DOUBLE CHOCOLATE BANANA MUFFINS



Double Chocolate Banana Muffins image

These double chocolate bananas muffins are ridiculously easy to make . . . and even easier to eat. Full of ripe bananas, brown sugar, cocoa powder, and dark chocolate chunks! Socially acceptable for breakfast, but decadent enough for dessert. ;)

6 tablespoons unsalted butter (melted)
3/4 cup dark brown sugar (packed )
1 large egg
1 teaspoon vanilla
1 cup mashed ripe bananas (about 3 large bananas)
1 cup all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon (optional, but highly recommended for more flavor)
1/2 teaspoon salt
3/4 - 1 cup dark chocolate chunks (plus more for topping)

Steps:

  • Pre-heat oven to 425 degrees F and line a standard 12 cup non stick muffin tin with paper liners.
  • In a large bowl, whisk together sugar, butter, egg, and vanilla.
  • Whisk in mashed bananas.
  • Add in flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Use a spatula to mix. Don't over mix.
  • Gently stir in dark chocolate chunks.
  • Scoop evenly into prepared muffin tin. You should get 12 muffins.
  • Top with a few more chocolate chips.
  • Bake for 5 minutes at 425 degrees F and then lower heat to 350 degrees F (keep muffins in oven)
  • Bake an additional 12-14 minutes, or until a toothpick comes out *almost* clean. **Don't over bake and make sure you're not sticking a toothpick into a chocolate chip**
  • Remove from pan and enjoy!

There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup white sugar
½ cup canola oil
1 egg

2 large very ripe bananas, mashed
¾ mini semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.

1 egg
1/3 cup low-fat buttermilk or 1/3 cup milk
1/2 cup granulated sugar
1/2 cup brown sugar
1 1/2 cups flour

2 -3 tablespoons chocolate chips
2 tablespoons chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
  • In large bowl, mash bananas with fork.
  • Whisk in egg, milk, granulated sugar, and brown sugar.
  • In separate bowl, combine flour, baking soda, and salt.
  • Add flour mixture to banana mixture and combine well.
  • Fold in chocolate chips and walnuts.
  • Spoon equal amounts of batter into 12 muffin cups.
  • Bake 20 minutes or until toothpick inserted in center comes out clean.

Steps:

  • Preheat the oven to 400F. Grease a 12 muffin tin.

1 1/4 cup all purpose flour, 155g
2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup melted butter, 65g
2/3 cups sugar, 135g
2 eggs
1 teaspoon vanilla
2 large, ripe bananas
7 oz dark chocolate, 200g (Sometimes I go for 250g/9oz too!)

Steps:

  • Preheat the oven to 190C (375F) and line a muffin tin with paper liners.
  • In a medium bowl, mix unsweetened cocoa powder, flour, baking powder and salt together. Set aside.
  • In a large bowl, whisk melted butter and sugar until smooth and then add in the vanilla and eggs.
  • Use a fork or something like it to mash the bananas. The more mashed, the smoother the texture of the muffin.
  • Alternating between the banana mixture and the flour mixture, slowly start adding them into the wet mixture.
  • When everything is incorporated, start to fold in the chocolate chips (or chopped chocolate bars).
  • Fill each muffin liner 2/3 full and bake for around 15 minutes or until a toothpick comes out with just a few moist crumbs. Cool for 5 minutes in muffin tin before completely cooling on a wire rack.
