CHOCOLATE QUINOA MUFFINS

2 cups cooked quinoa (about a half cup dry will yield just over 2 cups)
4 eggs
⅓ cup milk (I used unsweetened almond milk)
1 tsp vanilla
½ cup coconut oil, melted (or sub for butter, or another healthy oil)
⅓ cup unsweetened applesauce
1 cup stevia for baking (I used NuNaturals MoreFiber. Could also use xylitol) Or even coconut sugar, cane sugar or honey (nutrition will change)
1 cup unsweetened cocoa powder
1½ tsp baking powder
½ tsp baking soda
½ tsp salt

Steps:

  • Preheat your oven to 350 degrees F.
  • In a large bowl or stand mixer (or a blender or food processor), put in all the ingredients and mix until well combined.
  • Pour into muffin tins just over ½ full. Mist your muffin tin with oil, or line with silicone liners or foil liners to prevent sticking.
  • Bake for 15-16 minutes until you press them and they spring back. The toothpick test doesn't work well on these as a bit of crumb will stick to the toothpick as they are so rich and moist.

2 cups cold cooked quinoa
¾ cup melted butter
4 eggs
⅓ cup milk
1 ½ teaspoons vanilla extract
1 ¼ cups white sugar
1 cup cocoa powder
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup chocolate chips
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a rectangular cake pan.
  • Blend quinoa, butter, eggs, milk, and vanilla extract together in a blender until smooth.
  • Combine sugar, cocoa powder, baking powder, baking soda, and salt together in a large bowl. Stir quinoa mixture into sugar mixture until batter is well combined. Fold chocolate chips and pecans into batter; pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 40 to 45 minutes. Cool cake on a wire rack.

1½ cup water
⅔ cup quinoa
½ cup milk
1½ cup white or cane sugar
1 tsp. vanilla
¾ cup butter, melted and cooled
4 large eggs
1 cup cocoa
1½ tsp baking powder
½ tsp. baking soda
½ tsp. salt

Steps:

  • In a medium saucepan, bring quinoa and water to a boil. Cover, and reduce to a simmer and cook for 1o minutes. Turn off the heat and leave the cover on the sauepan and leave on the stove for another 10 mintues Fluff with a fork and allow the quinoa to cool. Preheat oven to 350°F. Lightly grease two-8"round or square pans. Line the bottoms of the pans with parchment paper Comibine milk, sugar, eggs, and vanilla in a blender or food processor Add 2 cups of quinoa anblender ord butter and continue to blend until smooth. Combine sugar, cocoa, baking powder, baking soda, and salt in a medium bowl. Add the contents in the food proccesor or blender into the dry ingredients and blend well. Divide the batter evenly between the two pans and bake on the center rack of the oven Bake for 40-45 minutes, or until a bamboo skewer inserted comes out clean. Bake completely in the pan and cool before serving. Frost if desired.

  • Preheat the oven to 350 degrees. Grease two round cake pans (or a 9x13 pan) and then line the bottoms of the pans with parchment. (Do not skip the parchment if you want to be able to flip the cake out of the pan.)
  • Combine the milk, eggs and vanilla in the blender or food processor and pulse a few times to combine. Add the cooked quinoa and the butter and puree until completely smooth. Stop the machine as needed to scrape the sides and make sure everything is well mixed. This will be a thick and creamy consistency once the quinoa is pureed. (You should not see any little beads of quinoa in the pureed mixture.) Whisk together the dry ingredients in a mixing bowl and add the contents from the blender. Stir until well combined.
  • Divide the batter evenly between the two cake pans and bake on a center oven rack for 28-30 minutes, until a toothpick inserted comes out clean. Remove the cakes from the oven and let cool 10 minutes before inverting them onto a wire cooling rack. Peel off the parchment and let the cakes cool completely before frosting.
  • Place the chocolate chips in a medium size glass bowl. Heat the cream in a medium saucepan until is gently simmers. Remove from the heat and pour over the chocolate. Let the mixture sit for 5 minutes or so and then whisk to combine until it is smooth and glossy. Refrigerate and let cool completely. (2-3 hours in the refrigerator or about an hour in the freezer.) When fully chilled. use a mixer to whip the chocolate cream into soft peaks.
