Steps:
- Combine flour, baking powder, and salt. Add 1/2 cup warm water and continue adding water to reach the consistency of bread dough; more water may be needed. Cover dough and let sit in a bowl about 1 1/2 hours. Tear off balls of dough. Roll out balls on a lightly dusted board or counter top. Put enough shortening in a skillet for dough to float. Heat shortening to 400 degrees. Fry until golden brown on both sides. Drain on paper towels. This is good to eat with beans, stew, or chioi. It's also good served with butter and honey.

- 1. Combine the flour, baking powder, and salt.
- 2. Add the water to the flour mixture.
- 3. Mix until combined.
- 4. Turn dough out onto a floured surface. Knead dough until soft.
- 5. If you have a 4" cutter, roll the dough out on a lightly floured board until 1/4" thick and cut out 4" rounds. If you don't have a big cutter, pinch off about a golf ball size of dough.
- 6. Roll or pat dough flat in a circle about 1/4 of an inch thick.
- 7. Drop dough into heated oil that is 1-2 inches deep (about 317 degrees). Fry until the bread puffs up.
- 8. Flip over. It is done when both sides are golden brown.
- 9. Drain on paper towels.
- 10. Serve with honey.
- 11. Or can use bread for tacos. Brown 1 lb ground turkey, add 1 chopped red bell pepper and a can of yellow corn to browned turkey. Add 1 package of taco seasoning and a touch of ketchup to taste. Serve on fry bread with lettuce, cheese, refried beans, tomatoes, etc.

- Heat your electric skillet to 400 and fill with vegetable oil 1/2" deep. A deep fryer might also be used. Mix dry ingredients together well in a medium sized bowl. Beat egg separately and add to dry ingredients. Heat milk for 45 sec to a minute in the microwave and add slowly to the mixture. Begin kneading in the bowl and once it seems a little more uniform, turn it out onto your "flour'd" kneading surface and knead for a minute or two. Role the dough out until it is (ideally) 1/2 an inch thick. Once the dough is a uniform thickness, cut it into 2″ wide strips. A pizza cutter would be perfect for this. Next cut a slice through the middle of each piece of dough. Leaving the ends intact. You are then ready to fry your bread! Place them in the oil carefully, and let them brown for a minute or two before turning and doing the same to the other side. Remove from the oil and let drain on a paper towel laden platter.
INDIAN FRY BREAD
This crisp and bubbly bread is wonderful for Indian tacos or served as a dessert with powdered sugar or sugar and cinnamon. We put refried beans, Mexican-seasoned ground beef, grated cheese, lettuce, tomatoes, black olives, salsa, and sour cream on top to make a great main dish for dinner.

- Combine flour, baking powder, and salt in a bowl. Stir in cold water and vegetable oil until dough comes together into a ball.
- Set dough on a floured surface. Pinch off ten pieces the size of golf balls, roll into balls, and flatten each into a round. Make a small hole in the center of each round.
- Fill a deep skillet with oil to 3/4 inch; heat over medium-high heat. Add dough rounds in batches and fry until golden brown, about 20 seconds per side. Drain on paper towels.

- In a large mixing bowl, stir together the flour, salt, and baking powder. Gradually add in the water, mixing with a spoon or your hands until combined. It will be sticky.
- Drizzle 2-3 tablespoons of oil over the dough to keep it from drying out. Cover and let rest 2 hours. This is not a risen dough so the dough will not rise, but it does need to rest.
- Pull off golf ball sized pieces of dough and stretch or roll out until very thin, without ripping it. The thinner the better.
