- In a small skillet, cook prosciutto over medium heat until crisp. Remove to paper towels with a slotted spoon; drain and set aside. , Divide salad greens and watercress among six salad plates. Arrange cheese, strawberries and prosciutto over greens., In a microwave, melt chocolate; stir until smooth. Whisk in the vinegar, oil, honey, salt and pepper. Drizzle over salads.

- For the croutons: Preheat the oven to 375 degrees F. Drizzle the bread with olive oil. Using a small heart-shaped cookie cutter, cut out pieces of the bread and place on a baking sheet. Bake until crispy and golden, 8 to 10 minutes. Set aside to cool.
- For the vinaigrette: In a blender, combine the raspberries, oil, chocolate-balsamic vinegar, honey, salt and pepper. Blend until smooth.
- Place the wedges of lettuce on 4 plates and drizzle with the vinaigrette. Top with the chopped chocolate and croutons before serving.

DARK CHOCOLATE BALSAMIC CAPRESE SALAD - THE SAUCY FIG

- Start making the balsamic reduction by adding vinegar and honey to a medium saucepan over medium heat. Bring to a boil, then reduce and simmer over medium low until it has reduced to about half of it's original volume and thickened like syrup. Takes about 30 minutes.
- White the reduction is simmering, make your chocolate curls. Heat dark chocolate chips in the microwave at 30-60 second intervals, stirring in-between. Once melted at the other half of the Forte Dark chocolate bar (chopped finely) and stir briskly to melt completely. Add in the crisco.
- Place a cookie sheet in the fridge for one minute, then remove, turn pan over (upside down) and spread a think layer of the chocolate evenly over the entire surface of the bottom of the pan.
- Let cool and once you can touch it with your finger and it leaves a fingerprint (not hard but not soft) then you are ready to make your curls. Using a flat, metal surface (spatula, cake scraper, clean putty scraper) push down (firmly) at a 45 degree angle and continue to push forward to curl your chocolate. Play around and have fun trying out your favorite style (thick, thin, large, small, etc.).
