- Preheat oven to 350°. In a small bowl, toss olives, artichokes, tomatoes, 2 tablespoons Parmesan cheese, 2 tablespoons oil and basil until combined., On a lightly floured surface, carefully unroll French loaf dough; roll into a 15x10-in. rectangle. Transfer to a greased 15x10x1-in. baking pan. Layer prosciutto, provolone cheese and red peppers lengthwise down center third of rectangle. Top with olive mixture., On each long side, cut 10 strips about 3-1/2 in. into the center. , Starting at one end, fold alternating strips at an angle across filling, pinching ends to seal. Brush with remaining oil and sprinkle with remaining Parmesan cheese., Bake 30-35 minutes or until golden brown. Let stand 10 minutes before cutting. Serve warm.

- In a blender, combine olives, oil, lemon juice, garlic and herbs; cover and process until olives are chopped. Set aside 1/3 cup olive mixture (refrigerate remaining mixture for another use)., Cut the top third off each baguette; carefully hollow out bottoms, leaving a 1/4-in. shell (discard removed bread or save for another use). , Spread olive mixture in the bottom of each loaf. Sprinkle with feta cheese. Fold salami slices in half and place over cheese. Top with the spinach, red peppers and artichokes, pressing down as necessary. Replace bread tops. Wrap loaves tightly in foil. Refrigerate for at least 3 hours or overnight., Serve cold, or to serve warm, preheat oven 350°. Place foil-wrapped loaves on a baking sheet. - Cut the top off of a loaf of crusty bread. Hollow out the inside of the bread. You can cube and save the inside of the bread to make croutons later.
- In a small bowl, mix parsley, sun-dried tomatoes, olives, and pesto. Spread the mixture evenly across the bottom of the hollowed-out bread. Layer the cheese into the loaf. - Heat the oven to 425 degrees F.
- Press dough onto baking sheet and top with garlic, cheeses, and pepper flakes and freshly ground black pepper, to taste, and bake 15 to 18 minutes.

HOMEMADE ANTIPASTO BREAD

- Add 1 cup of warm water and the sugar in a measuring cup, stir to dissolve.
- Add in the packet of yeast and stir to dissolve. Allow to activate for about 10-15 minutes. It will foam and increase in size so allow for growing space in your measuring cup.
- On a clean surface, make a mound with the flour and sprinkle with the salt. Form a well in the center of the mound.
- Drizzle the olive oil into the well and carefully pour in the activated yeast.
- Slowly work the flour into the liquid with your hands.
- Begin to knead the dough, adding a little bit of water as you go {up to 1/2 cup of warm water}.
- Knead the dough until it is well combined, elastic and slightly shiny; about 5 minutes. Flour lightly as needed to prevent sticking to the work surface.
- Form the dough into a ball and place into a large bowl. Cover with a kitchen towel and allow it to rise in a warm place.
- Allow to rise for 2-3 hours. It should more then double in size.
- Preheat over to 450 degrees. If you have a pizza stone, preheat the oven with the stone in there.
- Roll the dough out onto a lightly floured surface. Using a rolling pin, form a large rectangle about 1/2 an inch thick {approx 18 inches long by 10 inches wide}.
- Layer the shredded mozzarella on top, leaving an inch border around the edge clear. Top with the remaining filling ingredients distributing evenly over the cheese.
- Starting with the long edge, begin the roll the bread up. After a roll or two, go ahead and fold the short side over slightly {this seals the ends of the bread}.
- Continue to roll the long side of the dough until you reach the end. Cut a few slits in the top of the bread to allow steam to escape.
- If using a pizza stone, place the bread onto a lightly floured pizza peel seam side down then carefully onto the hot stone. If not using a stone then place the bread seam side down onto a parchment lined baking sheet.
- Bake for 25- 30 minutes until golden. Rotate the bread around halfway through the cooking time to ensure even browning.
- Allow the bread to rest about 10 minutes before slicing.

