Adding a rich dark chocolate layer to this luscious pie gives it a sophisticated taste appeal. With only 20 minutes of prep time, it's an easy choice for a classic warm-weather dessert.

3 oz good quality dark chocolate, chopped
1/3 cup heavy whipping cream
1 purchased graham cracker or vanilla cracker pie crust
4 cups small strawberries
1/3 cup turbinado sugar* or brown sugar
4 teaspoons cornstarch

Steps:

  • Place chocolate in small mixing bowl.
  • In 1-quart saucepan, heat cream to boiling over medium-high heat. Pour cream over chocolate in bowl. Let stand one minute; stir until smooth. The chocolate will melt as you stir.
  • Pour chocolate mixture into pie crust. Refrigerate until cool and set, about 30 minutes.
  • Meanwhile, in food processor or blender, place 1 cup of the strawberries. Cover; process until smooth. Pour pureed berries into 1-quart saucepan. Stir in sugar and cornstarch. Bring strawberry mixture to boiling, over medium-high heat, stirring constantly. Reduce heat to low; cook, stirring one additional minute. Remove from the heat; let it stand 20 to 30 minutes to cool, stirring once or twice.
  • Slice the leaf-end of the remaining berries, making a flat surface. Once the pie is set, line the top with the strawberries, flat side down. Spoon cooled strawberry sauce over each berry, taking care to coat each one, until all the sauce is used.
  • Chill pie for 4 hours before serving.

1 package chocolate cake mix (regular size)
1 quart fresh whole strawberries, sliced
1 carton (13-1/2 ounces) strawberry glaze
2 cartons (12 ounces each) frozen whipped topping, thawed, divided
1 cup chocolate frosting
Shaved chocolate, optional

Steps:

  • Prepare and bake cake according to package directions, using a 13x9-in. baking pan. Cool completely on a wire rack., Cut cake into 1-in. cubes. Place half of the cubes in a 6-qt. glass punch bowl. Top with half of the sliced strawberries; drizzle with half of the strawberry glaze. Spread with 3-1/2 cups whipped topping. , In a microwave-safe bowl, heat frosting on high for 20-30 seconds or until pourable, stirring often; cool slightly. Drizzle half over the whipped topping. Repeat layers of cake, berries, glaze and whipped topping. If desired, drizzle with remaining frosting and sprinkle with shaved chocolate.

1 cup unsweetened cocoa powder
½ cup raw honey, melted
2 tablespoons stevia powder
¾ cup strawberries
¼ cup coconut oil
¼ cup sunflower seed butter
2 tablespoons raw honey
½ lemon, juiced
1 vanilla bean, split lengthwise and seeds scraped
¼ teaspoon Himalayan rock salt

Steps:

  • Whisk 2 cups coconut oil, cocoa powder, 1/2 cup honey, and stevia powder together in a bowl until smooth.
  • Blend strawberries, 1/4 cup coconut oil, sunflower seed butter, 2 tablespoons honey, lemon juice, vanilla bean seeds, and rock salt in a food processor until smooth; transfer to a bowl and refrigerate.
  • Pour 1/2 the chocolate mixture into the bottoms of truffle molds or ice cube trays; freeze until partially hardened, about 10 minutes. Keep the remaining chocolate at room temperature.
  • Spoon 1 1/2 teaspoons to 1 tablespoon strawberry filling over frozen chocolate; top each with remaining chocolate, filling molds to the top. Freeze truffles until set, about 15 minutes more.

12 ounces semisweet chocolate chips
1 ½ cups heavy whipping cream
¼ cup sifted confectioners' sugar
1 tablespoon vanilla extract
1 (9 inch) prepared chocolate cookie crumb crust

Steps:

  • In microwave dish combine chocolate chips and 1/2 of the cream. Cook on high for 1 to 2 minutes, stirring every 30 seconds until smooth. Cool to room temperature. Stir in sugar & vanilla. Set aside.
  • In small bowl, beat the rest of the cream until soft peaks form. Beat in chocolate mixture on high speed 1/3 at a time. mix well and spoon into crust.
  • Refrigerate at least 8 hours before serving.

1 tablespoon butter
1 (8 ounce) package cream cheese, cubed and softened
2 tablespoons orange liqueur or 2 tablespoons orange juice
1/4 cup powdered sugar
1 lb fresh strawberries, stems removed and halved
1/4 cup red currant jelly, melted
whipped cream (optional)

Steps:

  • In a small saucepan, combine chocolate and butter; cook/stir over med-low heat until melted.
  • Add in cream cheese and liqueur; cook/stir until smooth.
  • Remove from heat; stir in powdered sugar.
  • Spread chocolate mixture in bottom of baked pie shell.
  • Arrange strawberries, stemmed ends down, on chocolate layer.
  • Brush berries with melted jelly; cover and chill at least 4 hours.

1 tablespoon butter
1/4 cup icing sugar
2 cups strawberries, stems removed
2 tbps. seedless raspberry jelly or 2 red currant jelly
1/2 cup whipping cream

Steps:

  • Prepare and bake pie shell according to package directions. Cool. Cut cream chees into cubes; set aside.
  • In saucepan, combine chips and butter. Cook and stir over low heat until melted. Add cream cheese; heat stirring constantly until blended and smooth. Spread in pie shell.
  • Arrange berries, stem ends down in chocolate filling. Refrigerate until firm, about 3 hours.
  • At serving time, melt jam; brush over berries. Beat cream until stiff; spoon aroundedge of pie.
