ITALIAN VINAIGRETTE

This is one of my family's favorite vinaigrettes. It's fresh and flavorful with an extra dose of garlic, plus red wine vinegar and lemon juice acidity. It reminds me a bit of the dressing at Olive Garden...although I'd say this Italian vinaigrette recipe is even better!

4 medium cloves garlic, minced
1/4 c. extra-virgin olive oil
1/4 c. red wine vinegar
2 T. freshly squeezed lemon juice
2 T. dried oregano
1 T. Dijon mustard
1-1/2 tsp. kosher salt
1 tsp. sugar
1/4 tsp. freshly ground black pepper

Steps:

  • Place all ingredients in a small bowl or tall jar. Use an immersion blender to combine and emulsify. If you don't have an immersion blender, cover jar tightly and shake ingredients vigorously (just know that there will be more noticeable pieces in the vinaigrette).
  • Serve with this Italian Chopped Salad.

The best classic Italian Chopped Salad, made with fresh, healthy ingredients! Crisp lettuce, salami, chickpeas and more make it unforgettable.

1/2 medium red onion (very thinly sliced)
1/2 cup chopped dry-packed sun-dried tomatoes
1 small bunch kale (about 8 ounces, curly or Lacinato kale)
Pinch kosher salt
1 large head romaine (chopped (about 4 cups))
1 pint cherry tomatoes (halved)
1 15-ounce can chickpeas (rinsed and drained)
4 ounces Provolone cheese (cut into 1/4-inch cubes (about 1 cup))
4 ounces salami (cut into bite-size pieces*)
1/2 cup stemmed and thinly sliced pepperoncini peppers
1/2 cup thinly sliced kalamata olives
1/3 cup red wine vinegar
1/4 cup extra virgin olive oil
1 tablespoon Dijon mustard
2 cloves garlic (minced (about 1 teaspoon))
1/2 teaspoon honey
2 1/2 teaspoons dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Place the red onion in a small bowl and cover with cold water (this step keeps the onion's flavor but removes some of its harsh aftertaste). Let sit while you prepare the rest of the salad.
  • Place the sun-dried tomatoes in a separate bowl and cover with hot water to rehydrate. Let sit while you prepare the rest of the salad.
  • Peel the kale leaves off of the stems and discard the stems. Chop the leaves into very thin ribbons. You will have about 6 cups. Place in a very large mixing bowl and sprinkle with a pinch of kosher salt. Grab the kale by big handfuls, massaging it with your hands until it turns dark green in color, feels softer, and is fragrant. Don't skip this step! It makes the kale tender and delicious.
  • To the bowl, add the romaine, cherry tomatoes, chickpeas, cheese, salami (if using), pepperoncini, and olives.
  • Mix up the dressing: in a large liquid measuring cup or small mixing bowl, whisk together all of the ingredients-olive oil, vinegar, mustard, garlic, honey, oregano, salt, and pepper. Alternatively, you can shake all of the ingredients together in a mason jar with a tight-fitting lid.
  • Drain the red onion and sun-dried tomatoes. Add to the bowl with the romaine mixture.
  • If serving the salad all at once, drizzle enough dressing on to lightly coat it, then toss to combine (when in doubt, start with less dressing. It's easy to over dress a salad!). Or, if you are serving the salad over a series of days, toss the salad without the dressing to combine, then dress only the portion you plan to eat right away. Taste and add extra salt or pepper as desired.

2-1/2 tablespoons red wine vinegar
1-1/2 tablespoons dried oregano
1 teaspoon dried basil
1 tablespoon fresh lemon juice, plus more to taste
2 garlic cloves, minced
1-1/2 tablespoons minced kalamata olives
2 tablespoons Parmesan cheese
1/4 teaspoon freshly ground black pepper, plus more to taste
1-1/2 cups good extra-virgin olive oil
Half of a small red onion, halved through the core
1-1/2 cups canned garbanzo beans, drained and rinsed
4 cups romaine lettuce (about 1 large or two small heads), rinsed, dried and chopped
2 cups radicchio (about 1 medium head)
1 pint small sweet cherry tomatoes, halved through the stem ends
1 large cucumber, peeled and seeded then cut in half and sliced
1/3 cup grated parmesan cheese (or 4 ounces aged provolone, sliced into strips)
5 peperoncini, stems cut off and discarded, thinly sliced
1/2 cup kalamata olives
1/2 cup Italian Vinaigrette
Juice of 1/2 lemon
Dired oregano, for sprinkling

Steps:

  • Slice the layers of onions lengthwise 1/16 inch thick. Place the onion slices in a small bowl of ice water and set aside.
  • Drain the onion and pat dry with paper towels before adding them to the salad.
  • Thinly slice the lettuce and radicchio.
  • In a large bowl, combine the lettuce, radicchio, tomatoes,cucumber, garbanzo beans, cheese, ,peperoncini, and onion slices.
  • Toss to thoroughly combine the ingredients.
  • Drizzle 1/2 cup of the vinaigrette and the juice of the lemon over the salad, then toss gently to coat the salad with the dressing.
  • Taste for seasoning and add more lemon juice, or vinaigrette if desired.
  • Sprinkle with extra oregano and serve.
  • Combine the vinegar, oregano, lemon juice, garlic, kalamata olives, Parmesan cheese, and pepper in a medium bowl and whisk to combine the ingredients.
  • Set aside for 5 minutes to marinate the oregano and basil.
  • Add the olive oil in a slow thin stream, whisking constantly to combine. You can also add all the ingredients to a glass jar with a lid and shake to combine.

2 Tablespoons olive oil
2 Tablespoons lemon juice
1/4 Teaspoon minced garlic
1 Teaspoon Italian seasoning

2 Ounces pepperoni, chopped
1/2 Large cucumber, peeled and chopped
1/2 Green bell pepper, chopped
Optional: 1 Small handful of an Italian shredded cheese blend (we use Trader Joes quattro formaggio cheese)
3 Tablespoons grated parmesan cheese
1/4 Cup olive oil
2 Tablespoons white vinegar
1/2 Teaspoon dijon mustard

Steps:

  • Combine the ingredients for the marinated chickpeas in a mason jar. Secure the lid, shake to toss, and place in the fridge for at least 30 minutes and up to overnight. The longer the better!
  • Once the chickpeas have marinated, chop the salad ingredients and combine in a large bowl. If adding the optional cheese, save it to garnish the individual bowls at the end.
  • Make the dressing: add the dressing ingredients to a small bowl, and whisk until well combined.
  • Spoon the marinated chickpeas onto the salad. Alternatively, if you like a little more lemon (like us), pour them right on top.
  • Toss the salad with the parmesan dressing. Serve into bowls, and top with shredded cheese as desired.

  • Pour the vinaigrette over the salad and toss to coat.

  • For the lettuce, I like pieces that are manageable bite-wise. I don't want to also need a knife to eat my salad! So I first cut the romaine vertically two or three times, from the root end (don't cut all the way through the root, to keep the head intact) to the tips of the leaves. Then I make cuts crosswise, into 1/2" to 3/4" ribbons. Discard the root end.
  • To assemble the salad: In a large bowl (my favorite salad bowl is a large stainless steel one), gently fold together red onion, pepperoncini, black olives, provolone, and salami. Drizzle about 1/2 cup of the Italian Vinaigrette over these ingredients, and then gently fold again.
  • Add prepared lettuce and tomatoes, gently folding to incorporate. Taste for seasoning and add kosher salt and/or more of the vinaigrette, if desired. Sprinkle freshly ground black pepper over the top and serve immediately.
