FRESH CRANBERRY TEA CAKE

Fresh Cranberry Tea Cake image

Fresh Cranberry Tea Cake is holiday-ready! This cranberry cake is perfect for breakfast, afternoon tea or coffee, or as a rustic dessert. The buttermilk batter makes for a cranberry cake that stays moist, each slice boasting a bite of tart, fresh cranberry. This makes 2 10-inch loaves.

Provided by Liren Baker

Categories     Bread     Dessert

Time 40m

Number Of Ingredients 9

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup unsalted butter (room temperature)
1 1/2 cups granulated sugar
1 teaspoon vanilla
1 large egg
1 cup buttermilk (Use good quality, thick buttermilk. Do not substitute with milk and lemon juice)
1 1/2 cups halved fresh cranberries

Steps:

  • Place racks in the center of the oven, and preheat oven to 350°F. Prepare 2 loaf pans (1.5lb loaf pans measuring 10″x5″x3″) by lightly coating with baking spray (or butter), and lining with parchment paper.
  • In a medium bowl, whisk together flour, baking soda and salt, and set aside.
  • In the bowl of an electric mixer, cream butter and sugar together. Add vanilla and egg, mix well.
  • Add the buttermilk and flour mixture in batches, alternating. Stir in the cranberries.
  • Divide the batter into two loaf pans. Bake for about 30 minutes, or until golden. Depending on your oven and the size of your loaf pans, this may need more time; check the cakes at the 30 minute mark, and continue baking, if necessary, until a toothpick inserted in the center comes out clean and the cake is springy to the touch.

CRANBERRY TEA CAKE

Cranberry Tea Cake image

This was originally from the "Moosewood Sundays" cookbook and was an instant hit around here...part coffeecake, part dessert - yummy! I've never had almonds in the house, but can vouch that it's great even without them. I've added in a bit of orange rind to the cranberry mix before too, to give it a nice zing. I have always used a Bundt pan...makes for a very pretty presentation for breakfast, brunch, tea, dessert, or gifts, especially around the winter holidays.

MOIST AND FRUITY TEA LOAF

Moist and Fruity Tea Loaf image

Packed full tea-soaked fruit, this tea loaf is beautifully rich and moist.

Provided by Nicky Corbishley

Categories     Cakes

Time 1h25m

Number Of Ingredients 9

150 g (3/4 cup) sultanas
150 g (3/4 cup) raisins
300 ml (1 1/4 cups) freshly made tea (using 2 tea bags)
250 g (2 cups + 1 tbsp) plain (all-purpose) flour
2 tsp baking powder
200 g (1 cup + 2 tbsp) soft light brown sugar
1 tsp mixed spice
2 tbsp unsalted butter, melted
2 large eggs

Steps:

  • Place the sultanas and raisins in a bowl and pour over the hot tea. Cover and allow to soak up the liquid overnight.
  • Preheat the oven to 170°C/325°F. Line a 2lb loaf tin with baking parchment or a loaf tin liner.
  • Combine the flour, baking powder, sugar and mixed spice in a mixing bowl and stir together.
  • Mix in the melted butter and eggs - using a wooden spoon or spatula.
  • Add in the raisins, sultanas and any liquid left in the bowl.
  • Stir together until everything is thoroughly combined. It will be a very wet mixture.
  • Spoon the mixture into the lined loaf tin, place in the oven and bake for 1 hour - to 1 hour 15 minutes. You'll know it's done when an inserted skewer comes out clean. If you find that the top of the tea bread is starting to look too dark whilst it's in the oven, you can cover it will foil.
  • Once cooked, remove from the oven and leave to cool in the tin for 10 minutes. Then remove from the tin and allow to cool completely on a wire rack before slicing and serving.

Cranberry Tea Cake image

Whether a light dessert, or a pleasant accompaniment for iced or hot tea, a simple loaf cake with the bright flavors of orange and cranberry is delightful any time.

Provided by Allrecipes Member

Time 1h15m

Yield 12

Number Of Ingredients 10

¾ cup dried cranberries
2 cups cake flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup SPLENDA® Sugar Blend
3 tablespoons canola oil
½ cup orange juice
½ cup unsweetened applesauce
¼ cup liquid egg substitute

Steps:

  • Preheat oven to 350 degrees F. Coat a 9 x 5-inch loaf pan with cooking spray.
  • Place cranberries in 2-cup glass measure and cover with near-boiling water. Set aside, allowing berries to soak while you complete the next step.
  • In large bowl, whisk flour, baking powder, baking soda, and salt. In another large bowl, beat SPLENDA® Sugar Blend, oil, orange juice, applesauce, and egg substitute until smooth. Gently stir into flour mixture until thoroughly blended. Do not overmix. Use a sieve to drain water off of berries, and fold berries into batter (discard cranberry water).

  • Cool cake in pan on a wire rack 10 minutes. To serve, cut cake into twelve 3/4-inch slices.
