My Mom gave me this recipe a long time ago but I've long since taken it over and now it's mine! It's pretty simple to do and tastes wonderful. This is great for potlucks and bar-b-ques... no matter where I take this, I come home with an empty pan. Be sure to allow this to chill for several hours but overnight is best.

1/2 cup butter
1 cup flour
1/2 cup chopped nuts (I use pecans)
1 (8 ounce) package cream cheese
1 cup powdered sugar
1 (8 ounce) container Cool Whip
2 (4 ounce) boxes chocolate instant pudding
3 cups milk
chopped nuts (I use pecans)

Steps:

  • Preheat oven to 375.
  • Melt butter, add flour and 1/2 cup nuts. Mix and press into bottom of 13x9 pan. Bake for 15 minutes.
  • Cream powdered sugar, cream cheese and 1 cup Cool Whip. Spread over cooled crust.
  • Mix instant pudding with milk. Spread over cream cheese layer.
  • Spread remainder of whipped cream over chocolate pudding layer. Sprinkle with chopped nuts if desired.
  • Chill overnight.

1 pillsbury pie crust
8 ounces sweet butter (I use store bought honey butter)
5 ounces unsweetened chocolate
1/2 cup half-and-half cream
1/4 cup sugar
4 eggs
1 egg yolk
1/2 tablespoon vanilla

Steps:

  • Turn oven on 350°F.
  • Parbake the pie crust for 10 minutes.
  • Melt the butter and chocolate together in microwave, no more than 50 seconds at a time and stir until no chunks are left, its smooth.
  • whisk in sugar and half & half until the sugar is almost dissolved.
  • Whisk in the eggs, yolk, and vanilla.
  • Pour into the pie shell and place in the oven.
  • Bake the pie for 10-15 minutes and rotate, bake another 10-15 minutes. When pie is puffed, crusted over and set in the middle remove from the oven and cool to room temperature.
  • Top with a raspberry sauce and creme fraiche if you like.

  • For the Coconut Milk Pastry Cream: Pour the coconut milk into a medium sized sauce pan, cover and turn the heat to medium low. Separate the eggs and set aside. In a medium heat-proof bowl, add the erythritol, cornstarch (or arrowroot) and salt. Add the 3 egg yolks and 1 egg and whisk to start dissolving the erythritol.
  • When the coconut milk begins to simmer, turn the heat off and remove the pot from the heat. Begin whisking the egg mixture and start adding the hot coconut milk to the eggs, while whisking continuously. The melting of the erythritol will help protect the eggs a bit from scrambling. Once 1/2 of the hot coconut milk mixture has been added, pour the rest of the coconut milk mixture into the bowl, while still whisking.
  • Put the sauce pan back on to the stove and pour the coconut milk pastry cream into the pan. Turn the heat to medium low and slowly whisk the mixture continuously for two minutes. Then turn the heat down to low-ish and continue stirring the coconut milk pastry cream. In a few minutes, all at once, the pastry cream will begin to thicken. Continue stirring for one minute - to cook the starch out of the mixture. Remove from the heat.
  • NOTE: I like to cool my coconut milk pastry cream immediately. Before beginning the coconut milk pastry cream, I fill a large bowl half way with ice. Then I add a little water to help the ice melt. When the coconut pastry cream is finished cooking, I put it back into my medium bowl and set the medium bowl inside of the larger bowl. I stir and fold the coconut pastry cream until it is cool. Then, I use it right away or refrigerate it for use later.
