- Preheat oven to 375 °F/195°C. Line muffin pan with muffin liners.
- Melt the chocolate chips in the microwave in 30 sec intervals, mixing in between until fully melted. Set aside to cool down.
- To make the muffins
- Mix flour, baking powder, and salt in a large bowl.
- In a separate bowl whisk together sugar and eggs. Add the cream cheese, yogurt, oil, and vanilla, keep whisking until the mixture is pale and fluffy.
- Fold the wet ingredients into the dry ones, mix well.
- Pour the melted chocolate on top of muffin dough. With a wooden spoon swirl melted chocolate into batter.
- Spoon batter into prepared muffin tins, filling about ⅔ of each cup.
- Place them in the oven and bake for 18-20 minutes or until the toothpick inserted in the center comes out clean.
- Cool for 5 minutes in the pan then remove muffins and cool on a wire rack.

- Start by pouring all the ingredients except for the cocoa powder into the blender and blend on high until smooth. Check every few seconds to see if the oats have blended well and there are no batter clumps.
- Once smooth, pour HALF the batter into a small bowl to separate the vanilla muffins batter.
- With the other half of the batter still in the blender, pour in the cocoa powder and an extra 1/4 cup almond milk and blend on high until the batter is nice and smooth.
- Line your muffin tray with the muffin liners (create 12 muffins) and start spooning the different batters into each cup one by one. Start with a big spoonful of vanilla at the base, then add a little chocolate to one edge, more vanilla, and keep going with each muffin until there is no batter left. Fill each muffin about 3/4 of the way up to leave room for rising.
- Use your toothpick to create a swirl effect on the top. To do this, stick the toothpick in and gently swirl it to mix the batter a little!
- Bake the muffins at 350 degrees for about 30-40 minutes, depending on your oven. Check the muffins at 30 for golden brown tops, if they're not fully cooked, wait a little longer!

- Mix sugar and cornstarch in 4-cup microwavable measuring cup. Stir in milk and egg product. Microwave uncovered on High 3 minutes 30 seconds to 4 minutes; stirring after 2 minutes, until mixture thickens and boils. Stir in butter and vanilla.
- Stir chocolate chips into 1 cup of the pudding until melted. Layer vanilla and chocolate puddings alternately in parfait glasses or swirl in serving dishes.
