CHOPPED EGG AND GARLIC VINAIGRETTE



Chopped Egg and Garlic Vinaigrette image

This vinaigrette works well drizzled over Andrea's Spicy BLT Soup.

Number Of Ingredients 6

2 hard-cooked large eggs
1 garlic clove, mashed into a paste
1 tablespoon finely grated lemon zest
2 teaspoons lemon juice
1/3 cup extra-virgin olive oil
Coarse salt

Steps:

  • Separate the whites and yolks of eggs. In a small bowl, mash yolks with a fork and stir in garlic, lemon zest, lemon juice, and olive oil. Roughly chop egg whites and add to bowl. Season to taste with salt.

TARTAR SAUCE II

This is a traditional tartar sauce complete with hardboiled egg and capers. Can be stored in the refrigerator for up to 3 days.

1 cup mayonnaise
⅓ cup sweet pickle relish
1 tablespoon minced capers
1 hard-cooked egg, chopped
salt to taste
salt and white pepper to taste
1 dash Worcestershire sauce
1 dash hot pepper sauce

Steps:

  • In a small bowl, mix together mayonnaise, sweet pickle relish, capers, and egg. Season to taste with salt and white pepper. Add a dash of Worcestershire sauce and a dash hot pepper sauce. Stir. Chill.

3 Tbsp butter
2 Tbsp flour
2 c whole milk
1/4 tsp salt
1/8 tsp pepper
4 hard boiled eggs, chopped

Steps:

  • 1. Melt butter in a heavy saucepan over low heat
  • 2. Stir in flour increasing heat until mixture bubbles gently
  • 3. Cook 2 minutes
  • 4. Remove pan from heat, add milk and stir, return to heat stirring constantly
  • 5. Stir until mixture comes to a boil
  • 6. Reduce heat to medium, stirring constantly adding more milk if mixture becomes too thick
  • 7. Season with salt and pepper, add eggs and mix.
