1/2 cup creamy peanut butter
4 flour tortillas (8 inches)
1 cup miniature marshmallows
1/2 cup miniature semisweet chocolate chips
Vanilla ice cream
Chocolate shavings, optional

Steps:

  • Spread 2 tablespoons of peanut butter on each tortilla. Sprinkle 1/4 cup marshmallows and 2 tablespoons chocolate chips on half of each tortilla. , Roll up, beginning with the topping side. Wrap each tortilla in heavy-duty foil; seal tightly. , Grill, covered, over low heat for 5-10 minutes or until heated through. , Unwrap tortillas and place on dessert plates. Serve with ice cream. Garnish with chocolate shavings if desired.

5 fresh apricots, halved
1/4 cup apricot nectar
2 teaspoons sugar, divided
1/2 cup sliced fresh strawberries
1/2 teaspoon ground cinnamon
2 flour tortillas (8 inches)
Butter-flavored cooking spray
2 cups reduced-fat vanilla ice cream
1/4 cup fresh raspberries

Steps:

  • In a nonstick skillet, cook and stir the apricots, nectar and 1 teaspoon sugar over low heat until apricots are tender, about 5 minutes. Stir in the strawberries; cover and remove from the heat. Combine cinnamon and remaining sugar; set aside. , In another nonstick skillet, cook one tortilla over low heat for 1-2 minutes on each side or until golden and crisp. Spritz one side with butter-flavored spray and sprinkle with half of the cinnamon-sugar. Repeat with remaining tortilla. , Place a tortilla sugared side down; spread with fruit mixture. Top with remaining tortilla, sugared side up; cut into four wedges. Serve each wedge with 1/2 cup of ice cream and 1 tablespoon of raspberries.

Cherry Pie like you've never had it before! Cherry pie filling wrapped in flour tortillas, soaked overnight in a sweet liquid, then baked. I used to work at a bed and breakfast, and we would make this sometimes for catered luncheons. I added my own touch with the almonds.

½ cup water
½ cup butter
½ cup white sugar
5 (10 inch) flour tortillas
1 (21 ounce) can cherry pie filling
2 tablespoons white sugar
½ teaspoon ground cinnamon
1 tablespoon crushed sliced almonds

Steps:

  • Grease a 9x13 inch baking dish. Combine the water, butter and 1/2 cup of sugar in a small saucepan and bring to a boil. Place a few spoonfuls of cherry pie filling just slightly off center of each tortilla. Roll up and place seam side down in the baking dish. Pour the hot liquid over the 'enchiladas' making sure to coat the tops completely. The mixture will be watery. Cover and refrigerate overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). Combine 2 tablespoons sugar, cinnamon and almonds in a small bowl or cup; sprinkle over the top of the enchiladas.
  • Bake for 35 to 40 minutes in the preheated oven, or until outside edges of the tortillas are golden brown. Let cool slightly before serving.

1 red apple, diced

I have been making, quite often, Mirjam Dorn's Recipe #16520; they are so good! When I came across this recipe in Cooking Light (1994), couldn't resist posting and trying it. This is really for Mirjam--I would never have thought to try something like this, had I not tried Mirjam's Dessert Quesadillas. Thanks Mirjam! These are almost as good as your quesadillas.

1/4 cup all-purpose flour
1/4 cup sugar
1 tablespoon cocoa
2 tablespoons skim milk or 2 tablespoons 2% low-fat milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 egg white
1/8 teaspoon salt
1/2 cup sliced strawberry
1/2 cup sliced mango
1 kiwi fruit, peeled and sliced
1 carambola, sliced (starfruit) (optional)

Steps:

  • Combine flour, sugar, cocoa and next 5 ingredients in a medium mixing bowl, beat at medium speed of an electric mixer until smooth.
  • Cover and chill 2 hours.
  • Place an 8 inch nonstick frypan over medium heat just until hot.
  • Pour 3 tablespoons of batter into pan, quickly tilt pan in all directions so batter covers bottom of pan in a thin film.
  • Cook about 2 minutes.
  • Flip tortilla and cook about 1 minute on the other side.
  • Remove tortilla from pan, and drape over tine of a wire rack suspended over a large bowl.
  • Cool 15 minutes.
  • Repeat procedure with remaining batter.
  • Arrange fruit in chocolate taco shells.
  • Garnish with carambola, if desired.

4 flour tortillas, 8 inch (20.3 cm) size
2 medium peaches, pears, or apples
1/4 teaspoon ground cinnamon
2 Tablespoons brown sugar
1/8 teaspoon ground nutmeg
2 Tablespoons milk
Sugar, optional but nice

Steps:

  • Heat the tortillas in a conventional oven or in the microwave oven.
  • Preheat oven to 350 °F (177 °C).
  • Choose the fruit you want to use. Prepare the fruit by peeling the fruit and then chopping into bite-size pieces.
  • Divide the chopped fruit equally between the 4 tortillas and spoon the fruit onto half of the tortilla.
  • Mix together the brown sugar, cinnamon and nutmeg in a small bowl.
  • Sprinkle the brown sugar mixture over the fruit.
  • Roll up the tortillas starting at the end where the chopped fruit is at.
  • Lay the fruit filled tortillas on an ungreased baking sheet.
  • Cut slits into the tortillas to allow steam to escape.
  • Brush with milk and sprinkle with additional sugar, if desired.
  • Bake 8 to 12 minutes.
  • Let cool a few minutes before eating. You can also eat the tortillas when they are cool.

1/4 cup milk
2 egg whites
1/4 cup vegetable oil or 1/4 cup olive oil
1 1/2 teaspoons vanilla
1/4 teaspoon salt
strawberry, sliced (if they're not especially sweet, slice and sprinkle with balsamic vinegar and let sit for an hour)
raspberries
blackberry
blueberries
kiwi, sliced

Steps:

  • Beat all ingredients until smooth.
  • Cover and chill at least 2 hours, or overnight.
  • Heat a non-stick skillet over moderately high heat.
  • Pour in a little less than 1/4 cup of batter and tilt pan quickly to spread batter into an even circle.
  • Once the edges look dry (2 or 3 minutes), flip it and cook another minute or two on the other side.
  • Put the soft tortilla in a rack to firm up.
  • Fill with whatever fruit is fresh.
  • Alternatively, if you're feeling lazy, you could use a can pie filling of your choice and fill the tortillas up with that.
