For the salad:
1 red bell pepper, diced
1 cup shredded carrots (from the bag)
½ small head of red cabbage, chopped (about 2 cups shredded cabbage)
1 (15 ounce) can chickpeas, rinsed and drained
½ cup cilantro, finely chopped
¼ cup finely chopped green onion
1/2 jalapeño, seeded and diced
For the curry peanut butter dressing:
2 tablespoons peanut butter
1/2 tablespoon freshly grated ginger
1 clove garlic, minced
1 teaspoon apple cider vinegar or rice vinegar
1 teaspoon yellow curry powder
¼ teaspoon red cayenne pepper
¼ teaspoon ground turmeric
Salt and freshly ground black pepper, to taste
2-3 tablespoons warm water, to thin dressing
To garnish:
Extra cilantro
¼ cup roasted cashews

Steps:

  • In a large bowl, add red bell pepper, carrot, cabbage, chickpeas, cilantro, green onion and jalapeño. Pour dressing over veggies and toss until well-combined.
  • In a small bowl, mix together the dressing ingredients: peanut butter, ginger, garlic, apple cider vinegar, curry powder, cayenne pepper, and turmeric. Mix to combine. Add water to thin if necessary to make a dressing like consistency.
  • Pour over salad and mix well to combine. Garnish with roasted cashews and cilantro. Serves 4.

3-4 cups cooked shredded chicken
1 head of green cabbage (3-4 cups shredded)
1-2 large carrots (2 cups grated)
1 green papaya or mango (1-2 cups grated) (optional)
1 cup fresh cilantro, chopped
1/2 cup peanuts, chopped
1/2 cup green onions, sliced
3-4 red serrano peppers, sliced
salt and lime juice to taste
1/2 cup peanut butter
1/3 cup low sodium soy sauce
1/3 cup sesame oil (toasted or dark)
1/4 cup rice vinegar
2 tablespoons chili paste (sriracha works, too)
2 tablespoons sugar
a small knob of fresh ginger, peeled
a clove of fresh garlic, peeled
1/4 cup water to thin to desired consistency

Steps:

  • Put on some good music, pour a drink, and start choppin'!
  • Pulse all ingredients in the food processor or blender. Adjust consistency with water.
  • Toss the salad ingredients in a big bowl with a drizzle of peanut dressing so everything gets coated. Season with salt and lime juice, and maybe a shot of fish sauce if you're feeling wild. Serve chilled.

2 boneless skinless chicken breasts
2 cups green cabbage or 2 cups white cabbage, shredded
1 large carrot (1 1/2 cups shredded)
1 papaya (1 1/2 cups shredded)
1/2 cup fresh cilantro
1/2 cup green onion
1/2 cup chopped peanuts
2 garlic cloves
3 birds eye chili peppers (or 1/2 teaspoon red pepper flakes)
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons sugar
1 tablespoon fresh lime juice
1 tablespoon oil
1/2 teaspoon fish sauce
1/4 cup peanut butter
1/4 cup water

Steps:

  • Bring a large pot of water to boil. Add the chicken breasts, cover, and cook for 15-20 minutes. When the chicken is done, remove from heat, drain water, let cool, and shred with two forks.
  • Chop the cabbage into very thin pieces, like it would be for coleslaw. I use a mandolin. Peel and grate the carrots. Cut off the skin, remove the seeds, and grate the papaya. Roughly chop the cilantro and green onions. Toss the chicken and vegetables in a large bowl and keep chilled.
  • Mince the garlic and chili peppers. Place garlic and peppers in a small mixing bowl with the soy sauce, vinegar, sugar, lime juice, oil, and fish sauce. Whisk until smooth. Add the peanut butter and water and whisk again until smooth and creamy.
  • Toss the salad with the dressing. Add the crushed peanuts. Serve chilled. Leftovers can be stored in the fridge for up to one day. For best results, keep the leftover salad and dressing separate until ready to serve.

1 1/2 cups shredded purple cabbage*
1 cup shredded carrots*
1 red bell pepper (diced)
1/2 cup diced cucumber
2 cups shredded chicken (from a rotisserie chicken or about 1 pound of boneless, skinless chicken breast or thighs)
1/2 cup roughly chopped cilantro
1/4 cup sliced green onions1/4 cup crushed peanuts (for garnish)
1/4 cup natural peanut butter
2 tablespoon coconut aminos
2 tablespoons water
1 tablespoon lime juice
2 teaspoons honey
1 teaspoon sesame oil
Pinch crushed red pepper flakes

Steps:

  • For the peanut dressing: blend all ingredients until smooth.
  • For the salad, add all ingredients but crushed peanuts to a large bowl and toss to combine, then drizzle the peanut dressing over top and toss again. Top with crushed peanuts and serve. If you are planning to eat later, leave the dressing on the side and pour it over when you are ready to eat so that the cabbage doesn't get soggy. This will last for 4-5 days in the refrigerator.

1/2 cup creamy almond butter
1/4 cup lime juice
1/2 cup water
1 tsp toasted sesame oil
1 tsp fish sauce
2 tbsp coconut aminos

2 medjool dates, soaked and softened
¼ cup fresh cilantro leaves
1 tsp salt

Steps:

  • Combine all of the dressing ingredients in a high-powered blender and blend until smooth and creamy.