- 1. Thaw spinach and squeeze dry. Set aside.
- 2. Drain and coarsely chop artichoke hearts. Make sure you use the un-marinated ones. Also peel and coarsely chop the garlic and parsley. Set aside.
- 3. Cut top off french bread lengthwise and set aside. Carefully scoop out the inside of loaf, tearing bread into small pieces and putting them in a large mixing bowl.
- 4. In a large non-stick skillet, melt butter and oil until slightly bubbling. Add garlic and stir for 30 seconds.
- 5. Add spinach, artichoke hearts, parsley and anchovies, and stir lightly with a wooden spoon. When thoroughly mixed and heated through, add to the bowl with the bread pieces and toss until well-incorporated.
- 6. Add the cheeses, capers and seasonings. Mix well.
- 7. Pack mixture into hollowed out bread crust. Replace top and wrap in tin foil.
- 8. Bake for 30 minutes at 350 degrees.
- 9. Unwrap, drizzle some additional olive oil on top of crust and bake uncovered for 5 minutes.
- 10. Cut into 1-1/2 inch slices and serve warm.
VEGETABLE ANTIPASTO STUFFED BREAD

BAKED ANTIPASTO CHEESE BREAD
Forget all other stuffed cheese things: this ooey-gooey bread is a perfect holiday appetizer and has all the flavors of antipasto.

- Position a rack in the center of the oven and heat to 400 degrees F. Line a rimmed baking sheet with parchment.
- Cut the block of cheese in half lengthwise and position end to end, so that the cheese forms a long rectangle. Center the cheese rectangle on the top of the bread so there is a small border of bread around it. Using the point of a chef's knife and a back and forth sawing motion, cut into the crust following an outline 1/2 inch larger than the cheese on all sides; be careful not to cut all the way through to the bottom of the bread. Remove the cut crust and some of the loaf's interior, leaving the bottom crust and the bread on the sides intact (set aside the extra bread for breadcrumbs or another use). The cheese should fit in the cavity with about a 1/2-inch space around it and it should be about flush with the top of the bread. If not, cut and trim the cheese so it fits.
- Line the bread bowl with the prosciutto so that the meat completely covers the bottom and sides (this will stop the melted cheese from leaking as it bakes). Drape the cured meats along the sides of the cutout so that they hang over the edges of the loaf.
- Sprinkle half of the giardiniera and olives over the prosciutto. Top with the cheese blocks. Sprinkle the remaining giardiniera and olives over the top and sides of the cheese. Brush any exposed bread with oil. Transfer to the prepared baking sheet, cover with foil and bake until the cheese is completely melted and beginning to drip down the sides, 45 to 50 minutes.
- Let sit covered for 10 minutes before cutting into thick slices.
STUFFED ITALIAN ANTIPASTO
Steps:
- Cut a 6 inch diameter hole in the top of the bread and reserve top. Remove all but a 3/4 inch shell of the inside of the bread (save inside of bread for another use, like feeding the ducks at the park!) Begin assembling the stuffed sandwhich: Divide the provalone cheese into thirds. Place one third along the bottom and sides of the inside of the bread. Next, place half of the salami, half of the hot cappicola, half of the proscuitto, and half of the sopressata. Top with half of the roasted peppers and half of the marinated artichoke. Top with another third of provalone cheese. Repeat layering with the rest of the meats in the same order and then the rest of the roasted peppers and artichokes. Finish up with the last of the provalone. Make the dressing: Mix the garlic, oregano, salt & pepper into the balsamic vinegar and slowly whisk in the extra virgin olive oil until the dressing emulsifies somewhat. Immediately pour dressing over the top of the sandwich and then tilt sandwich back and forth to allow dressing to cover the meats and settle around the inside of the bread. Place top of bread back on the sandwich, wrap the entire sandwich tightly in double thickness of aluminum foil and place in refrigerator overnight for the bread to soak up the dressing and for the flavors to develop. When ready to serve, slice like a pie into 8 slices.
CHOPPED ANTIPASTO STUFFED BREAD

- Preheat the oven to 200°F.
- Crisp the bread in the low oven and cool. Split and hollow out the bread.
- Chop and add the meats, cutting them into bite-size pieces or strips and place in a large bowl. Dice or slice the cheeses and add to the meats. Finely chop the pickled vegetables and add to the bowl. Add the parsley, olives, celery, and lettuce to your antipasto salad and dress with the lemon juice, EVOO, and pepper.
- Fill the bottom of the bread with salad, mounding and packing it in there with a rubber spatula to help. Top with the basil leaves or spread the top with a layer of pesto, and set the top into place, pressing down on the stuffed bread. Cut a baguette into 4 pieces across, or cut a round loaf into 4 wedges. Wrap the ends of the sandwiches with wax paper or paper towels to control drips. How wide can you open your mouth?
ANTIPASTI STUFFED CHICKEN

