Steps:
- Beat butter, confectioners' sugar, and vanilla with a wooden spoon until smooth. Add flour and salt; stir just until combined. Stir in dried cranberries. Divide dough into quarters.
- On parchment, shape each portion into a log about 1 1/2 inches in diameter and 4 inches long. Wrap logs tightly in parchment or plastic. Chill 30 minutes or up to 1 day. (Dough can be wrapped tightly in plastic and frozen up to 1 month.)
- Preheat oven to 325 degrees. With a sharp knife, slice dough into 1/4-inch-thick rounds. Rotate log as you cut to keep it from flattening. Place rounds on parchment-lined baking sheets, 1 inch apart.
- Bake, rotating sheets halfway through, until edges just begin to turn golden, 20 to 22 minutes. Let cookies cool on sheets on wire racks. Cookies can be stored in an airtight container at room temperature up to 2 weeks.
DARK CHOCOLATE BARK WITH WALNUTS AND DRIED CRANBERRIES
This chocolate bark is packed with flavor and texture including chopped walnuts, dried cranberries, and sea that will curb that afternoon sweet tooth craving.

- Preheat oven to 350° F. Spread the walnuts out on a baking sheet and toast for 8-10 minutes, shaking the baking sheet halfway through.
- Microwave method: Add the chocolate chips to a microwave-safe bowl and microwave until melted in 30-second increments, stirring every 30 seconds. You can stop when the chocolate is mostly melted; the heat will melt the rest of the chips.
- When the walnuts are toasted, remove them from the baking sheet and line the baking sheet with parchment paper. Use a spoon or pastry brush to spread the melted chocolate out on the parchment paper, until it's about ⅛ of an inch thick. Sprinkle the melted chocolate with toasted walnuts, dried cherries and sea salt.
- Let the bark cool, at room temperature or in the refrigerator, until fully hardened. Then break up the bark with your hands. Store in an airtight container in the fridge or freezer to avoid melting.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. - Preheat oven to 325 F.
- In a small mixing bowl, combine flour, baking soda, and salt. Set aside.
- In the bowl of a stand mixer with paddle attachment fitted (or in a large bowl with a hand mixer), mix together brown sugar, granulated sugar, and melted butter until well mixed, about 1 minute.
- Add egg, egg yolk, and vanilla, then mix for 1 minute more. Scrape down the sides, then mix again. With the mixer running on low, add the dry ingredients and mix until just incorporated.
- Fold in dried cranberries, walnuts, and white chocolate chips.
- Roll out cookies into balls using about 2 tablespoons dough for each, then place 2 inches apart on a half sheet baking pan lined with a silicone baking mat or parchment paper.
- Bake for 15 minutes, rotating the tray about halfway through cook time.
- Let cool for 10 minutes, then transfer to a wire rack to cool 5 minutes further.

- Once the flour is incorporated according to dough recipe, beat in chocolate, walnuts, and cranberries. Divide dough into 2 pieces. Shape each into a 10-inch log. Coat each in ground nuts, if using. Wrap in parchment. Refrigerate until very firm, about 2 hours.
