SURPRISE CHOCOLATE CHIP MUFFINS

Steps:
- Heat oven to 400°F Grease bottoms only of 12 regular-size muffin cups with spray, or line with paper baking cups. In small bowl, mix all filling ingredients until smooth; set aside.
- In large bowl, beat milk, oil and egg with fork or wire whisk. Stir in remaining muffin ingredients just until flour is moistened. Divide batter evenly among muffin cups.
- Place about 1 rounded teaspoon filling on batter in each muffin cup. Top with remaining batter.
- Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to cooling rack (may need to run knife around side of muffins to loosen). Cool 5 minutes. Serve warm or cool.

Steps:
- Grease the bottom ONLY of a 12-cup muffin tin.
- Preheat the oven to 400 degrees F.
- In a medium mixing bowl, stir together the flour, sugar, baking powder and salt.
- In a second medium sized bowl, combine the egg, milk, vanilla and vegetable oil.
- Make a "well" in the dry ingredients and add the wet ingredients to the well.
- Stir until the mixture is moist.
- Don't overmix - the batter should be lumpy.
- Fill the muffin tins half full.
- Now, here is the surprise - drop a teaspoon of jelly into the center of each muffin.
- Add more batter on top of the jelly so that each cup is 2/3 full.
- Bake for 20-25 minutes, or until golden brown.
- When the muffins are baked there will be a jelly surprise in the middle.

CHOCOLATE AND NUTELLA SURPRISE MUFFINS
Found this in a magazine and thought I'd post for all the chocoholics!!! You can use squares of Cadbury Caramello or other chocolate in place of the Nutella if you prefer. These are nice sprinkled with some icing sugar or even for dessert with some whipped cream, yogurt or custard.....the choice is yours:)

Steps:
- Pe-heat oven to 200'C/400'F.
- Place caster sugar in a bowl and add all other dry ingredients which have been sifted together.
- Stir to mix well.
- In another bowl combine the egg, yoghurt, milk and vanilla.
- Pour into the midle of the dry ingredients and then add melted butter.
- Mix together gently.
- Place mixture into well greased muffin tins to come just over halfway up the tins.
- Place 1 teaspoon of Nutella into the middle of each (or place a square of chocolate in)and then cover with another spoonful of muffin mixture.
- Bake for approximately 15 minutes or until muffins are cooked and well risen.
- Remove from oven but leave in tins for 5 minutes before removing muffins from tin to cool on a rack.
- Sift over some icing sugar if desired -- this just gives a nice presentation.

THE REALTOR'S CHOCOLATE SURPRISE
My Mom gave me this recipe a long time ago but I've long since taken it over and now it's mine! It's pretty simple to do and tastes wonderful. This is great for potlucks and bar-b-ques... no matter where I take this, I come home with an empty pan. Be sure to allow this to chill for several hours but overnight is best.

- Preheat oven to 375.
- Melt butter, add flour and 1/2 cup nuts. Mix and press into bottom of 13x9 pan. Bake for 15 minutes.
- Cream powdered sugar, cream cheese and 1 cup Cool Whip. Spread over cooled crust.
- Mix instant pudding with milk. Spread over cream cheese layer.
- Spread remainder of whipped cream over chocolate pudding layer. Sprinkle with chopped nuts if desired.
- Chill overnight.

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl. Whisk egg, yogurt, milk, vanilla, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

- 1. preheat the oven to 350°. Butter and flour a 12 cup muffin pan or line with paper liners. Beat the flour, sugar, cocoa, eggs, butter, vanilla, and baking powder in a large bowl with an electric mixer at medium speed until well blended.
- 2. Spoon half the batter into the cups. Place a chocolate in each one. Cover with the remaining batter. Sprinkle each muffin with a few chocolate chips. Bake until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool muffins on racks. Makes about 12 muffins
