CHORIZO REFRIED BEAN DIP

Chorizo Refried Bean Dip image

Provided by My Food and Family

Categories     Appetizers & Snacks

Time 20m

Number Of Ingredients 3

4-6 cups cooked pinto beans or 2 cans (16 oz. each) refried beans
1 pkg (10-12 oz.) package chorizo (a Mexican sausage, located in deli section)
3/4 cup Kraft Cheddar or Monterey Cheese

Steps:

  • 1. Add pinto beans in food processor and puree until smooth or desired consistency. (If using canned refried beans, no pureeing is needed.)
  • 2. In a non-stick skillet, sauté and mix chorizo until smooth. Add beans and mix thoroughly. Simmer on low-medium heat for 10-15 minutes; continue to mix occasionally to avoid beans sticking on bottom of pan.
  • 3. Top with Kraft Cheddar or Monterey Cheese, and cover until cheese has melted. Remove from heat. Serve with chips or you can spread on flour tortillas to make burritos.

CHORIZO BEAN DIP

Chorizo Bean Dip image

With its zesty Mexican flavors and tempting toppings, this dish is the first to empty on the appetizer table. I serve it with extra-thick tortilla chips for some serious scooping. -Elaine Sweet, Dallas, Texas

Time 35m

Yield 4 servings

Number Of Ingredients 7

4 links smoked Mexican chorizo
1/4 cup extra-virgin olive oil
1/4 white onion, finely diced
2 cloves garlic, peeled and chopped
2 (15.5 ounce) cans red kidney beans
1 to 2 cups low-sodium chicken stock
Kosher salt and freshly ground black pepper

Steps:

  • Finely chop the chorizo into small dice. In a heavy-bottomed pot add olive oil and chorizo. Put the pot over low heat and slowly bring the heat up to medium. Fry the chorizo for a few minutes to infuse the olive oil. Using a slotted spoon remove about 1/4 cup of chorizo, for garnish, and set aside. To the remaining chorizo in the pot add the onion and garlic and fry until both are cooked, about 2 minutes. Add the beans with their liquid and stock and simmer to allow the flavors to come together about 10 minutes. Season with salt and pepper, to taste. Use a potato masher to mash the beans into a coarse puree. Alternatively, you could let the beans cool for about 5 minutes and carefully puree in a food processor until smooth. Transfer to a serving bowl.

FRIJOLES PUERCOS SINALOA STYLE (+VIDEO)

Frijoles Puercos Sinaloa Style (+video) image

This recipe for Frijoles Puercos is like refried beans on steroids. Bacon, chorizo and melty cheese combine to bring you the bean dip of your dreams.

Provided by Christian Guzman

Categories     Appetizer

Time 45m

Number Of Ingredients 9

1 pound Pinto Beans (dry beans, cooked according to package instructions, about 5 cups prepared, do not drain, reserve liquid)
1/2 pound Monterey Jack Cheese (or any other melty cheese, cut into small cubes)
10 ounces Chorizo
1/2 pound Bacon (about 5 or 6 slices thick cut)
1 teaspoon Salt
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1/2 teaspoon Cumin
1/4 cup Pickled Jalapenos (chopped)

Steps:

  • The beans can be cooked in your favorite method. Don't drain. Retain the liquid to use for mashing the beans.
  • In a large skillet on medium heat, cook chorizo until done, about 5 or 6 minutes. Remove to a small bowl and set aside.
  • Cook bacon pieces in same skillet until crispy, about 7 or 8 minutes.
  • Add salt, garlic powder, onion powder and cumin to bacon and stir well.
  • Add about one cup beans to bacon mixture. As it heats, mash and stir with the potato masher. Continue to add about one cup of beans at a time, mashing and stirring. Add bean liquid as necessary to make the desired refried beans consistency. Add additional liquid, if necessary. You can add water or prepared stock, if you run out of liquid or the liquid is too thick.
  • Once the beans have reached your desired consistency, stir in cooked chorizo and chopped pickled jalapenos. Stir well. Turn off stove top.
  • Start adding the cubed cheese. About half the cheese, you can push down into the refried beans but leave the remaining cubes of cheese sort of even on top. The idea here is that you don't want a lot of stringy melted cheese so you're not stirring it in as you might do with shredded cheese. You want melty chunks of cheese throughout.
  • Let sit for about 15 minutes before serving.
