¾ cup butter, softened
¾ cup white sugar
¾ cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon salt
2 ¾ cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
  • Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

With oats, butter, and mostly all brown sugar, you are guaranteed a soft and chewy oatmeal cookie. Use this perfect oatmeal cookie as the base for other add-ins such as raisins, dried cranberries, and nuts. Cinnamon and a touch of molasses add that little something extra. These are the best oatmeal chocolate chip cookies!

1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1 teaspoon ground cinnamon (optional)
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
1 cup (200g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
2 large eggs, at room temperature
1 Tablespoon unsulphured or dark molasses*
2 teaspoons pure vanilla extract
3 cups (240g) old-fashioned whole rolled oats
1 and 3/4 cups semi-sweet chocolate chips*

Steps:

  • Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, about 1 minute. Add the brown sugar and granulated sugar and beat on medium-high speed until creamed, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, beat in the oats and both types of chocolate chips. Dough will be thick and sticky. Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Use a large cookie scoop to scoop the cookie dough, about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more chocolate chips into the tops- this is only for looks!
  • Cookies stay fresh covered at room temperature for up to 1 week.

  • Drop 32 heaping tablespoons of batter, about 1 1/2 inches apart, onto baking sheets. Bake, rotating sheets halfway through, until cookies have spread and are golden brown and soft to the touch, 10 to 12 minutes. Cool 5 minutes on sheets; transferto a wire rack to cool completely.

1 cup (125 grams) all-purpose flour (spooned & leveled)
½ teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon salt
1 and ½ cups (150 grams) old-fashioned rolled oats
½ cup (115 grams) unsalted butter (softened)
½ cup (100 grams) light brown sugar (packed)
¼ cup (50 grams) granulated sugar
1 large egg (room temperature)
1 teaspoon pure vanilla extract
1 cup (190 grams) semisweet chocolate chips

Steps:

  • In a medium-sized mixing bowl, whisk together the flour, cinnamon, baking soda, and salt. Stir in the old-fashioned rolled oats and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a handheld mixer, beat the butter, light brown sugar, and granulated sugar together for 1-2 minutes or until well combined.
  • Mix in the egg and vanilla extract, stopping to scrape down the sides of the bowl as needed.
  • Add the dry ingredients and mix on low speed until just combined, then mix in the chocolate chips on low-speed until fully incorporated into the cookie dough. Cover tightly and refrigerate for at least 30 minutes.

1 large egg
1 teaspoon vanilla extract
1 cup peanut butter
1 cup all purpose flour
1 teaspoon baking soda

2 cups quick cook oats
1 cup semi sweet chocolate chips
1 cup raisins

Steps:

  • Preheat oven to 350 degrees. Prepare a baking sheet by lining with parchment paper or a Silpat liner. Set aside.
  • In a large mixing bowl, use a handheld mixer to blend the butter with both sugars until smooth.
  • Once completely incorporated, add the egg, vanilla, and peanut butter. Mix well to combine.
  • Next, add the flour, salt, and baking soda and just blend into the peanut butter mixture. Don't over mix the cookie dough. Stir in the oatmeal, chocolate chips, and raisins.
  • Using a small cookie scoop, which will allow for more even and uniform cookies, position mounds of the cookie batter two inches apart on the prepared cookie sheet. Be sure to leave room for growth.
  • Bake for 12 minutes. Allow the cookie to cool for two minutes on the baking sheet before transferring to a cooling rack for the remainder of the cooling process.

Steps:

Beat in mayonnaise and vanilla. Combine the flour, salt and baking soda; gradually add to the creamed mixture and mix well. 1 cup rolled oats
1/3 cup butter or 1/3 cup margarine
1/3 cup shortening
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 cup all-purpose flour
1 cup rolled oats
1 cup coarsely chopped walnuts
1 cup chocolate-covered raisins (2 boxes of the movie size boxes)

Steps:

  • For oat flour: Put 1 cup rolled oats in food processor or blender. Cover and blend or process until oats turn into a powder. Transfer powder to a small bowl. If using a blender do 1/2 cup of the oats at a time. Set aside.
  • Beat butter and shortening in a large mixing bowl with on electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar and baking soda; beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla. Beat in oat flour and all purpose flour. Stir in the 1 cup rolled oats, walnuts and chocolate-covered raisins.
  • Drop dough by the well-rounded teaspoonful 2 inches apart on an ungreased cookie sheet. Bake in a 350' oven for 8-10 minutes or until the edges are lightly browned. Transfer to wire racks and cool.
