This salad is so good! I adapted this recipe (it originally included cooking some pork) to become just a salad that I could add any kind of meat to it, if I wanted. If you're in the mood for southwest flavors, give this a try!

1/2 teaspoon dried chipotle powder
1/2 teaspoon coarse salt
1 teaspoon ground pepper
1/2 cup low-fat buttermilk
3 tablespoons light mayonnaise
2 scallions, whites minced and greens thinly slice, separated
1 garlic clove, crushed
1 head romaine lettuce, trimmed and chopped (about 1 1/4 lbs)
1 pint cherry tomatoes, quartered
1 (10 ounce) package frozen corn kernels, thawed and patted dry
2 ounces monterey jack pepper cheese, cubed

Steps:

  • Whisk together buttermilk, mayonnaise, scallion whites and garlic; Combine chile powder, salt and pepper and add to mixture.
  • Add romaine, tomatoes, corn, cheese, and scallion greens to the bowl (if you are adding meat, you would add it here).
  • Toss to combine and serve immediately.
  • Tip: To neatly cut up a head of romaine, halve it through the core, and make a few evenly spaced cuts lengthwise, leaving core intact. Chop crosswise into bite-size pieces.

1/2 cup buttermilk
3 tablespoons mayonnaise
2 scallions, trimmed, white parts minced and green parts thinly sliced, separated
1 garlic clove, crushed
Coarse salt and freshly ground pepper
1 head romaine lettuce (1 1/2 pounds), trimmed and chopped
1 pint cherry tomatoes, quartered
1 package (10 ounces) frozen corn kernels, thawed
2 ounces pepper Jack cheese, cubed
3/4 pound roasted pork loin (see page 217), room temperature, cut into 1-inch pieces

Steps:

  • In a large bowl, whisk together buttermilk, mayonnaise, white parts of scallions, and the garlic; season with salt and pepper.
  • Add romaine, tomatoes, corn, cheese, scallion greens, and pork to the bowl. Toss to combine with dressing, and serve immediately.

Pork Chops with Endive-Grape Salad image

4 bone-in pork chops (about 3/4 inch thick; 6 ounces each)
Kosher salt and freshly ground pepper
2 teaspoons hot paprika
3 slices bacon
1/3 cup buttermilk
1/4 cup mayonnaise
3 tablespoons fresh lemon juice (from 1 to 2 lemons)
3 tablespoons finely chopped fresh chives
2 tablespoons vegetable oil
4 heads Belgian endive, trimmed, halved lengthwise and thinly sliced into half-moons
4 cups torn red leaf lettuce (from about 1/2 head)
1/2 cup red seedless grapes, thinly sliced

Steps:

  • Season the pork chops all over with salt, pepper and the paprika; set aside. Cook the bacon in a medium skillet over medium-high heat, turning occasionally, until browned and crisp, about 5 minutes. Transfer to a paper towel-lined plate.
  • Make the salad dressing: Whisk the buttermilk, mayonnaise and 2 tablespoons each lemon juice and chives in a bowl until smooth. Season with salt and pepper; refrigerate until ready to use.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the pork chops and cook until well browned and just cooked through, 3 to 4 minutes per side. Divide among plates and let rest.
  • Add the remaining 1 tablespoon lemon juice and 2 tablespoons water to the skillet and scrape up any browned bits. Simmer until reduced slightly, 15 to 30 seconds. Pour the juices evenly over the pork chops.
  • Crumble the bacon into a large bowl. Add the endive, lettuce, grapes and buttermilk dressing. Toss to coat and season with salt and pepper. Add the salad to the plates and sprinkle with the remaining 1 tablespoon chives.
