1 Pullman loaf, crust removed
1/2 cup cream cheese, at room temperature
1/4 cup chocolate-hazelnut spread
3 eggs, beaten
1 cup whole milk
1 tablespoon pure vanilla extract
1/4 teaspoon kosher salt
2 tablespoon unsalted butter
6 ounces raspberries, fresh or frozen
1 tablespoon granulated sugar
1/4 cup orange juice (1 orange)
Powdered sugar, for dusting

Steps:

  • For the French toast: Preheat the oven to 350 degrees F.
  • Make an incision in the center of the Pullman loaf, as if you were slicing the loaf in half but taking care not to cut through the ends or the back side of the loaf. Stick your hand inside the incision and press lightly on the bread to make a pocket for stuffing.
  • In a small bowl, mix together the cream cheese and chocolate-hazelnut spread with a rubber spatula until smooth. Spoon the mixture into a resealable plastic bag; snip off a corner from the bag. Pipe the mixture into the pocket and close the seam slightly around it.
  • In a medium bowl, whisk together the eggs, milk, vanilla and salt. Soak the stuffed loaf in the egg mixture, rotating it, until all the custard is absorbed, about 12 minutes.
  • Melt the butter over medium heat in a large oven-safe nonstick skillet. Gently remove the French toast from the custard pan and place in the hot skillet; cook until golden brown on all sides except the side with the pocket, 2 to 3 minutes per side. Transfer the skillet to oven and bake until firm and an inserted metal skewer comes out dry, about 15 minutes.
  • For the raspberry compote: Meanwhile, place the raspberries, granulated sugar and orange juice in a small bowl. Partially mash the fruit with the back of a fork. Set aside to macerate.
  • Remove the French toast from the oven and let rest for 10 minutes before cutting into slices. Serve drizzled with raspberry compote and dusted with powdered sugar.

12 ounces day-old bread (sliced into bite size pieces (I used a sourdough loaf))
1 cup chocolate chips
5 large eggs
1 1/4 cups Almond Breeze Chocolate Almondmilk
2 tablespoons granulated sugar
1 teaspoon vanilla extract

Steps:

  • Spray an 8x11 or 9x13 pan with nonstick cooking spray.
  • Place bread cubes into the bottom of the prepared pan. Sprinkle with chocolate chips.
  • Whisk eggs in a large bowl. Whisk in almondmilk, sugar, and vanilla. Pour mixture over bread and press down lightly with your hands to soak it all up.
  • Let sit for at least 2 hours before baking. If your bread is fresh, you can bake it after 2 hours. If it's more stale, you'll want to let it sit longer. You can also cover and refrigerate overnight.
  • When ready to bake: preheat oven to 350°F. If your casserole has been in the refrigerator, let it come to room temperature while the oven preheats. Bake for 20-30 minutes or until the casserole is cooked through. (This will take longer if your dish is cold.)
  • Serve warm with whipped cream and chocolate sauce.

4 eggs
6 slices (1 inch thick) day-old French bread
6 tablespoons hazelnut spread with cocoa
2 tablespoons butter
Additional powdered sugar, if desired
Additional hazelnut spread with cocoa, if desired

Steps:

  • In small bowl, stir orange butter ingredients with wooden spoon until blended. Cover; refrigerate until serving time.
  • In shallow dish, stir milk, Bisquick mix, vanilla, 1 teaspoon orange peel, the orange juice and eggs with fork or whisk until blended. In each slice of bread, cut 3-inch pocket through top crust. Spread 1 tablespoon hazelnut spread in each pocket.
  • Heat griddle or skillet over medium heat (350°F); melt 2 tablespoons butter on griddle. Dip bread in egg mixture, coating both sides. Place bread on hot griddle; cook about 4 minutes, turning once, until golden brown.
  • Sprinkle French toast with additional powdered sugar; top with additional hazelnut spread. Serve with orange butter.

1 cup milk
1/2 tsp. almond extract
1/2 cup maple-flavored or pancake syrup
1/4 cup sliced almonds, toasted

Steps:

  • Heat oven to 400°F.
  • Spread 6 bread slices with cream cheese spread; cover with remaining bread slices. Lightly press edges together to seal. Whisk eggs, milk and extract in 13x9-inch dish until blended. Dip both sides of sandwiches in egg mixture, then arrange in same dish, stacking as necessary to fit. Refrigerate 30 min.
  • Place sandwiches in single layer on baking sheet sprayed with cooking spray, letting excess egg mixture drip back into dish before placing sandwiches on baking sheet. Discard leftover egg mixture.

1/4 cup part-skim ricotta cheese
8 slices of whole-wheat sandwich bread, crusts removed
1 (8-ounce) container strawberries, hulled and sliced
4 teaspoons bittersweet chocolate chips
Cooking spray
2 teaspoons confectioners' sugar

Steps:

  • In a large bowl, whisk together the eggs, milk and vanilla. Set aside.
  • Place 1 tablespoon of ricotta in the center of 4 of the pieces of bread and spread around slightly. Top with about 6 slices of strawberries and a teaspoon of chocolate chips. Cover each with another piece of bread to make a "sandwich".

1 (12-14 ounce) loaf french bread, sourdough bread, or challah*
8 ounces (224g) block cream cheese, softened to room temperature*
2 Tablespoons (15g) confectioners' sugar (do not leave out)
3 teaspoons (15ml) pure vanilla extract, divided
8 large eggs
2 and 1/4 cups (540ml) whole milk
3/4 teaspoon ground cinnamon
2/3 cup (133g) packed light brown sugar
1/3 cup (69g) packed light brown sugar
1/3 cup (41g) all-purpose flour (spoon & leveled)
1/2 teaspoon ground cinnamon
6 Tablespoons (86g) unsalted butter, cold and cubed
optional: maple syrup and/or confectioners' sugar for topping

Steps:

  • Grease a 9×13 inch or any 3-4 quart oven-safe dish with nonstick spray. Slice then cut the bread into cubes, about 1 inch in size. Spread half of the cubes into the prepared baking pan.
  • Using a handheld or stand mixer fitted with a whisk attachment, beat the room temperature cream cheese on medium-high speed until completely smooth. Beat in the confectioners' sugar and 1/4 teaspoon vanilla extract until combined. Drop random spoonfuls of cream cheese mixture on top of the bread. Layer the remaining bread cubes on top of cream cheese. (I like to make sure some cream cheese is still exposed on top just for looks.) Set aside.
  • Whisk the eggs, milk, cinnamon, brown sugar, and remaining vanilla together until no brown sugar lumps remain. Pour evenly over the bread. Cover the pan tightly with plastic wrap and refrigerate for at least 3-4 hours and up to 24 hours. Overnight is best.
  • Preheat oven to 350°F (177°C). Remove pan from the refrigerator.
  • Whisk the brown sugar, flour, and cinnamon together in a medium bowl. Cut in the cold cubed butter with a pastry blender or two forks. Sprinkle the topping evenly over the soaked bread.
  • Bake uncovered for 45-55 minutes or until golden brown on top. I usually bake it for 45 minutes because I like it softer. Drizzle with optional maple syrup or dust with confectioners' sugar. Serve warm.
  • Cover leftovers tightly and store in the refrigerator for 2-3 days.
