 350 degrees F for about 11-14 minutes or until cookies are golden brown and firm along the edges. They will be "poofy" in the center and deflate as they cool. If they don't deflate fully to your liking, you can press down gently with the back of a spoon. Enjoy!

  • Preheat oven to 400 degrees. Line a 9x13 baking dish with parchment paper, carefully folding the edges so you can easily lay the crackers flat.
  • Line baking dish with crackers. If using Ritz, the circles won't line up perfectly, so break a few into halves and do a second layer to cover holes. It doesn't need to look pretty.
  • In a medium saucepan, heat butter and brown sugar over medium heat, stirring frequently until fully combined and smooth. Allow it to reach 285 degrees using a candy thermometer and then let is stay at this heat for 3-4 minutes.
  • Remove from heat and whisk in vanilla. Mixture will spit a little, this is normal. Pour over crackers while hot. It will start to set immediately.

  • Place the butter and sugar in a medium sized pot over low medium-low heat. Stir until the butter is melted. Once the butter has melted, bring to a boil for 3 minutes. Stir constantly.
  • Once it’s nice and bubbly and changed to more of a caramel color, remove pan from heat and pour evenly over saltine crackers. Spread mixture with a knife… however it doesn’t have to be perfect. Try to move fast during this part so the toffee doesn’t harden.
  • Place pan in the oven and bake for 7-9 minutes. The mixture will spread evenly over the crackers as it bakes.

  • Spray a cookie sheet with non-stick spray, and spread out the chopped pecans -reserving about 1/2 cup which are really finely chopped to use on the top at the end.
  • Melt the butter and water in a large pot. Add the sugar and stir constantly until it's dissolved. Occasionally brush the inside of the pot down with water, using a pastry brush, to help prevent the candy from re-crystallization. Continue cooking and stirring until the candy turns a dark amber. Be careful not to burn it though.
  • Pour the candy evenly over the nuts. Use a spoon to smooth it out and completely cover the nuts. Be careful, it's very hot.
  • While the candy is still hot, cover completely with chocolate chips. As they melt, use a knife to spread the chocolate evenly. Sprinkle with the reserved finely chopped pecans. Let it harden, and then break into pieces.
