1 1/3 cups Gold Medal™ all-purpose flour
2/3 cup packed brown sugar
1/3 cup unsweetened baking cocoa
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1/3 cup butter, melted
1 egg
1 teaspoon vanilla
1 cup coarsely shredded zucchini (about 1 medium)
1/2 cup semisweet chocolate chips
1/4 cup chopped walnuts

Steps:

  • Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In large bowl, stir flour, brown sugar, cocoa, baking soda, and salt with spoon. In small bowl, beat buttermilk, melted butter, egg and vanilla with whisk until blended. Pour buttermilk mixture into flour mixture; stir until just moistened. Stir in zucchini, chocolate chips and walnuts. Divide batter evenly among muffin cups.
  • Bake 20 to 24 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Serve warm or cool.

1/2 cup packed light brown sugar
1 cup vegetable oil
3 large eggs
2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder (I used Hershey's Special Dark)
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 cups finely grated zucchini, slightly drained
1 cup semisweet chocolate chips
1/2 cup mini milk chocolate chips, optional

Steps:

  • Preheat oven to 350°F. Spray muffin pan wells with nonstick cooking spray or line with paper liners.
  • In a large bowl with an electric mixer, beat together the sugars, oil, eggs, and vanilla until thoroughly combined.
  • In a medium bowl, whisk together the flour, cocoa powder, salt, baking soda, and cinnamon.
  • Gradually add the dry ingredients into the sugar mixture and mix until just combined.
  • Fold in zucchini until it is evenly distributed into the batter. Stir in semisweet chocolate chips.
  • Use a large cookie scoop (about 3 tablespoons) to distribute batter amongst the prepared muffin wells.
  • If desired, sprinkle mini milk chocolate chips onto the top of each muffin.
  • Bake in preheated oven for 18-22 minutes.

1 cup vegetable oil
⅓ cup unsweetened cocoa powder
1 ½ teaspoons vanilla extract

  • In a large bowl beat the eggs. Beat in the sugar and oil. Add the cocoa, vanilla, zucchini and stir well.
  • Stir in the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves and cardamom. Mix until just moist.
  • Pour batter into prepared muffin tins filling 2/3 of the way full. Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Remove from pan and let cool on a wire rack. Store loosely covered.

1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 cup canola oil
1/2 cup milk
2 large eggs
1 teaspoon vanilla
1/2 cup granulated sugar
1/4 cup brown sugar, lightly packed
1 1/2 cups grated zucchini, drained
1/2 cup semi-sweet chocolate chips

  • Preheat the oven to 350 degrees F.
  • Line a muffin tin with paper liners or lightly spray with non-stick cooking spray and set aside.

1 1/4 cups grated zucchini (about 1 medium)

Steps:

I found this recipe on Allrecipes. It is so delicious! Perhaps not for those on a low-fat diet, but all in all, pretty good for you. Moist, chocolate-y and so good. My husband hates zucchini, but he will eat these. Prep time does not include shredding zucchini. At the advice of a reviewer, I am posting this note. If you find that the cocoa will clump if you mix it with the vanilla and zucchini, you can add it instead with the flour and other dry ingredients. Enjoy!
