- In a large bowl, beat the first nine ingredients until well blended. Stir in cracker crumbs., Pour into a 9-in. pie plate coated with cooking spray. Bake at 325° for 50-55 minutes or until a knife inserted in the center comes out clean. Cool completely on a wire rack. Garnish each serving with whipped topping and cinnamon if desired. Refrigerate leftovers.

SIMPLE CRUSTLESS SWEET POTATO PIE
This recipe is pretty versatile. I used a can of Farmer's Market sweet potato puree, and you can easily swap out for a can of squash puree or pumpkin. Unsweetened soymilk does just fine in this too, I just happened to have vanilla on hand and think that made it a little sweeter.

- 1. Cook sweet potatoes in the method you prefer, (microwave,roast or steam) but do not boil them because their sweetness would get lost in the boiling water. peel them when they are cool enough to handle.
- 2. Preheat oven to 325. Process peeled sweet potatoes in the food processor till smooth, then add all the other ingredients and process for a few minutes till everything is well incorporated and thickened.
- 3. Pour into an oven proof dish and bake for 45 minutes, (it will be a bit soft in the center but will settle when it cools) Refrigerate for a few hours before serving.

- If you are in a real pinch or if you don't have the chocolate cereal handy just grease your pie dish with the oil and dust it with some flour. I dusted my my pie dish with the ground chocolate cereal: I used the cereal to make serving the pie super-easy (the slices just slide off the pie dish) and I chose the chocolate cereal to make the bottom of the pie look just as chocolaty as the pie itself. And so I put the cereal in the blender and blend until the it resembled fine crumbs. I then pressed the crumbs into the pie dish.
- If you like you can also stick the dusted pie dish in the oven for 3-5 minutes (making sure that the thin layer of flour/crumbs don't burn! This step just gives the roasted crumbs a nice flavor.
- Put the pumpkin, eggs, condensed milk, sugar, cocoa powder, flour, vanilla extract, salt, baking powder, pumpkin spice and cinnamon in the blender and blend until everything is incorporated.

- In a food processor, pulse the flour, sugar and salt to blend. Add the butter and shortening and pulse until the mixture resembles coarse meal. Drizzle in 3 tablespoons of the ice water and pulse just until the dough can be gathered into a ball; if necessary, gradually add the remaining water. Turn the dough out onto a lightly floured surface and form it into a 9-inch log. Cut off a 4-inch section of the log and pat it into a 6-inch disk for the bottom crust. Wrap the disk in wax paper. Cut the remaining dough in half and wrap each piece separately in wax paper. Refrigerate all of the dough until chilled, at least 1 hour, or overnight.
- On a lightly floured surface, roll the disk of dough into a 9-inch round and fit it into the base of a 9-by-2 1/2-inch springform pan. With your hands, roll each of the remaining dough pieces into a 13-inch rope. Fit the ropes around the base of the pan and join the ends to make one continuous rope. Using your fingers, evenly press the dough 2 inches up the sides of the pan to form a seamless shell. Refrigerate the shell.
- Preheat the oven to 350°. Bake the sweet potatoes on a baking sheet for about 1 hour, or until soft when pierced. Let cool, then remove the skins and puree the potatoes in a food processor.
- In a medium bowl, combine the granulated sugar and the brown sugar with the cinnamon, nutmeg and salt. In a large bowl, lightly whisk the eggs. Whisk in 3 cups of the pureed sweet potatoes (reserve any extra for another use). Whisk in the sugar mixture. Spoon half the sweet potato custard into the pie shell and sprinkle half of the chocolate on top. Cover with the remaining sweet potato custard and distribute the remaining chocolate decoratively on top.