- Position a rack in the center of the oven and preheat the oven to 450 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray. Set aside.
- For the dressing: In a small bowl, whisk the red wine vinegar, oregano, fennel seed, mustard, salt, pepper and garlic. Gradually whisk in the oil.
- For the chicken: In a medium bowl, combine the salami, pepperoncini, prosciutto, provolone and tomatoes with 1/4 cup of the dressing; toss to blend evenly.
- Place the chicken breasts, smooth-side down on the work surface with the thickest part at the top and the straight side on the left. Using a very sharp knife and starting on the right side, cut each chicken breast almost in half horizontally (stopping close to the left side), creating a pocket for stuffing. Open the chicken breasts like a book.
- Mound a fourth of the stuffing onto the right side of the breast, and press firmly to compact. Fold the left side (flap) of the chicken tightly over the stuffing. Lay three 10-inch pieces of string on the work surface 1 to 11/2 inches apart. Place the chicken on the strings and tie the strings around the chicken at intervals to keep the flap closed over the stuffing. Press in any stuffing pieces that fall out.
- Place the chicken breasts on the prepared baking sheet. Drizzle with 1/4 cup of the dressing.
- Roast until the chicken is cooked through, 18 to 20 minutes. Using tongs, transfer the chicken to a sheet of foil. Let rest 5 minutes.
- For serving: Divide the arugula among four plates. Cut the strings off the chicken. Cut each breast on a slight diagonal into 1/2-inch-wide slices. Fan the slices of one breast over the arugula on each plate. Drizzle with the dressing and serve.
BAKED GARLIC-STUFFED ANTIPASTO BREAD

- Preheat oven to 350 degrees. Peel and coarsely chop garlic, set aside. Slice top off French bread lengthwise. Carefully scoop out inside of loaf, tearing bread into small pieces, and place in large bowl. In large skillet, melt butter and all but 1 tablespoon of the olive oil together until bubbly. Add garlic and stir for 30 seconds. Add spinach, artichokes, parsley and anchovies. With a wooden spoon, gently combine ingedients and cook about 1 minute. When thoroughly mixed, add to bread pieces and toss well to mix. Add cheeses, black olives, capers and seasonings. Toss well to mix. Pack into hollowed out bread, replace top and wrap in foil. Bake for 30 minutes at 350 degrees F. Unwrap bread, drizzle with 1 tablespoon olive oil and bake for additional 5 minutes. Slice into 1 1/2 inch slices. Serve warm. POTATO AND HERB STUFFED BREAD
Steps:
- Stuffing: Boil the potatoes in their jackets until very soft. Peel and mash them thoroughly. Add the remaining stuffing ingredients. Mix well and set aside. This filling can be prepared ahead and refrigerated for a day. There is no need to warm the stuffing before filling the bread.
- To prepare the bread: Combine flours with salt in a bowl. Reserve about 1 teaspoon of shortening, and rub the remainder into the flour, with your finger tips until the mixture resembles coarse meal. Add most of the water to form a mass. Slowly add more water tablespoons at a time until dough forms. Brush the work surface and your hands with the reserved teaspoon of fat. Place the dough on the greased surface, and knead for 10 to 15 minutes. This will be a very soft and pliable dough. Put back in bowl and cover with a moist towel or a sheet of plastic wrap and let it rest, preferably in a warm place, for at least 1/2 hour.
- Divide the bread dough and the filling into 12 equal portions. Take one piece dough and flatten it into a 4-inch round pillow with your hands. Depress the center slightly and place a portion of the filling into the depression. Bring the sides of the dough over the filling and enclose it completely. Press lightly but firmly to flatten it into a pillow, either between your hands or the work board. With your fingers, pinch the edges slightly, so that the filling is in the center and not near the edge where it could break through the dough. Cover with plastic wrap or a moist towel to prevent drying.
- Pick up each pattie and dust with flour. Firmly pat the pattie to make filling adhere to dough. Roll out to a 6-inch circle dusting with flour as you go, to prevent sticking. Cover with plastic wrap or moist towel.
- Heat the griddle or frying pan cook each bread for 2 minutes or until brown spots begin to appear. Flip the bread over and cook for 30 seconds. Brush lightly but thoroughly with melted shortening or oil and cook on original side for 30 seconds. Brush other side and flip again. Keep warm in a covered dish or tightly wrapped with foil. Note: They can also be made several hours ahead and reheated in a 300 degree oven for 10 to 12 minutes.
