CHOKECHERRY LIQUEUR

2 cups chokecherry juice
½ cup sugar
½ cup grain alcohol (Everclear)

Steps:

  • Heat juice and sugar just until sugar dissolves. Add alcohol and mix well. Pour into bottles and allow to rest at least 1 month. Serve chilled.

Chokecherries are small, tart little berries which are loaded with antioxidants and available during the fall and spring seasons. If you can't get your hands on chokecherries, this pie works equally well with blackberries. You can make this pie using store bought pie dough, pre-baked pie shells or simply use this recipe and make your own perfect pie crust!

pie dough for 1 double-crust pie (9-inch) or make it from scratch
2 cup chokecherry juice
1/2 cup sugar
1/2 teaspoon almond extract
2 tablespoon cornstarch
pinch of salt
1 egg

Steps:

  • Preheat oven to 400°F.
  • Roll the pie dough into a large circle and line your 9-inch pie plate with this dough. Roll the second piece of dough into a large circle and cut into 1-inch strips - set aside. This will be used to lattice the top of the pie. Make sure you keep the dough refrigerated until you're ready to assemble otherwise it will get too mushy.
  • In a small bowl combine all your ingredients, making sure to coat evenly.
  • Pour your berry mixture in to the prepared dough lined pan.
  • Make a latice top over the pie and trim the remaining strips. Then crimp the edges.
  • Mix an egg yolk with some water, and brush the surface of the pie.
  • Cover the edges of the pie with foil so it doesn't burn.
  • Bake for 25 minutes at 425°F then remove the foil.
  • Bake for an additional 15 minutes until the filling bubbles.

Shrubs, also called drinking vinegars, are restorative drinks from the Colonial days predating soda pops and sports drinks. Prior to the invention of refrigeration, a shrub syrup was a means of preserving fruit long past its picking. Shrubs were popular in Colonial America, mixed with cool water to provide a pick-me-up on hot summer days. A proper shrub has a flavor that's both tart and sweet, so it stimulates the appetite while quenching thirst. Try your chokecherry shrub over ice with club soda. 3 cups chokecherries
1 cup vinegar
1 cup water
sugar

Steps:

  • Wash berries and mash in a glass bowl.
  • Combine vinegar and water.
  • Pour over berries (solution should cover berries).
  • Let stand 24 hours, stirring occasionally.
  • Place in a large saucepan, and slowly bring the mixture to a boil.
  • Boil 5 minutes.
  • Strain through a jelly bag.
  • Do not squeeze bag.
  • For each cup juice, add 1 cup granulated sugar.
  • Bring to a boil.
  • Boil 2 minutes.
  • Remove from heat.
  • Allow to settle.
  • Bottle and refrigerate for up to 6 months, or pour into sterilized jars, seal and process for 10 minutes in a boiling water bath.
  • To Serve: Add to 2 - 4 tablespoons of concentrate on top of ice cubes in a glass. Fill with water, club soda, or sparkling water.

Steps:

  • Place all ingredients in glass jar.
  • Shake every day for 30 days.
  • Drain and bottle.
  • This will taste very sweet at first, but if allowed to age at least six months will be nice and mellow.

  • Combine the beets, stock or water, and vinegar in a non reactive saute pan (a 10 inch size will be fine) heat until the beets are hot throughout, stirring occasionally.
  • When the beets are hot, add the butter and herbs and stir to coat, there should still be some liquid from the stock and the vinegar in the pan to help create a creamy glaze for the beets. If the pan is dry, add a tablespoon of stock or water before adding the butter to prevent it from breaking and becoming oily.
  • After adding the butter and herbs to glaze the beets, double check the seasoning for salt and serve immediately.
  • With a sharp pairing knife, remove the the root and top on each onion. Blanch the onions in boiling salted water for 10 seconds, then remove and shock in an ice bath, this will make the skins easier to peel off.
