This Chocolate Mousse Tofu Pie is a creamy, decadent pie that packs in loads of chocolate flavor without the dairy or excess fat!

- Crust: Blitz graham crackers, halved dates, and butter in a food processor until evenly mixed and crumbly. Lightly grease an 8 or 9 inch pie pan*, then press crust mixture into the bottom and up the sides.
- Filling: Wipe clean the food processor then blitz tofu, cocoa powder, sweetener, and vanilla until smooth.
- Melt Chocolate: Melt chocolate using a double boiler. If you do not have one, place chocolate in a small saucepan. In a large saucepan, bring water to a boil. Hold small saucepan over boiling water for about 30 seconds, stirring constantly, until chocolate has melted.
- Chocolate Explosion: With food processor running, slowly pour melted chocolate into tofu mixture.
- Refrigerate: Pour filling into crust and even out the top with a spoon. Cover and place in fridge for 2 to 3 hours, until firm. Serve with whipped cream and fresh berries.

It is much healthier than regular chocolate mousse. Try adapting it further by adding coffee for a mocha mousse, peanut butter, or even strawberry jelly! It can be served immediately but it will set up further when chilled.

- Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching, about 5 minutes.
- Blend melted chocolate, tofu, maple syrup, and vanilla extract together in a food processor or blender until smooth. Add milk, 1 tablespoon at a time, to tofu mixture with the food processor on high until mousse is creamy and pudding-consistency. Pour mousse into a serving dish and refrigerate until set, at least 30 minutes.

- Note 1: vegans: use barley-malt-sweetened nondairy chocolate chips or use a really good vegan chocolate bar (like Rapunzel Organic Bittersweet) instead of some or all of the chips.
- Note 2: I use the Mori Nu brand of tofu for this (since it's from their box), but you can use any brand, just make sure it is the"silken" type and not regular.
- Melt choc chips in a double boiler over low heat or in microwave (if you know what you're doing).
- Put tofu, sweetener, and melted chocolate into a blender and process until very smooth.
- Pour into a serving bowl or bowls and refrigerate, covered, for at least a couple of hours.
- Cover this well, because it will pick up EVERY odor in your refrigerator otherwise.

- Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5-7 minutes longer or until golden brown. First of all, don't let the tofu scare you. My kids love this pie! This recipe for Chocolate Tofu Pie is rich and creamy and unbelievably delicious!

- Pre-bake a 9-inch pie shell. Set aside to cool.
- Thoroughly drain the tofu.
- Melt the chocolate chips in the microwave. There should be directions on the package. I melted mine for 45 seconds, then stir and continue in 15-20 second intervals until melted.
- Put tofu into food processor and pulse until creamy. Scrape down sides and add the salt and vanilla. Pulse another moment or two.
- Add the melted chocolate to the tofu and pulse until mixed. Scrape down the sides of the bowl again and continue to pulse until thoroughly combined and creamy.
- Pour the chocolate filling into the cooled pie crust.
- Whip the cream with the 2 tablespoons of powdered sugar until fairly stiff but not overmixed. Dollop the whipped cream onto the pie.
- Use a vegetable peeler to shave some dark chocolate. I used a 70% Cocoa bar. Sprinkle shavings on top of the pie.
- Store the Chocolate Tofu Pie in the refrigerator.

- Melt the chocolate over low heat, stirring often. Blend tofu in a food processor. Add the vanilla and melted chocolate and blend again, stopping once or twice to scrape down the sides of a bowl with a rubber spatula.
- Beat the egg whites to soft peaks. Place the tofu chocolate mixture into a bowl and slowly fold in the egg whites with a rubber spatula. Scoop the filling into the pie crust and refrigerate for several hours before serving.
- Serve with a bit of whipped cream or raspberry sauce (or simply thin raspberry jam with a bit of water and lemon juice). Don't say tofu, say terrific.

Add the vanilla and the sugar by the tablespoon, beating as you go.
- Spoon the coconut cream on top of the pie and use a spatula to gently spread it into a circle, or simply serve the cream alongside the pie. Garnish the top of the pie with shaved or chopped vegan dark chocolate, if you like.

Try your very best not to eat the entire thing right then and there.
- Pour the filling into the cooled crust and smooth the top. Refrigerate until set, at least 6 hours or overnight. When ready to serve, top with whipped coconut cream, chocolate, and pretzels as desired. Slice and enjoy!
