2 teaspoons canola oil
1 package (12 ounces) fully cooked chorizo or jalapeno chicken sausage links, sliced
1 medium onion, chopped
1 can (15 ounces) no-salt-added black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 cup fresh or frozen corn
1 package (8.8 ounces) ready-to-serve brown rice
2 cups fresh baby spinach
1/4 cup crumbled queso fresco or shredded Monterey Jack cheese
Chopped fresh cilantro

Steps:

  • In a large skillet, heat oil over medium heat. Add sausage; cook and stir until lightly browned. Remove from pan., Add onion to same skillet; cook and stir 3-5 minutes or until tender. Stir in beans, tomatoes, corn and sausage; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in rice and spinach; cook 2-3 minutes or until heated through and spinach is wilted. Sprinkle with cheese and cilantro.

12 ounces Mexican chorizo, crumbled
1 medium onion, chopped
2 large potatoes, peeled and cut into small cubes
¼ cup water
1 clove garlic, crushed
8 flour tortillas, warmed

Steps:

  • Combine chorizo and onion in a large skillet over medium heat. Cook and stir until onion is soft, about 5 minutes. Add potatoes, water, and garlic; stir well. Cover and reduce heat to medium-low. Cook, stirring every 10 minutes, until potatoes are tender, about 25 minutes. Remove from heat and spoon into warm tortillas.

2 medium tomatillos (about 4 ounces), husked and rinsed
1 jalapeno pepper (remove seeds for less heat)
1 small red onion, quartered
2 cups roughly chopped fresh cilantro (leaves and tender stems)
Juice of 1 lime
Kosher salt and freshly ground pepper
4 ounces dried chorizo, thinly sliced
3 1/2 cups frozen shredded or diced hash brown potatoes (about 1 pound)
4 large eggs, lightly beaten
1 16-ounce can low-sodium refried beans
4 10-inch flour tortillas, warmed
1 cup shredded mozzarella cheese (about 4 ounces)

Steps:

  • Preheat the broiler. Put the tomatillos, jalapeno and red onion on a baking sheet and broil, turning once, until tender and charred in spots, about 10 minutes. Transfer the vegetables to a blender and add the cilantro, lime juice, 1/4 cup water, 3/4 teaspoon salt and a few grinds of pepper; puree until smooth.
  • Meanwhile, cook the chorizo in a large nonstick skillet over medium-high heat, stirring occasionally, until crisp, about 2 minutes. Remove to a large bowl with a slotted spoon. Add the potatoes to the drippings in the skillet; cover and cook, stirring halfway through, until golden brown and warmed through, 8 to 10 minutes. Add to the bowl with the chorizo and stir.
  • Add the eggs to the skillet and cook over medium heat, stirring, until scrambled, about 1 minute. Transfer to a bowl and cover. Wipe out the skillet and add the beans; warm through. Season with salt and pepper. Spread the beans in the center of each tortilla and top with the potatoes, chorizo, eggs and cheese. Fold the bottom edge of the tortilla over the filling, then fold in the sides and roll up. Serve with the tomatillo salsa.

½ cup chopped onion
½ cup chopped bell pepper

6 large eggs
3 tablespoons milk
1 teaspoon salt
6 (7 inch) flour tortillas, warmed
1 cup shredded Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • While the chorizo is cooking, spray a large skillet with cooking spray and place over medium heat. Add onion, bell pepper, and jalapeno; cook, stirring occasionally, until lightly browned, 5 to 7 minutes.
  • Beat eggs, milk, and salt together in a large bowl. Pour into the skillet with the vegetables and cook until eggs are set, about 5 minutes. Mix in chorizo and remove from the heat.
  • Lay warmed tortillas flat and spoon chorizo-egg mixture into the middle. Add cheese and roll into a burrito.

For some reason, I am having a difficult time finding chorizo in NH. Maybe I'm just looking in the wrong places, but I haven't tried this yet. I've thought about trying it with hot italian sausage instead...but I'm not sure. If anyone tries it before me, let me know how it is!

2/3 cup long-grain rice
1 teaspoon vegetable oil
2 (15 ounce) cans pinto beans, not drained
1 small onion, chopped
2 teaspoons chili powder
1/4 teaspoon ground cumin
8 ounces fully cooked chorizo sausage, sliced
6 tortillas, warmed
1/2 cup fresh cilantro
4 ounces cheddar cheese, shredded
1 large tomatoes, chopped

Steps:

  • Prepare rice as label directs.
  • Meanwhile, in food processor with knife blade attached, process beans with their liquid until coarsely chopped.
  • In non-stick 10-inch skillet, heat oil over medium heat. Add onion and cook, stirring ocassionally, until lightly browned, 3-4 minute Stir in chili powder, cumin, and chorizo, cook 2 minute Add beans and cook 2 mins, stirring.
  • Fill tortillas with equal amounts. Fold sides over filling to serve.

This recipe is easy. It makes enough for a small crowd. It is versatile in that you can add a lot of different condiments to suit your taste. Great for company. Not too spicy, but can kick it up by adding hot salsa.

2 tablespoons vegetable oil
16 ounces o'brien frozen potatoes
4 green onions (use white and green parts)
1 yellow onion
12 ounces beef chorizo sausages
6 large eggs
6 ounces shredded Mexican blend cheese (or more if you like)
10 burrito-size flour tortillas
sour cream (optional)
salsa (Mild or Hot)
avocado (optional)

Steps:

  • Brown potatoes and onions in a large pan with vegetable oil until golden.
  • Add Chorizo to potatoes in pan and stir until cooked through and reduces slightly. (5-7 minutes).
  • Add eggs to the pan and stir them in, folding them over until eggs are cooked through.
  • Add cheese to the mixture and again fold in until cheese in melted. You will add about 1/4 to 1/2 cup of mixture onto a tortilla and fold burrito style.
  • How To Stuff the Tortillas.
  • In separate frying pan, melt butter.
  • One at a time, put a tortilla in pan and move with your fingers, until you can not touch it anymore without burning your fingers. This makes the tortilla pliable to fold in burrito fashion without cracking the tortilla. Add butter as it is used up in the pan by the tortillas.
