Chorizo Sausage Seasoning Mix image

3 pounds pork, cut into 1-inch cubes
1/2 pound pork fat cut into 1-inch cubes
6 cloves garlic, crushed
1/2 cup red wine
4 tablespoons paprika
2 teaspoons crushed red pepper
2 teaspoons salt
1 teaspoon coriander
1/2 teaspoon cumin
1/2 teaspoon ground black pepper
Medium casings

Steps:

  • Blend the pork, pork fat, and seasonings together. Refrigerate 1-2 days to allow the spices and meat to infuse together.
  • With the cold coarse attachment of the meat grinder work the seasoned pork through the grinder. Send 1/2 of the mixture through the grinder a second time. Mix thoroughly. Stuff the casings using a funnel and tie at desired link size. Prick the sausages so they do not burst while cooking.

2 tablespoons corn oil
8 ounces chorizo sausage
8 ounces sliced mozzarella cheese
1 (12 ounce) package corn tortillas

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat the corn oil in a large skillet over medium heat. Crumble in the chorizo sausage; cook and stir until evenly browned, about 5 minutes. Remove from the pan, and set aside. Place slices of cheese in a single layer to cover the bottom of the pan. It is okay if they overlap a little bit. When cheese melts, quickly pour into a nice casserole dish, or oven-proof bowl. Sprinkle the chorizo on top.
  • Bake for 5 minutes in the preheated oven, or until cheese is fully melted. Remove from the oven, stick a fork in it and load your tortilla.

1 (16-ounce, bulk) package beef chorizo sausage, casing removed
1 cup medium chunky salsa, drained
1 cup shredded mild cheddar cheese
6 fajita-size flour tortillas
1 cup prepared guacamole (refrigerated section)
1/4 cup sour cream

Steps:

  • Preheat oven to 400 degrees F. In a large skillet, saute sausage over medium heat until browned, about 6 minutes. Drain 1/4 cup of oil from cooked sausage. Set sausage aside to cool. Stir salsa and cheese into sausage in skillet. Place 1 tortilla on a clean work surface. Spoon 1/4 cup of the sausage mixture down the center of tortilla. Fold tortilla in half, then roll up. Secure with toothpicks. Place on a foil-covered cookie sheet. Repeat 5 times. Bake until filling is hot and tortilla is crisp and golden brown, about 18 minutes. Cut taquitos in half crosswise. Serve hot with guacamole and sour cream.

This "chori-queso"... a delectable combo of chorizo and Mexican melting cheese... was coaxed out of the world's tallest Mexican through the judicial application of wine and liberally distributed compliments on his guacamole and salsa verde. I may have to up the ante on my plying to get the recipes for the aforementioned guac and salsa.

1 lb chorizo sausage
1 lb mexican cheese (asadero, oaxaca or chihuahua work best)
1 tablespoon oil
corn tortilla
guacamole
salsa
queso blanco

Steps:

  • Fry the chorizo in oil until completely "browned" (good chorizo is red) and very crispy. (At this point, I'd drain the oil off of it -- although Alex says that "authentically" it should be left swimming in the pan.) Keep the chorizo on heat that's just high enough to keep it hot.
  • Heat another pan over medium heat.
  • When the pan is hot, place a corn tortilla in the bottom for about 15-30 seconds and then flip it and repeat this with the opposite side (15-30 seconds; then flip. This will help prevent sticking).
  • Cut a reasonable piece of Mexican cheese and place on one half of the tortilla in the hot pan. When it starts to melt, spoon about a tablespoon of chorizo onto the melting cheese, fold the tortilla in half and immediately remove the taco from the heat.
  • Stuff a little guacamole, salsa, queso blanco, sour cream or whatever you prefer in the tortilla to keep it company and immediately eat.
  • These are good HOT -- so don't bother making a bunch ahead. This is the kind of food you cook for people standing around in the kitchen so they can eat it fresh.

1 can (16 ounces) kidney beans, rinsed and drained

1 package (12 ounces) fully cooked Spanish chorizo links, chopped
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 cup reduced-sodium chicken broth
2 tablespoons ground cumin
1 to 2 teaspoons hot pepper sauce
1 medium ripe avocado, peeled and cubed
6 tablespoons sour cream
1/4 cup fresh cilantro leaves

  • Combine first 9 ingredients in a 4- or 5-qt. slow cooker. Cook, covered, on low 5-6 hours or until flavors are blended. Serve with avocado, sour cream and cilantro.

I love the flavor of chorizo but cannot stomach the thought of the variety meats traditionally used to make it. This is an authentic chorizo from the Mexican state of Sonora. I obtained the recipe from a gentleman named Bruce Moffitt and have since modified it slightly.

3 tablespoons ground New Mexico chile
2 tablespoons red wine vinegar
1 tablespoon dried Mexican oregano
1 tablespoon water
3 cloves garlic, minced
1 ¾ teaspoons salt
1 ½ teaspoons red pepper flakes
1 teaspoon cumin seeds, crushed
¾ teaspoon white sugar
½ teaspoon ground black pepper
1 pound ground pork, well chilled

Steps:

  • Combine chile powder, vinegar, oregano, water, garlic, salt, red pepper flakes, cumin seeds, sugar, and pepper in a small bowl. Mix until the salt and sugar are dissolved in the liquids.
  • Break up pork in a bowl. Pour in spice mixture and knead thoroughly. Use immediately or refrigerate to let flavors meld, 8 hours to overnight.
  • Cook and stir in a nonstick skillet over medium heat until browned and crumbly, about 10 minutes.

Steps:

  • In a slow cooker, combine the sausage, green pepper, onion, tomato paste, wine, water, and crushed garlic. Stir so that everything is evenly distributed. Cover, and set on Low. Cook for 8 hours. Uncover the pot, and cook an additional 2 hours to allow some of the liquid to evaporate. Serve over rice, or with Portuguese rolls.

2 skinless, boneless chicken breast halves - cut into small chunks
flour for dusting
1 (13.4 ounce) package room-temperature fresh pizza dough
1 cup tomato sauce
1 tablespoon olive oil

1 ½ tablespoons Italian seasoning
salt and ground black pepper to taste
½ link Portuguese hot chourico sausage - halved lengthwise and sliced into thin half moons
¼ red onion, sliced thin
¼ cup banana pepper rings

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Prepare a pizza pan with olive oil and flour.
  • Heat 2 teaspoons olive oil in a skillet over medium heat; cook the chicken in the hot oil until no longer pink in the center and the juices run clear, 5 to 10 minutes. Set aside.
  • Dust a flat working surface with flour. Roll the pizza dough out to the size of your pizza pan. Place dough on the prepared pan.
  • Stir the tomato sauce, 1 tablespoon olive oil, garlic, Italian seasoning, salt, and pepper together in a small bowl; spread evenly over the surface of the dough. Scatter, in order, the chicken, chourico, red onion, banana peppers, pizza cheese, and Parmesan over the tomato sauce mixture.
  • Bake in the preheated oven on the middle rack until the cheese is lightly browned, about 20 minutes. Switch the oven setting to broil and cook another 5 minutes.
