This is a simple recipe and makes a perfect homemade chocolate frosting every time!

Steps:
- Bring the cream to a boil. Remove from heat and add chocolate. Cover and set aside for 10 minutes. Scrape into a food processor and add the confectioners' sugar, butter and vanilla. Process until smooth, then 1 minute more. Set aside at room temperature until thickened into a spreadable consistency.

Steps:
- Break chocolate into 2 pieces.
- Bring milk or heavy cream to a boil in a small saucepan.
- Remove from heat.
- Now add the chocolate pieces without stirring.
- Cover and set aside for 10mins.
- Scrape into a food processor or blender.
- Add sugar, butter and vanilla essence.
- Process until the mixture is perfectly smooth.
- Transfer to a bowl.
- If necessary, set aside for a few minutes (longer if you have used cream), until thickened to the desired spreading consistency.
- This keeps refrigerated for upto 1 week if made with cream, or about 3 weeks if made with evaporated milk, or freeze for upto 6 months.
- Soften before using.
CHOCOLATE SATIN FROSTING
This is fabulous on a yellow cake! I NEVER use anything else. I believe you could use egg substitute with no ill effects. I think I got this off the package of pre-melted chocolate years ago. A very lightly flavored chocolate frosting. Edited to add: each premelted chocolate envelopes are equal to 1 oz melted chocolate. I use choco-bake by Nestle usually sold by cocoas.

- In a bowl combine sugar, butter, milk, vanilla and salt; beat until creamy.
- Beat in egg.
- Beat in chocolate, mix well.
- This fills and frosts 2 8 or 9 inch layers, 24 cupcakes, or 1 13x9 inch cake.
CHOCOLATE SATIN FROSTING
Steps:
- Bring evaporated milk just to a boil in saucepan. Add chocolate, cover and let sit off heat 10 minutes. Don't stir. Scrape into food processor, add remaining ingredients and process about 1 minute. Set aside a few minutes until thickened to spreading consistency. Can be stored a week in refrigerator, and can be frozen.

- Place water in a small saucepan and sprinkle gelatin over its surface. Allow gelatin to dissolve for 1 minute. Heat water over medium heat, stirring the entire time, as the gelatin dissolves completely.
- When water is steaming but not yet simmering, turn off heat and stir in honey to dissolve. Also stir in the cinnamon, stevia and sea salt. Allow it to cool to room temperature.
- Place the butter in a large metal bowl. Beat until creamy with hand beaters; then add honey-gelatin water in a slow stream. Beat until the frosting is smooth and all the honey water is incorporated evenly.
- Frost your cooled cake at this point. (If you refrigerate the frosting before using it, simply melt it down slightly again, beat and refrigerate until you have reached the right temperature and texture. Or bring it to room temperature slowly.)

- Preheat the oven to 350 degrees F. Line a 9X13-inch pan with aluminum foil and lightly coat with nonstick cooking spray.
- For the butterscotch batter, in a medium bowl, mix together the flour, baking powder and salt. Set aside. With a handheld electric mixer or in the bowl of a stand mixer, beat together the butter, sugar, and vanilla until creamy. Add the eggs and beat until blended. Gradually add the dry ingredients until combined. Stir in the butterscotch chips.
- For the chocolate batter, combine the butter and chocolate in a microwave-safe bowl and cook until the butter and chocolate are melted. Whisk until smooth. Add the sugar and stir to combine. Whisk in the eggs and vanilla. Mix in the flour, baking powder and salt until the batter is smooth. Stir in the chocolate chips.
- Spread the chocolate batter in the prepared pan. Drop spoonfuls of the butterscotch batter on top and use a butter knife to gently swirl the two together. Don't overmix or else you'll end up with muddy batter. If you want distinct swirls, run your knife through a few times but don't overdo it.
